Making Damson Jam/Jelly
So this weekend we decided to make some damson jam with the damsons my mum brought over with her.
This is easily my favourite jam and I love it's sweet yet sharp taste.
I'd love to hear what your favourite jam is and how you make it. I know that many people on the other side of the pond like to water bath it after it's made, but with this content of sugar it's just not worth it (also it doesn't last very long in this house I can tell you!

Jam-Filled Thumbprint Cookies with Almond Glaze
This year we are ringing in the new year with warm tea, jam-filled thumbprint cookies and a marathon of movies. This is my happy place! I am filling these cookies up with my favourite: raspberry jam. Plus, it is the only flavour of jam I currently have in my home. But you can use any flavour jam that you like. If you are looking to lighten this recipe, you can skip the glaze entirely.

Raspberry Thumbprint Cookies | Quick Homemade Jam | Freeze Dried Fruit | Thrive Life in the Kitchen
#thrivelife #pantrycooking #freezedriedfood
This is a recipe for both the shortbread cookies and the homemade raspberry jam filling. It's all super easy and tasty and done is less than an hour. You could use pretty much any of the Thrive Life fruits in place of the raspberries - I think blackberries, blueberries, strawberries, peaches, or pineapple would work well. I would adjust the sugar down a bit with the sweeter fruits. The jam gets all shiny and sticky and wonderful while the shortbread dough is light and soft and not-too-sweet. My daughter said, There's a shortage of perfect cookies in this world, and that's a perfect cookie. Enough said.
I hope you enjoy this cookie recipe at Christmas or any other time of year! Raspberry Thumbprint Cookies
(recipe shown in the video is a half-recipe and yields 14 cookies)
Full Recipe (28 cookies):
2 cups AP flour or 2 cups Thrive Life gluten-free flour
2/3 cup sugar
1/2 tsp kosher salt
1 cup softened butter
2 tsp vanilla
1/2 tsp almond extract
Mix all the above ingredients until fully incorporated and shape into a disc. Cover and refrigerate while you make the jam.
In a small saucepan:
1 1/2 cups TL raspberries
6 Tbsp sugar
pinch of salt
1 cup water
Bring to a boil and mash the berries. Whisk constantly and cook on medium-high for 4-5 mins or until raspberry jam is thickened. Remove from heat and add 1-2 tsp lemon juice. Stir to incorporate. Push the hot jam through a fine mesh strainer to remove the seeds (optional -- I did this and then put about 1/4 of the seeds back into the jam). Allow the jam to cool completely.
Meanwhile, using a medium cookie scoop, shape cookies into 28 balls. Slightly flatten the cookies on parchment-lined cookie sheets. Using the end of a wooden spoon handle, make an indentation in the cookies to fill with jam. Spoon about 1 tsp of the cooled jam into the cookies (or pipe in using a baggie with the corner cut off).
Bake at 350 F for 13-15 mins or until slightly starting to brown. Allow to cool on the trays for 5 mins before transferring to a wire rack to cool completely. After cookies are completely cooled, sprinkle with powdered sugar. The sugar will eventually dissolve into the jam leaving the signature thumbprint look. Enjoy!
Yields: 28 cookies

Ingredients
Jam roly-poly
125g flour
75-80ml cold milk
125g strawberry jam (you could use other flavors)
50g butter (frozen)
1tsp baking powder
1tsp vanilla powder or extract or pod if you can get one.
Custard
600ml milk
1tsp vanilla powder (extract)
3 egg yolks
25g sugar
2tsp cornflour
1. First, get your oven pre-heating 180c. Into the bottom fill a tray with boiling water.
* be careful when you open the oven as there will be hot steam!
2. Sift your flour into a bowl and add your vanilla powder.
3. I put my butter into the freezer 5 min before I prepare that way it is cold enough to grate, using the cheese grater. Add your butter to the flour mixture and mix with a knife.
4. Add your milk, a little bit at a time, until your dough becomes sticky.
5. Place your dough onto a flat surface and roll out into a rectangle.
6. Spread your jam over, then roll it up.
7. Place onto your baking paper, seam down. Then loosely wrap it up, and tie off the ends, then place it into the foil and fold the ends. It will expand during cooking, so it is important not to wrap too tightly.
8. Place into your oven and allow to cook for 1hour at 180c.
9. Once getting it out of the oven allow it to sit for 5min. When you do open be careful as there might be some steam as you open the ends.
10. Cut into thick slices and serve with ice cream, cream or custard. I recommend custard.
11. Sit down and enjoy a traditional English dessert.
Custard
1. Heat the milk with the vanilla powder until just boiling.
2. Mix together the egg yolks, sugar and cornflour in a bowl to get a smooth paste.
3. Take a little of the milk from the pan and mix/ dilute with your paste.
4. Then add your mixture to your milk and stir well.
5. Stir constantly, on medium heat until the custard thickens.

ASME Tech forum Demo Jam | 'Regaining control of your production with AM Post Processing Automation'
Carlos Zwikker, Commercial Director of AM-Flow talks about 'how to overcome the challenges companies are facing in expanding production facilities using Additive Manufacturing as a production technology'
'The pain in the market is an absence of post processing workflow automation in AM market. But to be able to automate the post processing workflow, Post processing automation needs to overcome a serious challenge: how to identify parts within the infinity of geometries produced in AM. AM-Flow has solved this challenge of identification of 3D printed parts by geometry only.'
Carlos also shows in line the stack solutions AM-Flow has developed in our showroom at Brainport Industries Campus (Eindhoven) to implement in different steps of the end-to-end automation workflow in AM production facilities.
