INGREDIENTS
2 lbs (5 cups) Beans
1 lb carne seca
½ pound fresh Stew meat
½ pound Bacon (thick cut)
½ pound Paio Sausages
1 pound Portuguese Sausage (Linguiça)
½ pound Salt Pork
2 onions Chopped
1 teaspoon Black Pepper
2 Tomatoes (Peeled/seeded/chopped)
8 cloves Garlic crushed
2 tablespoons white wine vinegar
2 or 3 Bay leaves

Beef stew recipes come from all over the world. This recipe is from Brazil and is called Feijoada! This is the national dish of Brazil and is a black bean and beef stew recipe. There are many layers of flavors to this dish so lets see what they are. Here is the recipe:

Surgical Black Arkansas:
Ingredients:
1 pound dry black beans.
8 oz bacon ends and pieces.
1 Lb of linguica (Portuguese sausage), or andouille cut into 1-inch pieces.
1 1/2 Lbs pork for stew like boneless shoulder or even some pork belly.
1 pound beef stew meat.
2 large onions sliced medium.
4-6 cloves fresh garlic, minced.
3-4 bay leaves.
1 teaspoon dried oregano.
1/2 tsp ground cumin(Optional).
Beef broth.
Kosher salt and white or black pepper to taste to taste.
1 tablespoon red wine or balsamic vinegar. about 45min til done for a little acidity.
Instructions:
Rinse the dry beans, remove any broken pieces and debris, and then place them in a large container and cover with 2-3 inches of water.
Allow the beans to soak overnight (a minimum of 8 hours).
In the morning, drain the soaking liquid and rinse the beans once more.
Place the soaked, rinsed beans in the basin of a large slow cooker.
In a large skillet cook your bacon ends and pieces until browned.
Don't make the bacon totally crispy you want it a bit flexible.
Once browned remove from skillet and put on plate with paper towel to get excess grease.
Next cut your sausage up into 1/4 or 1/2 inch pieces to preference.
Brown the sausage up in the skillet with the bacon drippings.
Once browned remove sausage from skillet and put on plate with your bacon.
Now brown your pork in the same skillet once browned remove and put on a plate and set aside.
In the same skillet now brown up your beef and once browned put on plate with your pork.
Put your minced or roughly chopped garlic in the skillet and saute 1-2 minutes.
Add your onions now and saute whole mixture 2-3 more minutes.
Remove onions and garlic from skillet and set aside in small bowl.
Raise heat a bit to medium and deglaze the skillet with some beef broth.
Pour the deglaze liquid into the slow cooker with the beans.
Now take your browned meats along with the onions, garlic and bay leaves into the slow cooker.
after about 4 hours add your cumin and oregano and gently mix it in well.
Allow the stew to cook on low heat for about 8 hours total or until the beans are tender.
Stir occasionally as it cooks, and add more beef broth if the mixture begins to look dry.
Once the beans are fully cooked, season to taste with kosher salt.
Discard the bay leaf.
Spoon the stew over long grain white rice, top with cilantro and scallions, and serve with sautéed collard greens*, orange slices, and a Caipirinha cocktail, if desired.
I did not make the collard greens in this recipe and I did not have oranges to eat but the cilantro and green onions was delicious with this dish.

Feijoada is a Brazilian Black Bean stew that’s bursting with flavour. This is usually made with Black Beans along with Beef and Pork, but today, we’re doing a cheaper vegetarian version of Brazil's National Dish. This is served with Steamed Rice, sauteed Kale and slices of Orange for a filling, nutritious and flavoursome dish and will delight everyone eating it. We’re sure you’ll love making it too.
This recipe will serve 4 people.
Ingredients:-
4 Tbsp Olive Oil
2 Large Yellow Onions (peeled and chopped)
A couple of pinches of Salt
2 Tsp Ground Cumin
2 Tsp Ground Coriander
2 Tsp Smoked Paprika
2 Tsp Oregano
3 Bay Leaves
5 cloves Garlic (crushed)
1 Tsp Black Pepper
500g cooked Black Beans (if canned, drained and rinsed)
400ml Vegetable Stock
1 Tbsp Apple Cider Vinegar
1 Tbsp Balsamic Vinegar
2 Tbsp Soy Sauce
1 Tbsp Butter (or vegetarian alternative)

Feijoada
Ingredients:
1 lb. of dry black beans.
4 quarts of filtered water to soak the beans twice
5 smoked sausage links, like Country sausage, Portuguese lingüiça, Paio, and/or Kielbasa, sliced into any shape.
2 to 4 pieces of Country style pork ribs, seasoned or not, cut into cubes
- in total, use enough meat to fill a 2.5 QT. bowl-
1 medium yellow onion, chopped finely
half of a medium green bell pepper, roughly sliced
1 tbs of paprika
2 tbs of my favorite all-purpose seasoning: BADIA COMPLETE SEASONING.

For Brazilians there is no better comfort food than FEIJOADA. Follow this recipe to make a delicious black bean stew/ Feijoada. Also included in the video the recipe for a few side dishes FAROFA (Toasted cassava Flour) and Sauteed Kale. #brazilianfood
FEIJOADA Ingredients:
1 lb of Black Beans
1 yellow onion
4 cloves of garlic
12 oz of Smoked Kielbasa Sausage (or smoked Linguica)
6 strips of bacon
1 slab of pork ribs
Cumin powder
Smoked Paprika
Salt
Black pepper
3 Bay leaves
4 cups of chicken stock (optional)
water
FAROFA Ingredients:
4 strips of bacon
1/2 yellow onion
1/4 red bell pepper
2-3 garlic cloves
6-8 olives
3 eggs
1 to 1 1/2 cups of Brazilian cassava flour
Chopped parsley
Salt and black pepper to taste
Sauteed kale Ingedients:
2-3 garlic cloves
2 tablespoons of butter
olive oil
1 bunch of sliced kale (thick stalks removed)
salt and black pepper to taste.
How to Cook Brazilian Feijoada: Traditional Black Bean and Pork Stew [ Legendas PT]
In Brazil, there is one dish to rule them all. You will find one dish cooked with passion and eaten with great pleasure, all across Brazil from the North to the South. That dish is Feijoada, the national dish of Brazil.
Feijoada is so popular with Brazilians that even the vegans and vegetarians will confess that it is the ONLY meat dish they truly miss. That is because Feijoada is more than just a meal; it is an experience you share with your friends, family, and community. Someone has even described it as Brazilian soul food. The meal itself is eaten over the day. However, around the pot goes the laughing, chatting, singing, dancing, cheering and bonding. This particular recipe has been cooked by me countless times, for groups of a dozen or more Brazilian friends who all miss the little things from back home. The Recipe

Everyone's Feijoada recipes are slightly different, but fundamentally they are all the same. So don't be surprised if your Brazilian friend, partner or mother-in-law recommends less garlic, more salt, add an orange, or use pork feet, etc. Over time, you will develop your own unique way of cooking it. I say this so you don't feel that you must follow this recipe rigidly - it is soul food, remember.
Feijoada ingredients:
500g Dry black beans
1kg Pork belly
500g Bacon
1 x Pork hock or pork knuckle (smoked works well)
2 x Chorizo sausages (if you find linguica, use about 400g)
2 x Onions
6 x Cloves of garlic
6 x Bay leaves
Salt
Water
Side dishes:
Rice
Orange slices
Chinese broccoli or kale
Farofa
Farofa Ingredients:
500g Toasted Cassava Flour (Farinha de Mandioca Torrada)
1 x Onion
3 x Garlic cloves
250g Bacon
1 x Cup of parsley
4 x Boiled eggs (cold and quartered)
