How To make Daiquiri Pie
1 Pkg. lemon pudding mix (NOT instant)
(4 oz)
1 Pkg. lime jello :
(3 oz)
1/3 Cup sugar
2 1/2 Cups water
2 eggs slightly beaten
1/2 Cup light rum
1 3/4 Cups cool whip :
thawed
1 prepared graham cracker crumb crust (also
good with chocolate)
1. Combine pudding mix, jello, and sugar in a saucepan. Stir in 1/2 cup of the water. Blend well. Add remaining water, and cook, stirring constantly, over medium heat until mixture comes to a full boil. Remove from heat. Stir in rum, then chill for about 20 minutes or until very cool. 3. Thoroughly blend cook whip into chilled mixture. Spoon into pie crust, and chill until firm, about 2 hours. 4. Garnish with additional cool whip and thin lime slices. Note: do not feeze this pie. Store leftovers in the refrigerator.

Strawberry Daiquiri Bites

Yield: 15 to 20 strawberries
Ingredients
1 1/4 cups light rum
1/4 cup lime juice
1 quart medium strawberries, with stems
1 cup granulated sugar
Directions
Stir the rum and lime juice together in a large measuring cup. Poke the strawberries all over with a toothpick. Nestle them stem-side up in a 9-by-5-inch loaf pan, wedging them together as much as possible so they stand upright. Pour the rum mixture over the top and refrigerate for at least 6 hours and up to overnight.
Drain the rum mixture and save to turn into a beverage (see Cook's Note). Put the sugar on a plate and roll the strawberries in it to coat. Transfer to a serving platter and serve immediately.
Cook’s Note
To turn the leftover rum mixture into a beverage: Add the rum liquid to a pitcher with ice and mix with 1/2 cup simple syrup (or to taste), 2 cups of water, a few sprigs of mint and some lime slices.

Here's the recipe:
FROZEN BLUEBERRY DAIQUIRI
3 oz. (90ml) Light Rum
1 1/2 oz. (45ml) Lime Juice
Splash Simple Syrup
1 Cup Frozen Blueberries
Lime Wheel
Cherry
Ice
PREPARATION
1. Add ice, blueberries, rum, lime juice and simple syrup to blender. Combine until smooth.
2. Pour mix into glass and garnish with a lime wheel and cherry. Enjoy responsibly!
