How To make Easy Turkey Soup
4 1/2 cups reduced-sodium chicken broth
or regular 2 cups water
1 teaspoon dried thyme :
crushed
1/4 teaspoon pepper
1 cup packaged dried small shell macaroni
1 16 ounces pa frozen mixed vegetables
2 cups chopped cooked turkey
or chicken 3/4 cup frozen florida orange juice concentrate :
thawed
florida orange slices halved :
optional herb sprigs -- optional
In a large saucepan combine broth, water, thyme, and pepper Bring to boiling. Stir in macaroni. Return to boiling; reduce heat. Boil gently, uncovered, for 3 minutes. Stir in vegetables; return to boiling. Boil gently, uncovered, 5 to 7 minutes more or until vegetables and pasta are tender.
Stir in turkey and thawed concentrate. Heat through. If desired, garnish with oranges and herb sprigs. Makes 5 (about 1 3/4-cup) servings.

Your Christmas turkey will always leave you with next-day leftovers they are just as important as the perfect day-of meal. The turkey is the most generous. You get the bird on day one; the leftover meat for sandwiches in the days after; and now you get this glorious sunny stock from the bones and bits leftover even after the meat is gone. When it comes to making turkey stock, the best turkey is roasted turkey. The leftover bones and bits of meat are plenty enough for making stock. This stock won’t set up as thickly as gelatin, but it will still be plenty rich and full of body. This will make for perfect soups!

Ingredients for making turkey stock:
1 cooked roasted turkey carcass
2 large onions, quartered
4 large carrots, peeled and chopped
4 stalks celery, chopped
2 whole garlic cloves, smashed
1/2 tsp whole black peppercorns
2 bay leaves
fresh thyme
fresh parsley
1 gallon water
Instructions for making turkey stock for soups:
- Add your turkey carcass to the largest pot you have
- It might not look very appetizing now but don’t hold anything back, all those bones are absolutely full of flavour
- Now to add two large onions cut into quarters
- Don’t worry about peeling them, we’re going to strain everything later anyway
- Also add about four roughly chopped carrots, and celery stalks as well as two whole smashed cloves of garlic, whole peppercorns, dried bay leaves, fresh thyme and parsley
- Next pour in enough water to cover the carcass, about 1 gallon or so, then turn the heat on high to bring everything up to boil
- Reduce the heat to medium and simmer for at least two hours or until the liquid has reduce by about half
- This is such a great recipe because you can just let it do it’s thing on the stove while you relax, plus your house will smell incredible
- Now all you need to do is remove the large bones and vegetable pieces with a wire strainer or slotted spoon then strain the liquid through a sieve
- At this point you can use your stock for soups or sauces or allow it to cool then store in the fridge or freezer for future use

Leftover Thanksgiving Turkey Soup Recipe | Easy Tasty Turkey Soup
INGREDIENTS:
8 cups of turkey or chicken broth
2-3 cups shredded turkey
1 cup diced onions
1 cup diced celery
1 cup diced carrots
1/4 tsp. salt
black pepper to taste
1 tsp. poultry seasoning
1/2 tsp. garlic powder
1 Tbsp. parsley
cooked egg noodles/ pasta/ rice
In a soup pot add turkey broth a bring to a simmer.
Add onions, celery, carrots and seasonings. Bring to simmer and cook for 15-20 minutes.
Add turkey and cook for 5-10 minutes to heat through.
Serve over egg noodles, pasta or rice.
Enjoy.

How to Make Homemade Turkey Stock Recipe:

Ingredients for making turkey noodle soup:
2 tablespoons olive oil
1 cup diced onions
1 cup diced carrots
1 cup diced celery
1 rosemary sprig
1 teaspoon fresh thyme
1 teaspoon dried oregano
8 cups turkey stock
12 ounces noodles
2 to 3 cups shredded cooked turkey
salt and pepper to taste
Instructions for making leftover turkey noodle soup:
- Start by sautéing finely diced onions in olive oil over medium heat
- Cook them down until they’re translucent then stir in minced garlic and cook for about 30 seconds
- Now for the veggies we stuck with the classics, carrot and celery but you could really add any of your favourite vegetables to the pot then cook them for about 5 minutes until softened slightly
- At this stage season with a few pinches of salt and pepper then to add some more layers of flavour add fresh herbs like rosemary and thyme as well as a little dried oregano
- You can customize this step too based on your preferences but I think these herbs go really well with turkey
- Once your herbs are mixed in, pour in about 8 cups of turkey stock
- We used homemade and you can find the recipe for that in the description below
- Bring the stock up to a boil then add about 12 ounces of your favourite pasta noodle and stir
- Cook for about 8-10 minutes until the pasta is mostly cooked through then taste the soup and adjust the seasoning accordingly
- Ours needed a little more salt and pepper
- Once the flavour is right, add your shredded leftover turkey and cook for another 2-3 minutes until the turkey has been warmed through
- Serve immediately for a hearty post holiday lunch
