Ingredients:
For the oat crust:
2 cups (180g) Rolled oats
1 cup (125g) All-purpose flour
3/4 cup (150g) Light brown sugar
3/4 cup (170g) Softened Butter, cubed
1/2 teaspoon Ground cinnamon (optional)
1/4 teaspoon Salt
1/2 teaspoon Baking soda
For the date filling:
400g (14.1oz) Medjool dates, pitted
1 cup (240ml) Water
1 teaspoon Vanilla extract
1 tablespoon Lemon juice
Directions:
1. Place dates, water and lemon juice in a small saucepan. Bring to a boil, stirring occasionally. Reduce the heat and simmer for 5-8 minutes, stirring occasionally, until the dates are soft. Remove from heat and add vanilla extract. Let cool to room temperature.
2. Preheat oven to 350F (175C). Line a 9-inch (23cm) square baking pan with a strip of parchment paper. Set aside.
3. Make the crust: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.
4. Press 2/3 of the mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.
5. Bake for 25-30 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.
Flourless Orange Cake
This is a wonderful moist Orange Cake that's literally bursting with orange flavour in a way that you can only achieve using whole oranges - rind and all! Boiling the oranges removes the bitterness from the pith. Made with almond meal instead of flour, it's a terrific easy cake to take to gatherings because it's gluten free so everyone can enjoy it!

Greetings everyone. I hope you all are doing fine.
Today I would share date orange cake.
Ingredients
1 cup sll purpose flour
1 tsp baking powder
1/2 tsp baking soda
Pinch salt
1/2 cup finely chopped dates
juice squeezed from 1 orange
1 tsp grated orange rind
3/4 cup sugar
3 egg yolks
150ml ghee or vegetable oil
1/2 cup boiling water
50 to 60ml normal water
Process
Sieve the dry ingredients. Keep aside. Then cook a few minutes
Low heat dates and orange rinds in 12cup boiling water. Beat the egg yolks, sugar and ghee. Add the sieved ingredients and mix inbetween with date mixture, orange juice and water. Spread in oiled baking pan. Bake at 360°F for 40 to 50 minutes . Note : use of quality products will make end result good.

Orange Cake Recipe | Eggless Orange Cake | Whole Wheat Orange Cake
An Orange Cake Recipe that is super easy to make. This is also an eggless orange cake and a vegan recipe too. Complete detailed recipe with step by step photos at:
The cake is made with whole wheat flour, fresh orange juice, olive oil, raw sugar, baking soda and baking powder.
This Whole Wheat Orange Cake has an orangish flavor with a light orange color with a soft and light crumb. The cake serves 3 to 4 servings. You can even make orange muffins from this recipe.
The orange cake recipe is made with fresh orange juice but you can even add packaged orange juice.
Note that if adding fresh orange juice, then prepare the juice just before you add it to the oil-sugar mixture. Keeping fresh orange juice for a long time at room temperature will make bitter.
INGREDIENTS FOR ORANGE CAKE
1 cup whole wheat flour - 120 grams (can sub use all-purpose flour or half-half of both the flours)
1 pinch salt
½ teaspoon baking powder
½ teaspoon baking soda
¾ to 1 cup orange juice - 187 ml to 250 ml. (Note that for whole wheat flour add 1 cup orange juice and for all-purpose flour, then add ¾ cup orange juice)
½ cup raw sugar - 100 grams. can use white sugar, powdered jaggery or castor sugar - add more if required
¼ cup olive oil - 62.5 ml. (can sub with any vegetable oil)
½ to 1 teaspoon orange zest
1 tablespoon eggless vanilla custard powder or cornflour (corn starch)

• 225g Plain flour (sifted)
• 2 Teaspoons baking powder
• 150g Caster sugar
• 75g Dates (chopped)
• 1 Cup sweetened dried cranberries
• 2 Eggs
• 80ml Aseel Canola Oil
• 3 Oranges (grated rind)
• 125ml Orange juice
• Sour cream to serve
Directions:
1. Preheat oven to 180°C.
2. Mix the flour and baking powder in a large bowl then add the sugar, dates, cranberries, beaten eggs, Aseel oil, orange juice and orange rind and mix to combine.
3. Pour the mixture into a 21cm length cake tin lined with baking paper.
4. Bake for 30 minutes until the loaf feels springy to the touch (to test: a knife inserted in the middle should come out clean).
5. Cool on a wire rack, serve with sour cream.

Delicious Dates & Walnut Moist Cake Recipe
Red Dates & Walnut Moist Cake – This cake is super moist, amazingly. The fragrant is phenomenal as you can smell it from the oven and when the cake is out, the room is filled with such pleasant smell. I got hungry and couldn’t wait to dive in. Love the texture of the cake. The dates made it a little chewy and crunchy at the same time with the walnuts. I love coffee and adding into the cake is just nice for me but you can definitely leave it out by just adding hot water. I made the eggless version as well. Honestly I can’t tell the difference. Ingredients:
I used a loaf pan of 20 x 10 x 7.5cm
250g [2 cups] red dates
85g [1 cup] walnuts
60g [¼ cup] butter
6g [1 tbsp] espresso coffee OR 6g [2 tsp] instant coffee (optional)
120g [½ cup] hot water
4g [1 tsp] baking soda
150g [¾ cup] castor sugar
1 large egg OR 60g [¼ cup] plain yogurt
225g [1¾ cup + 1 tbsp] self-raising flour
¼ tsp salt
Instruction:
1. Preheat oven at 170°C/340°F.
2. Lightly chop the dates and walnuts. Set them aside.
3. Brew some espresso coffee with hot water. You can also use instant coffee powder for your convenience or preference. You can also omit the coffee totally if you don’t desire coffee.
4. In a large mixing bowl, add in the chopped dates, baking soda, butter and sugar. Add in the hot water espresso mixture. Mix until the butter is melted. Set aside for cooling.
5. In another bowl, sift the flour and salt.
6. Back to the dates and coffee mixture. The mixture should be cooled by now. Add 1 egg into it. Mix until well combined.
Egg substitute: add in the plain yogurt instead. Mix until well combined.
7. Add in the sift ingredients in 2 batches. Mix until combined, do not over mix.
8. Add in the walnuts.
9. Transfer the batter into the prepared pan, greased and lined with parchment paper.
10. With a spatula, spread the batter evenly. Add some chopped walnuts on top.
11. Bake in preheated oven at 170°C/340°F for 50-60 minutes. If you notice the top start to crack, you may turn down the temperature to 160°C/320°F (depending on individual oven).
12. Remove cake from the pan, let it cool completely before slicing.
