Fennel seeds bread with cheese
Fennel seeds bread is an easy to make bread with some toasted fennel seeds and provolone cheese. Fennel seeds give a very nice kind of sweet and anise flavor. The provolone cheese gives a background milky taste.
Ingredients:
bread flour: 400g
water: 320g
dry yeast: 1g + water: 6g
salt: 8g
toasted fennel seeds: 2 tsp
cheese: 20g

Baked Apple Dumplings and Roasted Beet and Fennel Salad
Join guest chef Lynn Wells as she prepares recipes embracing the theme Healthy Holiday Favorites!
Baked Apple Dumplings
Yield: 4 servings.
1 tablespoon butter
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
2 rounds refrigerated pie pastry
4 Granny Smith apples, peeled and cored
4 small pats of unsalted butter, approximately ¼ stick
¼ cup dark brown sugar
3 cups water
½ cup golden raisins
1 cup walnuts, chopped
2 teaspoons vanilla extract
Juice of 1 lemon
1 cup plain Greek yogurt
2 tablespoons honey
Preheat oven to 400°. Use 1 tablespoon butter to grease a 9 x 13-inch baking dish. Mix together cinnamon, nutmeg, cloves, brown sugar, raisins, walnuts and vanilla extract. Set aside.
On a clean, lightly floured countertop, place pastry rounds end to end, then roll out into one large rectangle, about 24 x 16 inches. Cut into 4 square pieces. Place an apple on each pastry square with the cored opening facing upward. Place 1 pat of butter in the opening of each apple; reserve remaining butter for sauce. Divide filling mixture between apples, filling some inside each cored opening and the rest around the base of each apple.
With slightly wet fingertips, bring one corner of pastry square up to the top of an apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners and seal with fingers. Slightly pinch the dough at the sides to completely seal. Repeat with the remaining apples. Place in prepared baking dish. Squeeze lemon juice over each dumpling. Bake for 50 to 60 minutes. Place each apple dumpling in a bowl and spoon juice from baking dish over the tops. Mix together yogurt and honey. Top each apple dumpling with yogurt topping.
Roasted Beet and Fennel Salad
Yield: Serves 4
2 medium beets, roasted peeled, halved and cut in thin half-moons
2 medium fennel bulbs (about 1¼ to 1½ pounds), trimmed, quartered, cored and sliced very thin across the grain
1 navel orange, peeled, pith cut away, and cut in thin rounds or sections
4 ounces plain goat cheese
2 tablespoons chopped fresh mint
1 tablespoon chopped cilantro
2 tablespoons lime juice
1 tablespoon honey
½ teaspoon ground cumin
Salt to taste
1small garlic clove, puréed (optional)
¼ cup extra-virgin olive oil
Combine beets, fennel, orange slices, mint and cilantro in a large salad bowl.
Whisk together lime juice, honey, cumin, salt, optional garlic and olive oil. Toss with the salad. Place goat cheese on top of salad and serve. This holds well for several hours in the refrigerator.
