How To make Empanaditas
1/2 lb Ground Beef
1/4 c Onion; Finely Chopped, 1 Md
2 tb Raisins; Finely Chopped
2 tb Chopped Green Olives
1/4 ts Salt
1/8 ts Pepper
1/4 c Cottage Cheese;Sm Curd,Cream
1 ea Egg;Large Hard Cooked, *
1 ea Egg; Large, Separated
1 ts Water
1 x 10-Inch PastryRecipe,2 crust
2 ts Milk
* Hard boiled egg should be peeled and chopped. ~------------------------------------------------------------------------- Cook and stir ground beef in 10-inch skillet, breaking up into small pieces, until brown; drain reserving 1 T of fat and the beef in the skillet. Stir in onion, raisins, olives,salt and pepper. Cover and cook over low heat for 5 minutes. Stir in cottage cheese and hard cooked egg. Heat oven to 400 degrees F. Mix egg white and water until slightly foamy; reserve. Prepare pastry dough; gather into a ball. Divide into halves. Shape into 2 flattened rounds on lightly floured cloth covered surface. Roll 1 round of pasty into circle, about 14 inches in diameter. Cut into 11 or 12 circles, 3 1/2-inches in diameter. Spoon on 2 t of the beef
mixture at the center of each circle; brush edge of pastry with egg white mixture. Fold pastry circle up over filling; press edge with fork to seal. place empanaditas on ungreased cookie sheet. Repeat with remaining pastry circles. Gather any remianing pastry; shape into another round. Repeat rolling cutting and filling. Beat egg yolk and milk until well blended; brush over tops of empanaditas. Bake until golden brown, 15 to 20 minutes. Serve warm.

Empanada
Dough ingredients:
500g all-purpose flour
100g shortening
100g butter
1c water
1/4tsp baking powder
2g salt
76g sugar
Filling:
700g ground pork or any kinds of meat you preffered
150g grated cheese
100g diced carrots
100g diced potato
40g chopped onion
10g minced garlic
20g patis
10g vetsin
40g sugar
1tsp black pepper
200g raisins
225g green peas

1 cup (220 grams) butter or veg. shortening
180-200 ml. water
Filling
2 pack (400 grams) of cooked ham
160 grams cheese
1 large green bell pepper
1/2 tsp. salt
pinch of black pepper
chilli powder
1/2 cup mayo
1 beaten egg to seal the edges.
oil for frying or baked this at 180°C for 20-25 minutes. Brush the empanadas with egg wash if you plan to bake it.

Sweet Blackberry & Chocolate Empanadas:
Ingredients:
1 2/3 cup (400 mL) all-purpose flour
1/2 tsp (2 mL) salt
1/2 cup (125 mL) cold unsalted butter, cubed
1 egg yolk
1/4 cup (60 mL) ice water
1. To make dough, stir flour with salt in a large bowl. Cut in butter with a pastry blender or your fingertips until mixture resemble coarse meal. Whisk egg yolk with water and stir into the flour mixture until dough comes together.
2. Form dough into a ball and flatten into a large disk. Wrap in plastic wrap and refrigerate for at least 1 hour before rolling.
3. Meanwhile, roll out dough on a lightly floured surface until 1/8-inch (3 mm) thick. Using a 4-inch (10 cm) round cutter, cut dough to make 8 rounds. Reroll scraps to make 8 more rounds.
4. Brush edges of each round with egg wash.
