How To make Escarole, Beans, and Pork Ribs Soup
2 lb Pork ribs, country style
1 T Olive oil
1 lg Onion, chopped
2 qt Chicken broth
2 T Tomato paste
Salt & pepper Garlic powder Red pepper 2 lb Escarole
30 oz Cannellini beans
Use a large pot, coat with olive oil and lightly brown pork ribs. Add chopped onions; saute together. Add broth, tomato paste, and seasonings to taste; cook for one hour. Wash and cut escarole in large pieces; cook for 3 minutes in boiling water; drain but reserve liquid. Add escarole and beans to rib/broth mixture. If extra liquid is needed to maintain souplike consistency, add from reserved liquid; stir together; simmer for a few minutes to allow flavors to mingle.
Serve with hot Italian Bread.

What is escarole anyway? It’s green and leafy, but is it like kale, spinach, lettuce. Escarole is leafier than kale and is usually purchased in bunches that look a lot like a head of lettuce, with wide and wavy-edged leaves. The color and texture of the leaves varies—those on the outside are darker-green and a bit tougher, while the inside leaves are pale-yellow and more tender.

Perfect as an appetizer, a main course or combine these Tuscan beans with pasta as a one pot dish! We think these beans are the ultimate comfort food. To make these baked beans, simply cook these beans in the oven for the last hour instead on the stovetop!
TIPS:
Can't find lard of 'cinta senese'? Use olive oil —which is actually more traditional here—or a lard of your choice. Just be aware that the lard we are showing here is a uniquely HEALTHY lard, rich in unsaturated fats and omega 3 and omega 6—which your average lard is not.
Can't find borlotti beans? Use pinto or just white beans.
Pinot Grigio is an excellent white wine for de-glazing.

INGREDIENTS (serves 4)
✔️ beans (cannellini + borlotti) 11 oz (500 g) of dry beans or 18 oz (800 g) of canned. Choose a mix of cannellini and borlotti beans
✔️ carrots: 3 or 200 g
✔️ celery: 4 ribs or 200 g
✔️ onion: 2 medium or 300 g
✔️ whole canned tomato (crushed into pulp): 8.5 oz (240 g)
✔️ olive oil or healthy lard (lardo di colonnata di Cinta Senese): 150 g
✔️ dry white wine: 1/2 cup (100 ml)
✔️ rosemary: 4 sprigs (fresh)
✔️ sage: 4 leaves (fresh)
✔️ thyme: 4 sprigs (fresh)
✔️ salt and pepper: to taste

ITALIAN ESCAROLE WITH WHITE BEANS AND PEPPERONI / QUICK INEXPENSIVE MEAL BACK TO BASICS PT 7
This recipe came from my Mother n law years ago and I have been making it ever since. Its quick and easy. You may already have all the ingridents on hand. Takes no longer then 10 minutes to make from start to end.
INGREDIENTS:
2 tsp of olive oil
2 onions finely chopped
2 tablespoons of tomato paste
4 to 5 garlic cloves chopped
2 heads of Escarole
2 cups of drained White northern beans
2 cups of pepperoni cut in half or fourths
1 cup of Parmesan cheese
1 tsp of garlic powder
1 tsp of basil
1 pinch of pepper seeds
salt and pepper to taste
Directions:
Boil your Escarole then drain
add your oil to a pot add the chopped onions and garlic and cook slowly to not burn the garlic. Once the onions are translucent add the Escarole and saute for 10 minutes
add your seasoning mix thoroughly
Add 2 tablespoons of tomato paste or sauce and combine
add your beans and heat thoroughly do not break your beans all up.
Then go ahead and add your pepperoni cook for 5 more minutes add the cheese and then serve in a bowl with some crusty Italian bread. I hope you enjoy this recipe and give it a try Please Subscribe Smash the like button and until next time I Bless You.
