How To make Fried Fortune Cookies
1 Egg
1/3 c Sugar
1/3 c All-purpose flour*
3 tb Salad oil
2 tb Water
1/2 ts Vanilla
1/4 ts Cinnamon (if you like)
Utensils: White paper, scissors Pencil; griddle or electric Skillet, pastry brush; small Bowl, fork, tablespoon Pancake turner; small plate Muffin pans; (1 to 2) 1. Cut paper into strips about 3-inches long and 1/2-inch wide. Write a
different fortune on each strip. (Examples: "You will have a happy day." "You will make a new friend soon.") 2. Heat griddle over medium heat (350~ on electric skillet). Generously grease the hot griddle with shortening, using pastry brush. 3. Beat 1 egg in bowl with fork until foamy. Beat in 1/3 cup sugar
until light and fluffy. Stir in 1/3 cup flour, 3 tablespoons oil, 2 tablespoons water, 1/2 teaspoon vanilla and 1/4 teaspoon cinnamon and mix until smooth. 4. Drop the batter by tablespoonfuls onto the greased hot griddle.
Spread into circles about 3-1/2-inches across, using the back of the spoon. (The cookies must be very thing.) 5. Cook until light brown, about 3 minutes. (Life an edge and peek.) Turn with pancake turner and cook about 3 minutes on the other side. 6. Lift the cookies, one at a time, onto plate. Place a paper fortune
in center of each cookie, then fold the cookie in half. Holding the edges, draw the cookie gently down over the edge of muffin pan to crease in half. Fit the cookie into a muffin pan cup to hold its shape until cool. *Do not use self-rising flour in this recipe. NOTE: These cookies need a flat surface for baking because the batter is so thin. If you use a slanted or warped griddle, they'll run all over the place! It's a good idea to brush a little oil on your pancake turner before you turn the first cookie. For crisp fortune cookies, make them on a dry day, be sure the griddle is hot enough, grease the griddle with a thin coat of shortening and make sure to spread the batter very thin. Homemade Fortune Cookies Recipe:
Ingredients:
5 egg whites
4 tablespoons water
3/4 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon salt
1 cup sugar
1 cup flour
Instructions:
Preheat oven to 350̊ F degrees.
1. Mix together egg whites, water, vanilla, and almond extract until fluffy but not whipped. Add salt, sugar, and flour and stir until incorporated.
2. Lightly spray a baking sheet with nonstick cooking spray.
3. Pour 1 tablespoon of batter onto the baking sheet and gently use the back of the measuring spoon to swirl from the center and push outward to form a 4 inch circle.
4. Bake for 7 minutes at 350̊ F degrees until the edges of the cookies are just turning golden.
5. Remove from the oven, immediately slide an offset spatula under a cookie to release it.
6. Place a paper fortune across the center.
7. Bring the edges together like a taco shell. Place the rounded bottom onto the edge of a glass, gently use fingers along the seam you created to push down and fold the fortune cookie over the glass rim to shape it.
8. Repeat for remaining cookies, one at the time.

Making homemade fortune cookies is a snap, and your loved ones will get a kick out of their personalized predictions.
Step 1: Create messages
Cut six pieces of paper into 16 2- by ½-inch strips and write a fortune on each with a nontoxic pen.
Step 2: Preheat oven
Preheat the oven to 375 degrees and grease a baking sheet with butter or nonstick cooking spray.
Step 3: Whisk egg whites
Whisk egg whites in a medium-size bowl until they’re just foamy.
Step 4: Add remaining ingredients
Add the flour, sugar, and almond extract to the egg whites and beat until the mixture is smooth.
Step 5: Drop the batter
Drop four separate tablespoons of batter onto the cookie sheet, spaced far apart. You have enough batter for about 16 cookies, but don’t attempt to bake more than four cookies per sheet—they need room to spread.
Step 6: Spread the batter
Use a butter knife or the back of a spoon to spread the dropped batter into circles about two inches in diameter.
Step 7: Bake
Bake the cookies until the edges just begin to turn brown: about six minutes. The centers should remain pale.
Step 8: Remove the cookies
As soon as you take the cookies out of the oven, lift them off the cookie sheet with a spatula and place them on a piece of wax paper.
Step 9: Fill and fold
Place a fortune in the center of a cookie, and fold the cookie in half to form a semi-circle. Pick up the cookie and place the straight edge across the rim of the measuring cup. Fold the pointed edges down, one on the inside and one on the outside of the cup. Put the cookie in a muffin tin so it retains its shape as it cools.
Tip
Work as quickly as you can! Once these cookies cool, they will be impossible to bend.
Step 10: Enjoy!
