JEMMA IS HERE!!! And it's time to make your Christmas Fruitcake! Yes, Christmas is still a way off but if you want a perfectly moist Christmas Fruitcake it's time to get baking so that you can spend a few weeks feeding it (with booze of course) to make it not just moist but to enhance all of those Christmassy flavours. But of course if you leave it late that's no problem either, you will still have a delicious Christmas Fruitcake.

8 Christmas Fruitcake
800g Dried Fruit (Sultanas, Currents, Raisins)
100ml Booze (Brandy, Rum) OR Orange Juice
225g Dark Brown Sugar
225g Soft Unsalted Butter
4 Eggs
225g Plain Flour
1/2 tsp Salt
1/2 tsp Mixed Spice
75g Mixed Peel
75g Glace Cherries
100g Nuts (Almonds, Hazelnuts)
More Booze or Orange Juice for feeding!

Christmas Fruit Cake, Black Cake, Rum Cake, Easy Recipe
This recipe of Christmas Fruit Cake is one of the simplest and by far the best I have tried.
This super moist and delicious cake is dense and pack with soaked flavorful fruits.
I promise you can't go wrong with this simple step by step recipe
Recipe in how to boil/soak fruits
**Ingredients tor blended fruits**
1 lb prunes, seeded and chopped
1lb raisins
1 lb currants
1/2 Ib cherries chopped
Any other fruits of your choice
1 bottle of rum
1 bottle of cherry brandy or wine
(Spices)
**Ingredients for cake **
2 cups or 1 lb butter
2 cups or 1 lb sugar
9 large eggs
2 tsp grated lime or lemon peel
2 tsp vanilla extract or 1 tbsp vanilla essence
1 tsp almond and rose water (optional)
1 1b or 4 cups flour (baking or all purpose) sifted
4 tsp baking powder
1 tsp salt
1-2 tsp mix spice
2 tsp ground cinnamon
2 tsp nutmeg
1/2 cup browning (less if you dont want cake to be too dark)
4-5 cups of soaked blended fruits
The day before or some days before baking, boil the fruits (prunes, raisins, currants, cherries) Link is provided
Line cake pans with 1 layer of wax paper.
Cream butter and sugar until light and fluffy.
Break eggs into a bowl, add lime peel then pour into the batter gradually.
Add fruits to blender and lightly blend, then add to batter.
Add enough browning to give desired colour,
along with vanilla essence or extract
Combine flour, baking powder, cinnamon, salt, nutmeg, fold into creamed mixture gradually.
Add more rum to your desired taste.
Pour batter into lined baking pans and bake in a preheated oven at 200 degree celsius for 1 1/2 to 1 hour 45minutes or until toothpicks comes out clean.
Oven temperature varies so if you suspect suggested temperature may be too high…. Work with 350 degree farenheit… low and slow is always best.
(Place water pan at the bottom of the oven)
Prick hot cakes and soak with a mixture of rum and cherry brandy. (Any Alcohol You
Desire)
Cover and set aside to cool.
Soak overtime for a few days to keep moist.

For the Cake:
2 CUPS BUTTER
2 CUPS PACKED BROWN SUGAR
6 LARGE EGGS
2 TSP. APPLE PIE SPICE (PENZEY’S)
2 2/3 CUP SELF-RISING FLOUR (WHITE LILY)
1/2 CUP GRAPE JUICE
3 TBSP. VANILLA EXTRACT
3 1/2 CUPS CANDIED FRUIT
10 OZ. CHOPPED DATES
4 CUPS CHOPPED PECANS
Read the entire recipe before beginning. Do not
preheat the oven!
In a mixer mix the butter and sugar until fluffy. Add
eggs one at a time, beating in between.
Add Apple pie spice and vanilla extract. Add grape
juice and mix well. Add flour and beat for 2 minutes
on medium speed.
In a separate bowl add 1/3 CUP FLOUR then add your
fruit and mix until fruit is coated well with flour. Add
pecans and dates and mix well. Pour batter into bowl
with fruit and nuts. Mix well.
Spray pans with baking spray and fill 3/4 full of
batter. Put cake in a cold oven and then put on Bake
at 350 degrees and bake 30 minutes. Turn oven to
250 degrees and bake for 2-4 hours. Cook time will
vary depending on size and depth of cake. Cake must
be done before topping with fruit. After you top cake
cook another 30 minutes for pecans to toast.
For pecan and fruit topping:
JELLY OR MARMALADE (8OZ.) 1-2 CUPS OF LARGE
MIXED COLORED CANDIED FRUITS (YOUR CHOICE) I
LIKE RED AND GREEN CHERRIES.
4 CUPS OF WHOLE PECANS
Heat jelly (your choice apple or orange marmalade)
in a non-stick small pot or skillet.
Pour over fruit and mix until fruit and nuts are coated
well.
My choice of fruits:
8 oz. FRUIT AND PEEL OLD ENGLISH MIX OR EXTRA
FANCY (THESE ARE CHOPPED SMALL) (1 CUP)
8 OZ. TROPICAL MIX (1 CUP)
8 OZ. MIXED PINEAPPLE AND CHERRIES (HALF THESE)
10 OZ. CHOPPED DATES
TIPS:
WHEN YOU BUY FRUIT AND NUTS GET PLENTY FOR
TOP OF CAKES TOO!
DO NOT PLACE TOPPING ON CAKE BEFORE IT IS SET
IN MIDDLE OR IT WILL SINK DOWN INTO THE CAKE.
DO NOT USE OLD ENGLISH FRUIT UNLESS YOU TASTE
AND MAKE SURE YOU LIKE THE CITRON AND FRUITS,
REPLACE WITH OTHER MIXED FRUITS IF YOU DO NOT
LIKE IT.

Ingredients:
1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder

Celebrate the holiday season with a delightful twist – a Traditional Fruitcake that's bursting with rich flavors and wholesome ingredients.
Prep Time: 20 min | Cook Time: 30 min (+8 hours for soaking) | Total Time: 50 min | Servings: 8
INGREDIENTS:
• 3/4 cup raisins (
• 6 Medjool dates, roughly chopped (
• 1/2 cup dried apricots, roughly chopped (
• 1/3 cup candied peel
• 1/4 cup rum (skip if vegan)
• 3 tbsp lemon juice
• 2 tbsp ground flax seeds (
• 1/2 cup butter
• 1/3 cup brown sugar
• 3 tbsp unsweetened plant milk
• 1/2 cup all-purpose flour
• 1/2 cup coconut flour (
• 1/4 cup ground almonds (
• 2 tsp ground cinnamon (
• 2 tsp ground nutmeg (
• 1 tsp ground allspice (
• 1 tsp bicarbonate of soda
INSTRUCTIONS:
1. Begin by combining all the dried fruits in a large bowl. Add the rum and lemon juice, give it a good stir, then cover and let it sit overnight.
2. The next day, preheat your oven to 350°F.
3. In a small bowl, mix the ground flax seeds with of water, and set it aside.
4. In a large bowl, whisk together the melted butter and brown sugar. In a separate bowl, sift together the all-purpose flour, coconut flour, ground almonds, bicarbonate of soda, allspice, cinnamon, and nutmeg.
5. Combine the dry ingredients with the butter mixture, along with the flax seed mixture and milk. Stir until just blended.
6. Now, fold in the soaked dried fruits, along with any remaining liquid. Transfer the batter to the baking tin, using a spatula to make it even.
7. Bake for 30 min, and your delicious fruitcake is ready to enjoy!
