Persian Chicken with Pomegranate and Walnuts

Ingredients
Pomegranate Molasses
2 cups pomegranate juice
1/4 cup sugar
1 1/2 tablespoons lemon juice
Persian Chicken
Butter 4 tbsp
Onions 2
Pomegranate molasses ¼ cup
Walnuts 1 cup
Chicken 1 kg
Chicken stock 2 cups
Turmeric ½ tsp
Cinnamon ¼ tsp
Nutmeg ¼ tsp
Pepper ¼ tsp
Salt
Method
Pomegranate Molasses
In a saucepan, add the pomegranate juice, sugar, and lemon juice
Stir it well until the sugar dissolves
Simmer it until the syrup has reduced to ½ cup
Let it cool and store it in the refrigerator
Persian Chicken
Heat a pan and toast the walnuts
‘I am toasting the walnuts to enhance the nutty flavor’
Let it cool
Add the toasted walnuts to a mixer jar and grind it to a fine powder
Heat a pan, add butter and add onions
Saute the onions till they are rich brown in color
Add the chicken pieces, spice powders, sugar and salt and mix well
Saute the chicken for 5 mins
Add the chicken stock and mix well
Cover and cook for 10 mins on medium flame
Add the powdered walnuts, pomegranate molasses and mix well
‘Walnuts are an integral part of this recipe, so make sure that you add a generous amount to get the right flavors’
Close and cook the chicken for about 45 mins to an hour on low flame
‘Including walnuts as part of a healthy diet may help improve blood pressure’
Serve the Persian Chicken hot with steamed rice or pulao.

MANDARIN CHICKEN WITH WALNUTS
INGREDIENTS:
organic boneless chicken tenders
½ c. sliced onions
3-4 garlic cloves, diced
lemon juice, freshly squeezed (1/2 of a large lemon)
2 c. fresh Mandarin orange slices (approx)
⅓ c. walnut pieces
fresh mint sprigs
organic extra virgin olive oil
INSTRUCTIONS:
drizzle organic extra virgin olive oil in a skillet over low heat.
Add in onions and garlic and sauté until soft.
ADD IN:
chicken tenders (or chicken breasts thinly sliced)
a few dashes of Herbs de Provence
garlic salt and garlic powder
freshly squeezed lemon juice
fresh Mandarin orange slices
walnut pieces
fresh mint sprigs
Note: Serve chicken with quinoa or rice and with a large green salad!

A thick, aromatic walnut sauce adds luscious body and earthy flavour to this curry-like spiced chicken stew. One Pan Crispy Walnut Herb Chicken and Vegetables is a delicious meal all made in one pan! The chicken gets coated with a nutty walnut herb coating and is surrounded by tender veggies.
SEV AND GARLIC SANDWICH
An unusual combination this, but it does made fantastic sandwiches
Ingredients
8 white bread slices
Fine sev as required
20-25 garlic cloves
2 tbsps oil + for greasing
10 slices pickled jalapenos
3 tbsps yogurt
Salt to taste
Method
1. Heat oil in a non-stick pan, add garlic cloves and saute till golden.
2. Put them in a chopper jar. Add jalapeno slices, yogurt and salt and process.
3. Apply this mixture over 4 bread slices. Spread sev generously over them and cover with the remaining 4 bread slices and press lightly.
4. Lightly grease a sandwich toaster with a little oil. Place the sandwiches, one by one, and cook over medium heat, turning sides, till both sides are evenly golden.
5. Cut into 2 triangles and serve immediately.

¼ cup butter salted
Chicken thigh 1 kg
Season chicken thigh with salt, pepper, curry powder, lemon juice
2 red onions chopped

2 tsp curry powder
2 tsp cumin powder
