How To make Egg Mayonnaise Indienne
4 Hard-boiled eggs
1 cn Tuna, drained, flaked
-(3.5 oz) 1/2 c Mayonnaise
Salt to taste Fresh ground pepper to taste 4 Cocktail gherkins, chopped
3 tb Half and half
2 ts Tomato paste
1 1/2 ts Curry Powder
Paprika Fresh Italian parsley -sprigs (opt) Cut eggs in half lengthwise and carefully remove yolks. Put yolks into a bowl. Mix in tuna, 2 tablespoons of mayonnaise, salt, pepper and gherkins. Divide mixture evenly between egg white halves and fill hollows. Smooth tops to form neat mounds. In a bowl, mix remaining mayonnaise, half and half, tomato paste and Curry Powder; season with salt. Mix until smooth. Spoon mixture over prepared eggs to coat completely. Garnish with paprika and parsley sprigs, if desired. Serve chilled.

I can't believe anyone would make egg sandwiches with anything other than soft boiled eggs! Hard boiled = rubbery little white bits in the creamy filling. No thanks!

Method:
Egg Chutney Sandwich
To Make Chutney
1 Cup Mint Leaves
1/2 Cup Coriander Leaves
1/2 Cup Green Chillies
1/2 Inch Ginger
2 Garlic Pods
1/4 Tsp Salt
1 Tsp Lemon Juice
2 Bread Slices
2 Eggs
1/4 Tsp Salt
1/4 Tsp Pepper Powder
Egg Mayo Sandwich
2 Bread Slices
2 Boiled Eggs
2 Tbsp Mayonnaise
1/2 Tsp Pepper Powder
1/2 Tsp Red Chilli Flakes
1/2 Tsp Salt
Lettuce Leaves
Method:
Egg Chutney Sandwich
• Blend the following to a smooth paste - mint leaves, coriander leaves, green chillies, ginger, garlic pods, salt & lemon juice
• Take 2 slices of bread. We have taken wholewheat multigrain slices. You can go for any slice of your choice
• Lather the chutney on the bread slices
• Place thinly sliced pieces of boiled egg on one of the slices
• Place the other slice on top of the other
• Cut into a neat triangle
• Healthy egg chutney sandwich is ready to gobble up
Egg Mayo Sandwich
• Cut the boiled egg into small pieces & add into a mixing bowl
• Now add the pepper powder, red chilli flakes & salt. Mix well
• Add mayonnaise & mix again. The egg mixture is now ready
• Take 2 slices of bread
• Place a lettuce leaf on one slice, followed by a dollop of the egg mix
• Place the other slice on top of the other
• Cut into a neat triangle
• Tasty egg mayo sandwich is now ready!
