How To make Cucumber Tea Sandwiches with Mint Mayonnaise
2 lg Egg yolks
1/2 ts Dijon mustard
2 tb Fresh lemon juice
3/4 c Fresh mint leaves, loosely
-packed 1 c Vegetable oil
Salt and pepper 16 Thin slices homemade white
-bread, crusts removed 1 Cucumber, peeled and thinly
-sliced From Cooking with Herbs by Emelie Tolley and Chris Mead. MINT MAYONNAISE In a blender or food processor, combine the egg yolks, mustard, lemon juice, and mint. With motor running, add the oil in a slow stream and blend until emulsified. Season to taste with salt and pepper and transfer to a bowl. Spread each slice of bread generously on one side with the mayonnaise. On half the slices, arrange an even layer of cucumber slices. Top with remaining bread slices. Cut each sandwich into quarters before serving. Makes 32 tea sandwiches.

Classic Cucumber Sandwich with Desi Tadka. High Tea Series Pt 2
This is my version of classic High Tea Cream Cheese and Cucumber Sandwich. Green Chutney (Get the recipe in feed) gives this sandwich a blast of flavor, vibrant color and fresh mouth feel.
Just a small change in the recipe can make huge difference and don't forget to tag me if you try it.
Here goes the recipe :
Bread slices : 2 (I use Brioche)
Green Chutney : 1 Tbsp
Cream Cheese : 1 Tbsp or more if needed
Lime Juice : 1/2 tsp
Cucumber Slices : a few.
Mix everything except bread and cucumber, spread on the bread slices, lay out cucumber slices on one bread, cover with other slice and cut into small finger size sandwiches. Serve at room temp or cold.

Cream Cheese Cucumber Sandwich
Servings - 8
INGREDIENTS
Milk - 1 litre
Vinegar - 2 tablespoons
Water - 800 milliliters
Salt - 1/8 teaspoon
Lemon juice - 2 teaspoons
Milk - 100 milliliters
Cucumber - 350 grams
Mint leaves - 2 tablespoons
Coriander - 10 grams
Green chili - 2
Onions - 35 grams
Dry mango powder - 1 teaspoon
Water - 60 milliliters
Salt - 1/2 teaspoon White bread slices - 16
Mint leaves - 1 tablespoon
Pomegranate - 2 teaspoons
PREPARATION
1. Take a heavy skillet, add 1 litre water and bring it to a boil.
2. Add 2 tablespoons vinegar and stir continuously until the milk starts to curdle.
3. Remove it from heat and strain it.
4. Add 800 milliliters water and wash it well.
5. Now squeeze it tightly so whole the water comes out. Rest for 20 - 30 minutes.
6. In a blender, add prepared paneer, 1/8 teaspoon salt, 2 teaspoons lemon juice, 100 milliliters water and blend it well.
7. On a board, place 350 grams cucumber and peal it. (See video)
8. In a blender, add 2 tablespoons mint leaves, 10 grams coriander, 2 green chili, 35 grams onions, 1 teaspoons dry mango powder, 60 milliliters water and blend it well.
9. Transfer, this into a bowl, add 2 tablespoons prepared cheesy cream, 1/2 teaspoon salt and whisk it well.
10. On a board place white bread slice, add some prepared cheese cream and spread it evenly.
11. Add some prepared chutney and spread it evenly.
12. Place cucumber on it cover it with another bread slice.
13. Add some prepared cheese cream and spread it evenly.
14. Place prepared cucumber ribbon on it and cut the edges.
15. Now, cut it into pieces.
16. Garnish with mint leaves and pomegranate.
17. Serve.
