Egg Nog Cookies
I don't like egg nog but I LOVE these cookies. There is something about them. Everyone who has tried them whether they like egg nog or not has raved about them usually saying I don't even know what it is about these things, I can't stop eating them! Perfect, chewy little Egg Nog Cookies that stay as fresh as the day you made them for a week. Trust me, they won't in the house that long to test the theory. (Not Christmas time when you find this? No worries! Check the baking aisle, they almost always have a big can of nog hiding in that section year round!)

Eggnog Cookies (makes 16)
Cookie Dough
1 stick plus 2 ½ Tbsp. unsalted butter, room temperature
½ c. light brown sugar
2 egg yolks
1 Tbsp. eggnog
¼ tsp. vanilla extract (or rum extract if you prefer)
¼ tsp. nutmeg
¼ tsp. cinnamon
1 ½ c. all purpose flour
Frosting
2 c. powdered sugar
pinch of salt
1 stick unsalted butter, room temperature
½ tsp. vanilla extract (I forgot this! Use rum extract if you prefer)
3 Tbsp. eggnog
nutmeg for garnish
Preheat oven to 325 degrees. In a large mixing bowl, use an electric hand mixer to cream 1 stick plus 2 ½ Tbsp. unsalted butter with the light brown sugar. Add the egg yolks, eggnog, and vanilla extract. Beat to combine. Add the nutmeg, cinnamon, and flour. Beat again until fully incorporated. Use a medium cookie scoop (heaping tablespoon) to form the cookie dough into balls and place on a lined baking sheet. Bake at 325 degrees for about 12-13 minutes or until totally set and lightly golden on the bottom.
While the cookies bake, make the frosting. In a large mixing bowl, use an electric hand mixer to beat together 1 c. of powdered sugar, the butter, vanilla, and 2 Tbsp. eggnog. Once incorporated, add the second cup of powdered sugar and 1 Tbsp. eggnog. Beat to combine.
Remove cookies from oven and allow to cool before frosting. Spread a thick layer of frosting onto each cookie and sprinkle with nutmeg to garnish. ENJOY!

Amazing Eggnog Recipe
My traditional Eggnog recipe is rich and creamy with simply the best balance of sweetness and spice. Bourbon adds an extra kick, and the addition of heavy cream makes this cocktail reminiscent of melted ice cream. If your memories of eggnog always include a cardboard carton, you must try this recipe. This homemade version has so much more flavor than store-bought eggnog, and you can personalize the flavors too!
