After the big freeze, you may have space in your garden for some new vegetables. Dr. Joe Masabni returns to introduce us to new and exotic greens to enhance your gardening experience. Learn how easy to grow healthy greens like roquette (arugula) , radicchio (leaf chicory), endive, edible amaranth, molokhia and oka hijikio. Plus, he familiarizes us with unique plants with edible leaves and flowers like the toothache plant. Lastly, Dr. Joe covers which common vegetables have edible leaves and roots like beets and sorrel. Not only they are nutritious, but many of these herbs or greens can be used as ornamentals in the landscape.Everyone who registers for this session receives an email in a few days with any resources shared by the presenter and access to the recorded session.
Dr. Masabni’s area of expertise is vegetable production for small-acreage producers. Research interest is to develop production systems for high tunnel vegetables, aquaponics production, and pesticide and variety trials. Extension activities include developing online and printed materials for vegetable organic and conventional producers and homeowners, hosting workshops and conferences, and assisting county extension agents serving Texas clienteles.
Packets of seeds curated for this program are available to the first 25 people to request them when registering . You must be able to pick the seeds up at a Dallas Public Library branch using the Library to Go service.

C’est le retour tant attendu des gants noirs pour une nouvelle recette ! ????????
Aujourd’hui, je vous ai concocté une recette idéale pour vos plateaux apéritifs ou bien lorsque l’on reçoit pour les fêtes de fin d’année ????
Plusieurs variétés de petites salades, fraîches et goûteuses, avec des ingrédients simples et accessible à tous, sans passer des heures en cuisine.
Pour la salade de carotte, il vous faudra :
-5/6 carottes
-de la coriandre hachée
-le jus d’un demi citron
-1/2 cuillère à café de sel, poivre, cumin et piment doux
-2 cuillères à soupe d’huile d’olive
Pour la salade de concombre/tomate, il vous faudra :
-1 grosse ou 2 petites tomates
-1 concombre
-1/2 oignon haché
-1/2 à café de sel, poivre
-de la coriandre hachée
-2 cuillères à soupe d’huile d’olive
-1 cuillère à soupe de vinaigre
Pour la salade de poivrons marinés, vous pouvez très bien cuire, et peler vos poivrons vous même (comme dans ma vidéo de la tchoukchouka) ou bien les acheter directement en grandes surfaces, ils sont également très bien.
Il vous faudra donc :
-des poivrons marinés
-une gousse d’ail hachée
-1/2 cuillère à café de sel et de poivre
-de la coriandre hachée
-2 cuillères à soupe d’huile d’olive
-1 cuillère à soupe de vinaigre
Pour le guacamole maison, il vous faudra :
-2 avocats bien mûres
-1 tomate découpée en dés
-1/2 oignons découpé en dés
-1 cuillère à café de sel
-1/2 cuillère à café de poivre
-1/2 citron pressé
-2 gousses d’ail hachées
Pour le topping de mes Verrines j’ai utilisé des chips façon fajitas, du saumon fumée, de la ciboulette, des feuilles de coriandre ainsi que des olives vertes et noires ☺️
Recettes faciles, fraîches, tout en étant très présentable.

Today, I have concocted an ideal recipe for your aperitif platters or for entertaining for the end of the year celebrations ????
Several varieties of small salads, fresh and tasty, with simple ingredients and accessible to all, without spending hours in the kitchen.
For the carrot salad, you will need:
-5/6 carrots
- chopped cilantro
-the juice of half a lemon
-1/2 teaspoon of salt, pepper, cumin and sweet pepper
-2 tablespoon olive oil
For the cucumber / tomato salad, you will need:
-1 large or 2 small tomatoes
-1 cucumber
-1/2 chopped onion
-1/2 teaspoon of salt, pepper
- chopped cilantro
-2 tablespoons olive oil
-1 tablespoon of vinegar
For the marinated pepper salad, you can cook very well, and peel your peppers yourself (as in my tchoukchouka video) or buy them directly in supermarkets, they are also great. You will therefore need:
- marinated peppers
-a clove of minced garlic
-1/2 teaspoon of salt and pepper
- chopped cilantro
-2 tablespoons olive oil
-1 tablespoon of vinegar
For the homemade guacamole, you will need:
-2 very ripe avocados
-1 tomato, diced
-1/2 onions, diced
-1 teaspoon of salt
-1/2 teaspoon of pepper
-1/2 squeezed lemon
-2 garlic cloves, chopped
For the topping of my verrines I used fajita-style chips, smoked salmon, chives, coriander leaves and green and black olives ☺️
Easy, fresh, yet very presentable recipes.

أنواع عديدة من السلطات الصغيرة ، طازجة ولذيذة ، بمكونات بسيطة وفي متناول الجميع ، دون قضاء ساعات في المطبخ.
بالنسبة لسلطة الجزر ، سوف تحتاج إلى:
-5 / 6 جزر
- الكزبرة المفرومة
- عصير نصف ليمونة
-1/2 ملعقة صغيرة ملح وفلفل وكمون وفلفل حلو
- 2 ملعقة طعام زيت زيتون
بالنسبة لسلطة الخيار / الطماطم ، سوف تحتاج إلى:
-1 طماطم كبيرة أو 2 طماطم صغيرة
- 1 خيار
-1/2 بصل مقطع
-1/2 ملعقة صغيرة ملح ، فلفل
- الكزبرة المفرومة
-2 ملاعق كبيرة زيت زيتون
-1 ملعقة كبيرة خل
بالنسبة لسلطة الفلفل المتبل ، يمكنك طهيها جيدًا ، وتقشير الفلفل بنفسك (كما في فيديو التشوكشوكة الخاص بي) أو شرائها مباشرة من السوبر ماركت ، فهي أيضًا رائعة. لذلك سوف تحتاج إلى:
- فلفل متبل
- فص ثوم مفروم
-1/2 ملعقة صغيرة ملح وفلفل
- الكزبرة المفرومة
-2 ملاعق كبيرة زيت زيتون
-1 ملعقة كبيرة خل
ستحتاج إلى:
-2 ثمرة أفوكادو ناضجة جدًا
-1 طماطم مقطعة مكعبات
-1/2 بصل مقطع إلى مكعبات
-1 ملعقة صغيرة ملح
-1/2 ملعقة صغيرة فلفل
-1/2 عصير ليمون
-2 فص ثوم مفروم
لتزيين الكزبرة ، استخدمت رقائق الفاهيتا وسمك السلمون المدخن والثوم المعمر وأوراق الكزبرة والزيتون الأخضر والأسود ☺️
وصفات سهلة ، طازجة ، لكنها رائعة المظهر.

Vietnamese Chicken & Mango Salad with Nuoc Cham cheekyricho version of this delicious Asian Salad, its colourful, economical, easy to make satisfying and tasty. We do Hope you give it a try. This recipe suggestion comes from Klara, I wonder how her little grandson Sam will go making this dish. Hats off to all the Nannas teaching their 'grandies' to cook.
INGREDIENTS:
2 thigh fillets fat and skin removed
10g vietnamese seasoning
1 chilli
1 mango
20g fish sauce
40g water
20g brown sugar or palm sugar
2 spring onions
salad leaves
12 or so cherry tomatoes
1 pad of mung bean noodles or glass noodles soaked in cold water for 15-20 minutes
1/2 clove garlic
20g carrot
10g sesame oil.
