Stir Fried Crab with Curry Powder (Thai Food) - Pu Pad Phong Ka Ree ปูผัดผงกะหรี่
This dish is very popular in Thai seafood restaurant. Whole crab with shell or just crab meat can be used to cook this dish. Crab will be cooked together with curry sauce that made from curry powder, eggs, milk and some Thai spice, add some onions, red peppers and Chinese celery.
Stir fried crab with curry powder - Bhu Pad Pong Karee
Ingredients

500 g Fresh whole crab
3-4 cloves Garlic, finely chopped
1 Onion, sliced
2 Celery, cut to about 2 inches long
2 Spring onions, cut to about 2 inches long
2 tbsp Cooking oil
1/2 tbsp Yellow curry powder
3 tsp Fish sauce
Seasoning sauce

2 eggs
2 1/2 tbsp Milk
1 tbsp Yellow curry powder
2 tbsp Roasted chili oil
1/2 tbsp Roasted chili paste
2 tbsp Oyster sauce
2 tsp Fish sauce
1/2 tbsp Sugar
Instructions
==========
1) Make the seasoning sauce by combining the eggs, milk, curry powder, chili oil, chili paste, oyster sauce, fish sauce and sugar. Whisk together until all ingredients are mixed. Set aside.
2) Prepare the crab by removing the main shell. Cut and crack the claws the cut the crab into quarters.
3) Heat cooking oil in the wok over medium high heat.
4) Add garlic to the wok. Cook until the garlic turns slightly yellow then add some onion, curry powder and crab.
5) Add slight amount of water and cover until the crab is done.
6) Add fish sauce, the rest of the onion, celery, spring onion and the seasoning sauce. Stir fry until all ingredient are cooked.
7) Taste and add salt if needed. Serve with jasmine rice.

Stir Fried Crab Curry is one of the popular dish in Thailand and quite expensive in some restaurants. Therefore, I decided to make my own version since I am crab lover. In my recipe, I just use two small chillis, since I am not fun with spicy foods. However, you can add more chillis to level up the spiciness. The combination of milk and egg added to the creaminess of the sauce. This dish is good combination with rice. So I hope you’ll try it.

Thai food - Pad pong kari (Stir fried seafood Curry)
Ingredients:
Choices of your crabs (the bigger the better)
Choices of your shrimps (The bigger the better)
Squid 200 g
Garlic clove finely chopped
Hot red peppers finely chopped
Onions diced
Coconut milk 250 ml
Curry powder
Oyster sauce 2 tbsp
2 large eggs
Fish sauce 1 tbsp
Celery leaves proper portion
Chinese leak proper portion
Light soy sauce to taste
Bit of water for anti dryness when cooking the coconut milk
Procedure:
①Make sure all of the ingredients is in Mise en place
(French culinary phrase which means putting in place or everything in its place.)
②In hot pan, put a 2 tbsp of oil and put the garlic and Red peppers
③mix the crabs and stir a bit (till the color changes)
④put the shrimp inside till the color changes a bit.
⑤Space a little for the egg and cook it till the egg is half cooked.
(make sure it is half cooked only. you don't want to eat a scramble egg here. also to be creamy)
⑥put the coconut cream, mix, and put the squid
(you can stir fry the squid also but i prefer to put in this phase)
⑦let it boil till the coconut cream absorbs the color of your seafood.
⑧mix it with yellow curry powder to simmer until there is no more dropping liquid
⑨and just a touch of Chinese leak and celery and ready to serve!
(put a little bit of water if necessary)

Today's episode. Bu Pad Pong Karee -Tutorial (Crab Stir Fried with Curry Powder)
This is one of my favourite dishes!!!
Simple tutorial with Chef Pi Sar showing us how to cook Crab stir fried with chilli oil and curry powder from start to finish.
Here's the recipe:
1.5 kg of crab
100g onion chopped into large chunks
50g spring onion chopped into large chunks
50g celery chopped into large chunks
3 cloves garlic chopped into large slices
2 large sweet chilli chopped into large slices
2 tbsp curry powder
4 tbsp chilli oil
4 tbsp evaporated milk
2 tbsp light soya sauce
2 tbsp fish sauce
1.5 tbsp white sugar
2 tbsp Knorr chicken powder
1 tsp corn flour mixed with a dash of water
350ml vegetable stock, added sparingly
2 eggs
Method:
Fry the onion with a dash of vegetable oil until they turn slightly light brown and aromatic.
Cut the crab into pieces (you can boil it first if you want but we cook it from fresh in the wok with the sauce).
Mix the crab with the onions , pour in some vegetable stock, cook for a few minutes then add the soya sauce, fish sauce, sugar and Knorr chicken powder, cover and cook or a minute. Next gather the curry powder, celery, spring onion, garlic and sweet chilli all in a bowl, throw it all into the wok, cover and cook together for a few minutes. Add some more vegetable stock, also add the corn flour mixture to thicken the sauce.
Next beat the eggs with the evaporated milk and chilli oil and add to the crab mixture, cook for a further few minutes, until cooked through. Top with some spring onions, fresh coriander and chopped sweet chilli to decorate just before serving.
Cooking time depends on how strong your stove is, on our Chinese cookers it takes about 5-6 minutes.
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
