How To make Fajitas On A Stick
1 1/4 pounds boneless beef top sirloin steak
1" thick
1/3 cup prepared italian dressing
3 tablespoons fresh lime juice
2 green or red bell peppers :
quartered
2 medium onions cut into 1/2" slices
2 medium flour tortillas -- warmed
prepared salsa 8 9" bamboo skewers
1. Soak the bamboo skewers in water 10 minutes; drain water.
2. Trim fat from beef steak. Cut steak crosswise into 1/2" thick strips. Thread an equal amount of beef, weaving back and forth, onto each skewer.
3. In small bowl, combine dressing and lime juice, mixing well; brush onto beef, peppers and onions.
4. Place vegetables on grid over medium ash-covered coals; grill peppers uncovered 12 to 15 minutes and onions 15 to 20 minutes or until tender, turning both once. Approximately 10 minutes before vegetables are done, move vegetables to outer edge of grid. Place beef in center of grid; grill 8 to 10 minutes for medium rare to medium doneness, turning once.
5. Season beef with salt, as desired; remove beef from skewers. Serve beef and vegetables in tortillas with salsa and garnishes.
Another great dish! Make sure you have normal fajita toppings handy, like lettuce, cheese, tomatoes, sour cream, olives, etc.

Steak and Chicken Fajitas Recipe
This recipe is simple and very tasty. We had the privilege to cook this week with Rylee Wright – The Steak Princess. We used the tribal Fire Grill fueled with Jealous Devil Charcoal for this cook. We used some of Rylee’s rubs for the cook, we highly recommend you try them!
• 2 LBS of Sirloin Steak cut into thin strips
• 2 LBS of Chicken Breasts cut into thin strips
• 3 TBS of Malcom’s Grande Gringo
• 3 TBS of Rylee’s Steak Rub
• 3 Onions Sliced Thin
• 3 Bell Peppers Sliced Thin
Cut the meat into thin strips the night before and season with the rubs above. We used the Rylee’s steak rub on the beef and Malcom’s rub on the chicken. Place both meats into separate bags and refrigerate. Clean and cut any vegetables used, we chose onions and peppers. Once the tribal fire is up to temp, add oil around the top of the Tribal Fire. Add the meat and begin cooking, add in the vegetables as well.
Cook the meat to your desired temps and the vegetables until translucent. Heat your tortillas on the center grate. Remove and add the meat and vegetables. Top your fajitas with any toppings you desire and enjoy!

Ingredients (Serves 3 | Prep time: 10m Cooking time: 25m | 367 calories & 9.2g fat p/serving):
- 1 tsp Salt
- 1 tsp Sugar
- 1 tsp Cumin
- 1 tbsp Oregano
- 1 Garlic Clove
- 1 Onion
- 1 Lime
- 400g Chicken
- 2 Peppers
- Olive Oil
- Tortilla Wraps
How to Make a Quick VEGAN MEXICAN Fajitas ????
We challenged ourselves to create the ultimate healthy fajita and we think this combination of peppers, beans, guacamole and salsa hits the spot!
Perfect for a quick easy meal which is fun to cook and packed full of colour!
Here’s all the things you need to know!
INGREDIENTS:
Olive oil for frying
1 onion
2 garlic cloves
6 mixed peppers
1/2 tbsp dark brown sugar
1 tsp hot chilli powder
1 tsp ground cumin
1 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp garlic powder
A pinch of black pepper
1 x 400g tin kidney beans
30g fresh coriander leaves
1 x 400g tin refried beans (optional)
1 x portion of Perfectly Boiled Rice from BOSH! - or use one packet of pre-cooked rice
1 x portion of guacamole
1 x portion of salsa
6 Large tortillas
3 limes
50g tortilla chips
Salt and pepper
METHOD:
Add a little oil to the frying pan | Peel and finely slice the onion and garlic add them to the pan | Cut the peppers in half, cut out the stems and seeds, slice the flesh into 5mm strips and add them to the pan | Sprinkle over the brown sugar and a pinch of salt
Put the chilli powder into a small bowl with the cumin, paprika, cayenne pepper, garlic powder and a pinch of salt and pepper | Stir to mix and then tip over the peppers in the pan | Reduce the heat a little, then cook for 30 minutes until soft, stirring regularly so that the peppers don’t stick to the pan
Meanwhile, drain the kidney beans and tip them into a serving bowl | Chop a third of the coriander leaves and add them to the kidney beans | Spoon the refried beans, if using, into another bowl | Tip the cooked rice into another bowl | Spoon the guacamole and salsa into separate serving bowls
Put the tortillas on to an ovenproof plate or baking tray, cover with foil and put into the oven to warm
The peppers are ready when they look well fried (but not blackened), are soft and taste sweet and delicious | Transfer them to a serving bowl | Take the tortillas out of the oven and transfer them to a serving plate
Cut the limes into quarters | Roughly chop the remaining coriander leaves | Fill a bowl with the tortilla chips
Take all the separate bowls to the table | Fill the fajitas with delicious dollops of everything and roll them up to enjoy!

Ingredients:
1 1/2 lb Chicken Meat - Sliced in strips
4 Tbsp Olive Oil - divided into 3 equal parts
4 Cups sliced onion - sliced 1/4 thick
4 Tbsp diced garlic
4 Cups assorted Peppers -sliced 1/4 thick
2 packages of Fajita seasoning or make your own...follow the recipe below
2/3 Cup chicken broth
Fajita Seasoning
(So the recipe I have makes 10 cups of seasoning. I am going to do my best convert it to what is in 2 Packs which is what I use in the recipe.
3 Tbsp. corn starch ( If you are Gluten Free, please get a Gluten Free Corn Starch)
2 Tbsp. Chili powder
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. sugar
1/2 Tbsp. onion
1/2 Tbsp. garlic
1/2 Tbsp. Cumin
3/4 tsp Cayenne
