How To make Double Peanut Butter Cookies
1 3/4 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1/2 c Sugar
1/2 c Shortening
1/2 c Creamy peanut butter
1/4 c Light corn syrup
1 tb Milk
1/4 c Creamy peanut butter
Recipe by: Southern Living
Combine flour, soda, salt, and sugar; cut in shortening and 1/2 cup peanut butter with pastry blender until mixture
resembles coarse meal. Stir in corn syrup and milk. Shape dough into a 12-inch roll; wrap in wax paper, and chill at least 2 hours. Unwrap roll, and cut into 1/4-inch slices; place half of slices on ungreased cookie sheets. Spread each with 1/2 teaspoon peanut butter. Top with remaining cookie slices, and seal edges with a fork. Bake at 350 about 2 dozen. NOTE: Dough may be frozen up to 3 months. Slice dough while frozen; let thaw slightly. Assemble and bake as directed. -----

Nestle Double Peanut Butter & Milk Chocolate Cookies
2 cups all-purpose flour
1 tsp baking soda
1 cup (2 sticks) butter, softened
1/2 cup creamy or chunky peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 tsp vanilla extract
1 large egg
3 cups (11-oz pkg) Nestle Toll House Milk Chocolate & Peanut Butter Morsels
Granulated Sugar (to roll cookie dough in before baking)
Instructions:
Preheat oven to 375 F (my oven is hot, so I preheat at 350 F)
In a small bowl, combine flour and baking soda
In a large mixing bowl, beat butter, peanut butter, granulated sugar, brown sugar, and vanilla extract until creamy.
Beat in egg
Beat in flour mixture gradually
Stir in morsels
Drop onto ungreased baking sheets by rounded tablespoon (I cover my cookie sheets with parchment paper for baking)
Press each down slightly with bottom of glass dipped in granulated sugar. (I roll cookie dough in granulated sugar, then flatten cookie with a fork).
Bake for 8 to 10 minutes or until edges are set but centers are still soft. Cool on baking sheets for 4 minutes; remove to wire racks to cool completely. (or place on a large plate)
Makes about 3 1/2 dozen cookies

5-INGREDIENT PEANUT BUTTER COOKIES
1 cup all-natural peanut butter (I used salted)
1 egg
1/2 cup coconut sugar or monk fruit
1 teaspoon vanilla extract
4 ounces dark chocolate
1 teaspoon coconut oil
INSTRUCTIONS
Preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment paper, a Silpat mat or lightly coat with cooking spray. In a large bowl, stir together cookie dough ingredients (peanut butter, egg, monk fruit, or coconut sugar and vanilla) until fully combined.
Scoop a heaping tablespoon of the dough into your hands and form a ball, then flatten out into a disc-like cookie shape. Place on a baking sheet and repeat until you have worked through all of the dough. Using a large fork, flatten cookies slightly then turn the fork going in the opposite direction and flatten just slightly again (this will create a criss-cross pattern).
Bake cookies for 10-12 minutes or until the cookies are cooked through, golden brown, and fragrant. Cool to room temperature.
Melt chocolate in the microwave or in a double boiler. Stir coconut oil into melted chocolate. Dip one-third of the cookie into the chocolate and then place it back on the cookie sheet. Sprinkle with a bit of flaky sea salt and repeat until you have worked through all of the cookies. Place the baking sheet in the fridge for one hour or until the chocolate has been set up. Enjoy!
NOTES
For the sweetener, you can swap in any type of granulated sugar you have or prefer, they all work!
Storage: Keep cookies stored in an airtight container in the refrigerator for up to one week.
Freezing Instructions: Cookies can be frozen for up to 2 months, then thawed overnight in the refrigerator or at room temperature before enjoying.
