1 4 1/2 lb. eye of round roast
1 4 oz. jar Chinese sweet hot
-mustard 3 tb Olive oil
2 cl Garlic, pressed
2 ts Lite soy sauce
1 ts Worcestershire sauce
Roasted potatoes,uncooked*
Fresh rosemary sprigs,fresh -sage sprigs
Place roast on a 18x11 inch piece of heavy-duty aluminum foil. Stir together mustard and next 4 ingredients; spread over roast. Fold foil over roast to seal. Place in shallow roasting pan, and chill at least 8 hours.
Remove roast from foil; place in roasting pan.
Bake covered, at 450?F for 20 minutes. Arrange uncooked Roasted Potatoes around roast, and bake, uncovered, 25 more minutes or until potatoes are tender and roast is done. Remove from oven; cover and let stand 15 minutes before slicing. Garnish, if desired.
*ROASTED POTATOES: 4 Medium potatoes, cut into 8 wedges 2 tablespoons olive oil
2 garlic cloves, pressed
1 teaspoon salt
1/2 teaspoon pepper

Easy Eye of Round Roast Recipe
I love a good roast cooked in the oven with the high temperature method and I love this take on a marinated Eye of Round. This cut of beef can typically be tough, but the extra time marinating goes a long way in alleviating that issue and makes for a cowboy and young cowpoke crowd pleaser around our dinner table. (Also applies to non-cowboys and non-cowpokes.) Use the same high temp method with or without marinade for other roasts like sirloin tip and you’ll never go wrong. Unless you run out. Which you might, because it’s that good. Happy roasting y’all!

INGREDIENTS:
Beef Eye of Round Roast (2-3 pounds)
Marinade:
1-2 Tbsp Musket Powder Seasoning (or favorite steak seasoning)
¼ c. Olive Oil (or choice of oil)
¼ c. Balsamic Vinegar (or choice of vinegar or lemon juice)
1 Tbsp Minced Garlic
2 Tbsp Worcestershire sauce
DIRECTIONS:
Mix ingredients for marinade and put with roast in a ziploc bag. Refrigerate several hours (6-36 (it works - see video))
When ready to cook, pre-heat oven to 500 degrees
Take roast from bag, draining excess liquid
Place on foil lined baking sheet and bake at 500 for 5 min per pound
Turn oven off and let sit in oven (don't open the door!) for 15-20 minutes per pound or until internal temperature reaches 140-145 degrees
Slice thin against grain and serve!

How to make Eye of Round Roast in the Instant Pot (great for stir fry, sandwiches or nachos!!!)
Order the 365 Days of Pressure Cooking Cookbook: Eye of round roast is lean and is high in protein. It fairly inexpensive too! You can cook eye or round roast in the Instant Pot. Slice it thin and serve it in stir fry, on sandwiches (think French dip!) or beef nachos! There are so many great ways to use this cut of of beef.
How to make eye of round roast in the Instant Pot:
1. Pat roast dry with paper towels. Press kosher salt and pepper into the meat on all sides.
2. Turn Instant Pot to sauté setting. When display says HOT add in the oil and swirl it around. Place roast into Instant Pot and let brown on one side for 5 minutes and then turn over and brown for another 5 minutes. Move the roast out of the pot. Pour broth into pot and scrape bottom of pot so that nothing is sticking. Add the roast back into the pot.
3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 25 minutes (yes 25 minutes). Remove the lid. Place meat on a cutting board and let rest for 5-10 minutes.
4. Use a serrated bread knife (or electric knife) to carve meat as thin as possible (against the grain).

Slow Cooker Eye of Round Roast
3 - 4 lb Eye of Round Roast
2 Large Onions - sliced
5 - 6 Cloves Garlic - minced
1 lb Carrots - cut in 2 chunks
3 Ribs Celery - large chop
5 Russet Potatoes - cubed
2 Tbsp Apple Cider Vinegar
2 1/2 C Beef Broth
1 Tbsp Cornstarch
1 Tbsp Water
Rub
2 Tbsp Brown Sugar
1 Tbsp Garlic Powder
2 tsp Inion Powder
2 tsp Oregano
1 tsp Dried Thyme
1 Tbsp Kosher Salt
1 tsp Pepper
1 Tbsp Parsley
1 tsp Paprika
In a small bowl mmix all the ingredients for the rub with a fork. I use approximately 2 Tbsp per
pound of meat.
Place sliced onions & garlic in the bottom of your slow cooker, Place the roast on top of the onions. Surround the roast with the carrots, celery and potatoes. Pout the apple cider vinegar over the roast and sprinkle everything with the rub mixture. Drop in the bay leaves. Pour in your broth.
Cover. Cook for 8 - 10 hours on low or 5 - 6 hours on high. Meat is done when I can stick a knife in the meat with no resistance.
To make gravy. Remove meat and vegi's from slow cooker. Place drippings in a medium sized saucepan. Heat on medium high.
Mix 1 Tbsp cornstarch with 1 Tbsp water to make a slurry. Pour into dripping and stir until the gravy starts to thicken. Add another Tbsp of cornstarch if you want a thicker gravy.

HOW TO SMOKE EYE OF ROUND FOR ROAST BEEF

WHAT YOU WILL NEED:
- 1 Eye Of Round Roast
- Olive oil - I used rosemary infused oil
- Postal Barbecue MAD COW BBQ Rub
STEP #1
To prepare your Eye Of Round, you will trim off the fat or sections that might be falling off. Next, apply your BBQ Rub to the outside of the roast.
SETP #2
Once your Beef Roast has been prepped, set up your grill for cooking with indirect heat. Once your grill is up to temperature, place it on the grill opposite the coals. With this cook, we added some hickory and let it smoke between 225F-250F.
STEP #3
After around 2 hours (depending on the size of the Beef Roast), your Eye Of Round should be hitting between 125-130. Pull it off at your desired doneness... For us, we pulled it at 127 before moving on to the reverse sear.
STEP #4
The last step in the cook is to sear the outside. To do this, mix together your remaining hot coals with your partially lit coals. Let them fully lit so the coals are hot hot hot. Place the eye of round over the direct heat and begin to sear all the sides for about 30-40 seconds each.

Roast at 400 F in preheated oven for 15 minutes, then reduce the temperature to 325 F and continue roasting for one hour.
For the Gravy
. 1/4 cup butter
. 1/4 flour
. 2 1/2 to 3 cups beef stock
. salt and pepper to taste
