Chicken Stew with Basmati Rice, Roasted Cashews, Raisins, Peeled Almonds & Walnuts, and Salad ????
Ingredients (for 6 persons):
One small chicken (chopped up)
For Seasoning:
One tsp thyme
Paprika powder
Garlic powder
Black pepper
Salt
One heaped tbsp tomato paste
One tbsp oil
Additional Ingredients:
2 tbsp cooking oil
One middle-sized onion
2 middle-sized tomatoes (skin should be peeled)
One tsp turmeric
2-3 middle-sized potatoes
300 ml hot water
Cooking Instructions:
Sauté onions in a preheated pot with oil.
Add marinated chicken and tomatoes, close the lid, and cook on high (not the highest) heat for 5 minutes.
Add the remaining ingredients, close the lid again, and cook the stew on medium heat for 40-45 minutes.

You can make Mandarin Chicken with Walnuts, for a yummy, easy-to-make lunch or dinner in 30 minutes or less. The sweet Mandarin oranges mix well with the freshly squeezed lemon making the chicken moist and tender and the sprigs of fresh mint add a cool pop, which mixes divinely with the other ingredients.

MANDARIN CHICKEN WITH WALNUTS
INGREDIENTS:
organic boneless chicken tenders
½ c. sliced onions
3-4 garlic cloves, diced
lemon juice, freshly squeezed (1/2 of a large lemon)
2 c. fresh Mandarin orange slices (approx)
⅓ c. walnut pieces
fresh mint sprigs
organic extra virgin olive oil
INSTRUCTIONS:
drizzle organic extra virgin olive oil in a skillet over low heat.
Add in onions and garlic and sauté until soft.
ADD IN:
chicken tenders (or chicken breasts thinly sliced)
a few dashes of Herbs de Provence
garlic salt and garlic powder
freshly squeezed lemon juice
fresh Mandarin orange slices
walnut pieces
fresh mint sprigs
Note: Serve chicken with quinoa or rice and with a large green salad!

Chicken Lababdar is a famous food from North-India which can be found on the menu of many Indian restaurants and Dhabas. It is a famous Mughlai cuisine known for its rich and variant taste. The gravy is very creamy and onion-tomato based. It can be best had with Naan or Tandoori Roti; of which, you can find the link below:

Ingredients:
(Serves 4)
- 1 kg Chicken(boneless)
- 1/2 tsp Black Pepper powder
- 2 tbsp Corn Flour
- Salt
- Egg
- Oil for Frying
Ingredients for Gravy:
- 3 tbsp Oil
- 2 tbsp Butter
- 4 Onions(chopped)
- 1 tsp Salt
- 3 Tomatoes
- 4 green Chillies(chopped)
- 1 tbsp Ginger paste
- 1 tbsp garlic paste
- 1 tbsp Coriander Seed powder
- 1 tsp Garam Masala powder
- 1/2 tsp Turmeric powder
- 1 tbsp Red Chilli powder
- 3 tbsp Tomato ketchup
- 1/4 cup Tomato Paste
- 1/2 cup Water
- 2 Capsicum(diced)
- 1 tbsp Honey
- 1 cup Water
- 1/4 cup Cream(beaten)
- 1/2 cup Cheese(grated)
- 1 tbsp Fenugreek Leaves(crushed)
Method:
1. Take chicken pieces in a bowl and add black pepper powder, corn flour, salt, egg.
2. Mix it well and let it rest for 15 minutes
3. Now, fry these chicken pieces in a medium-sized pan, until it turns golden brown, and remove it in a plate
4. In a pan, heat oil & Butter, and add onions
5. Fry until it turns golden brown with the help of salt
6. Once the onions turn golden brown, add tomatoes and saute it till the tomatoes turns soft
7. Now, add green chillies, ginger paste, garlic paste and saute it till the raw smell goes off
8. Add coriander seed powder, garam masala powder, turmeric powder, red chilli powder, tomato ketchup, tomato paste, water and mix it for few minutes
9. Now, add fried chicken cubes into the gravy, mix it and add diced capsicum, honey, water
10. Reduce the flame, add cream, cheese, fenugreek leaves(crushed) and mix it
11. Cover it and cook it for another 5 minutes
12. Once cooked, take it out in a serving bowl and serve it hot.
