How To make Double Peanut Butter Cookies
1 3/4 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1/2 c Sugar
1/2 c Shortening
1/2 c Creamy peanut butter
1/4 c Light corn syrup
1 tb Milk
1/4 c Creamy peanut butter
Recipe by: Southern Living
Combine flour, soda, salt, and sugar; cut in shortening and 1/2 cup peanut butter with pastry blender until mixture
resembles coarse meal. Stir in corn syrup and milk. Shape dough into a 12-inch roll; wrap in wax paper, and chill at least 2 hours. Unwrap roll, and cut into 1/4-inch slices; place half of slices on ungreased cookie sheets. Spread each with 1/2 teaspoon peanut butter. Top with remaining cookie slices, and seal edges with a fork. Bake at 350 about 2 dozen. NOTE: Dough may be frozen up to 3 months. Slice dough while frozen; let thaw slightly. Assemble and bake as directed. -----

Chewy Double Chocolate Peanut Butter Cookies
The delicious combination of cacao, chocolate chips, and peanut flour come together in this decadent cookie recipe that our entire family loves. The best part? You would never guess that they were healthy, low-carb and sugar-free.
I wish I could say that this recipe was one that I created all on my own, but it is inspired by the Trim Healthy Mama cookbook. My husband and I are mostly low-carb and sugar-free so when I find a delicious recipe that we love, I have to share it. I made several changes to the original recipe, and my family loves my version of the recipe.
There are several ingredients in this recipe that are the Trim Healthy Mama brand. I use them quite often in our home for a variety of recipes. Two of those ingredients are, baking blend and peanut flour. There are many, many recipes on the internet for those who are interested in the Trim Healthy Mama way of eating, and while I don’t abide by it strictly, I do use a lot of recipes from their cookbook.
Chewy Double Chocolate Peanut Butter Cookie Recipe
8 Tbsp butter
1 Cup Birchbark Xylitol
2 Tsp Stevia
1 large egg
2 Tsp Vanilla
3/4 Cup Baking Blend
5 Tbsp Cacao
5 Tbsp Peanut Flour
1 Tsp Baking Soda
1/4 Tsp Celtic Salt
3/4 Cup Lilly’s Chocolate Chips
In a small saucepan, combine the butter and xylitol. Melt over low heat until the xylitol has completely dissolved.
Pour the xylitol and butter mixture into a mixing bowl.
Then, add all the other ingredients.
Mix well.
Line a baking pan with parchment paper.
Drop the dough by tablespoon size onto the parchment paper.
Bake for 10-15 minutes until the cookies are still soft but not quite set.
Remove from oven, and allow to cool completely before trying to remove from the parchment paper.
