Easy Meat Stuffed Potato Pancakes (Draniki)
Draniki (also known as deruny), are unusual but tasty Russian stuffed potato pancakes made with ground potatoes. These are stuffed and cooked with a juicy meat patty inside. Yummy for breakfast, lunch or dinner!

Ingredients for Stuffed Potato Pancakes:
►1½ lbs (5 medium) potatoes (we used Yukon gold), peeled
►1 medium onion, peeled and divided (use ¾ for potatoes and ¼ for meat filling)
►1 large egg
►3 Tbsp all-purpose flour
►1 Tbsp sour cream
►1 tsp salt, or to taste
►⅛ tsp black pepper, or taste
►Cooking oil (we use light olive oil)
►½ lb ground pork
►1 Tbsp reserved grated onion (see above)
►¼ tsp salt and a pinch of black pepper, or to taste

Steak Cake or Meat Cake as some call it. Garlicky shrimp and herbed swordfish in it. A Surf N' Turf Birthday Cake A meatcake that uses beef tenderloin cut into filet mignon. You can change up the combinations and it will work just fine. New York Steak works as well as a beef rib-eye. Eliminate the seafood and just have a steak cake if you like. The choice is yours. This particular Birthday Cake has been named The Charlie Cake after the birthday recipient.
We plan on making other meat cakes. Steak cakes...Real steak cakes not cakes shaped like steaks...some might be without seafood, others with only seafood. We may do a ground lamb Indian meat cake version and change up the frosting a bit. Don't be shocked to see a Braised Duck Birthday Cake. Will hammer out the details soon. Might even be a Peking Duck one. We have other plans for a Greek Version and possibly a Thai or Indonesian one. Stay tuned!!!

Recipe: Beef Tenderloin Steak Cake with Seafood
Season Beef Tenderloin Steaks with Steak Seasoning, Salt, and Lots of Cracked Pepper. Sear or grill until one level under your preferred doneness. Set aside
Make Shrimp Scampi- Shrimp, Butter, Garlic, Lemon Juice. Sauté until done. You can add parsley if you like. Set Aside
Swordfish. Season with Lemon Pepper. Can use pre-made or make your own. If so- Lemon Zest, Lemon, Freshly Cracked Pepper or use Green Peppercorns. Salt, and season for about a half hour and then sear or grill until done. Set aside.
Frosting- Make Mashed Potatoes and finish with cream, milk, and sour cream. Whole butter, crumbled bacon that is real fine so it will go through a pastry bag. You can use a mini food processor to get it fine if needed (after cooking). Make sure the Frosting is creamy. Use some of the bacon fat but do not add all. Use a hand mixer or food processor to get potato mixture to the right texture so it looks like frosting. Extra butter in the mixture will help with the texture. It is all about feel and taste at this point.

Ingredients:
For the meat mixture:
2 pounds (1kg) ground lamb
1 large onion, chopped
3 garlic cloves, crushed
3 tbsp olive oil
4 tbsp (30) flour
1/2 tsp salt
1/2 black pepper
1 tsp rosemary
1 tsp thyme
1 tbsp tomato paste
2 cups beef broth
7oz (200g) carrots
7oz (200g) peas (fresh or frozen)
For the puree:
3.5 pounds (1.5kg) potatoes
1 tbsp butter
1/2 cup (120ml) milk
1/4 cup (25g) cheddar cheese
1/2 tsp salt
1/2 black pepper
egg yolk
Directions:
1. Peel the potatoes and cut into 4. Place in a medium pot and cover with cold water. Set over high heat, add a teaspoon of salt, cover and bring to a boil. cook until tender.
2. While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the onion and sauté 2-3 minutes, add crushed garlic and chopped carrots, sauté until the carrots are tender, about 5-7 minutes.
3. Add the ground lamb, Cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme. Add tomato paste, flour and stir.
4. Add beef broth and frozen peas. Bring to a simmer, reduce heat to low and cook, stirring occasionally, until sauce thickens.
5. When the potatoes are done cooking transfer them to a bowl. Add butter, milk, egg yolk, salt and pepper. mash the potatoes until smooth.
6. Preheat oven to 400F (200C).
7. Layer the meat mixture in a 13X8.5 (33X22cm) ovenproof dish. Spread the puree over the meat mixture.
8. Bake 20-25 minutes. or until mashed potato is golden brown.
