Bake it right away or just layer the ingredients in a baking dish the night before, stick it in the fridge, then pop it in the oven in the morning. Farmer’s Casserole is perfect for the busy holiday season. Mix it up before you go to bed, and you can enjoy coffee with your company while it bakes. Serve with fruit, biscuits, or pancakes.
The variations are virtually endless. It's easy, affordable, and delicious. You can make it with the ingredients that you already have on hand. No need for a shopping trip in a specialty food store. This is the kind of meal that I grew up on, and I raised my 4 kids on.

How to make Hoppel Poppel or German Farmer's Breakfast or Bauernfrühstück. It's scrambled eggs with vegetables, boiled potato, cooked meat or sausage, chicken, salami etc. Can be add cheese too.
It's not about it look but the delicious taste from mixed of goodness from your fridge or leftover from last night dinner.

Farmer’s Breakfast Skillet Recipe
For every person you are serving you will need :
2 slices bacon
1 potato
1 green onion
1 egg
salt and pepper
I made mine for 2 people and used a 9 inch cast iron skillet. If you are increasing the number of people, be sure to use a larger skillet. Start by cutting the bacon into pieces and frying until done. Remove from the skillet and set aside. Add diced potato and cook until almost done. Add chopped green onion during the last minute or so of cooking. Add the bacon back into the mixture. Season with salt and pepper to taste. Make a well and crack in one egg. Cover and turn off heat. Cook until the egg is how you like it.

SLOW COOKER FARMERS BREAKFAST CASSEROLE
RECIPE:
INGREDIENTS:
9 large eggs
3/4 cup ricotta cheese
3/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. dried thyme
1/2 tsp. dried dill
5 slices bacon, sliced and cooked
1 cup diced ham
16 oz. Colby-Jack cheese divided
2 tomatoes, sliced
SLOW COOKER SIZE:
6-quart oval
INSTRUCTIONS:
Divide the cheese out by cubing 2/3 of it and grating the rest. Save the grated cheese for the end of cooking time.
In a large bowl add the eggs, ricotta, salt, pepper, dill and thyme. Whisk until you can get it smooth, though some chunks of ricotta is fine.
Spray the slow cooker with non-stick spray. Add the cubed cheese, bacon and ham. Whisk the egg mixture one more time to get it combined again, then pour over the ham, bacon and cheese.
Cover and cook on HIGH for 2.5 hours. If there is any liquid on top of the casserole, blot it with a paper towel. Add remaining cheese and cover for 5-10 minutes more.
Serve with sliced tomato on top and enjoy!
