Ingredients:
1¼ cups (160g) Oat flour
3/4 cup (70g) Quick/Rolled oats
1 teaspoon Baking powder
1/4 teaspoon Salt
1/3 cup (72g) Coconut oil, melted
1 teaspoon Vanilla extract
1/3 cup (67g) Sugar
3 tablespoon Milk of choice
1/4 cup Walnuts, chopped *optional
Directions:
1. Line a baking sheet with parchment paper and set aside. Preheat oven to 180°C (350°F).
2. In a large bowl mix oat flour, rolled oats, baking powder, salt and sugar.
3. Add coconut oil, vanilla extract, milk and mix until combined.
4. Add chopped nuts and mix until combined (this step is optional)
5. Shape the dough into 14-16 small balls and arrange them on prepared sheet. Flatten the cookies.
6. Bake for 13-15 minutes.
7. Allow to cool on the tray for 5-10 minutes, then transfer to a wire rack and allow to cool completely.

Spiced Pumpkin-Raisin Cookies

Ingredients
1 cup all-purpose flour
2/3 cup old-fashioned oats
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/4 teaspoon ground allspice
3/4 cup raw sugar, plus additional for sprinkling
1/2 cup canned pumpkin puree
1/3 cup vegetable oil
1 tablespoon pure maple syrup
1 teaspoon vanilla extract
1/2 cup raisins
Directions
Position a rack in the center of the oven and preheat to 350 degrees F. Line 2 heavy large baking sheets with parchment paper.
In a medium bowl, combine the flour, oats, cinnamon, baking soda, salt and allspice. Stir to blend well. In a large bowl, combine the sugar, pumpkin puree, oil, syrup and vanilla; whisk to blend. Using a flexible rubber spatula, gradually stir the dry ingredients into the pumpkin mixture. Stir in the raisins.
For each cookie, drop 1 generous tablespoon of batter onto the prepared baking sheet, spacing the mounds about 1 inch apart (or use a mini ice cream scoop). Using moistened fingertips, flatten each to a 2-inch-diameter round. Sprinkle each cookie with a bit more raw sugar.
Bake the cookies until brown and a bit firm to the touch, 17 to 20 minutes. Using a metal spatula, transfer the cookies to a rack and cool completely.

Hey there and thanks for stopping by!! Thanks for joining us for OATMEAL RAISIN COOKIES the best!! In this video we reference Chef Leslie's perfect cookie recipe to show you how to make the best cookies, without any trouble. You can mix this recipe together and have warm, soft chewy cookies in a matter of minutes!! There is nothing better than a warm cookie.

Simple Recipe;
Butter 8 oz
Brown Sugar 1 Cup
Sugar 1/2 Cup
Eggs 3 ea
Vanilla Extract 1 teaspoon
Flour-AP 1 1/2 Cup
Baking Soda 1 teaspoon
Cinnamon 1 teaspoon
Salt 1/2 teaspoon
Old Fashion Oatmeal-Uncooked 3 Cups
Raisins 1 1/2 Cups
Procedure;
Mix flour, baking soda, cinnamon, and salt, set aside.
In a seperate bowl, soften butter to room temp, then cream with sugar until fluffy.
Beat eggs in one at a time, and then slowly add in the flour mixture.
Once flour is in, add Oats and Raisins.
Place in spoonful sized balls onto cookie sheet and bake at 350° for 10 minutes or until starting to brown.

How to Make Healthy Cookies at Home - Special Recipe for Easy Raisin Bran Cookies - Baking w Shannon
INGREDIENTS:
2 cups raisin bran cereal (crushed to make 1 1/2 c)
1 cup of whole wheat flour *
1 cup of all purpose flour
1 tsp baking soda
3/4 cup margarine, softened
1/2 cup brown sugar, packed
2/3 cup granulated white sugar
2 eggs
1/2 tsp cinnamon (optional - but good!)
* I didn't have whole wheat flour so I used 2 cups of all purpose - they still taste delicious! If you use whole wheat, please let me know how they turn out and what you think the differences might be. :)
Optional: 1/4 tsp salt
1/4 tsp allspice
And some chopped and browned walnuts. They like a spicier
cookie and nuts seem to add something.
RECIPE STEPS:
1. Crush cereal. Stir together with flour(s) and baking soda.
2. In a large bowl, beat margarine and sugars until fluffy. Add eggs; beat well.
3. Add cereal/flour mixture and mix thoroughly.
4. Drop by spoonfuls onto a greased cookie sheet.
5. Bake at 325F for 12-14 minutes (just keep an eye on them; you want them to slightly brown on top).
6. ENJOY!!! :)

Ingredients
* 2 1/2 cups (231 g) rolled oats (or quick oats)
* 1/2 cup + 2 tbsp (100 g) water
* 2 1/2 tbsp (52 g) maple syrup
* 2 1/2 tablespoons (33 g) extra virgin olive oil
* 2 teaspoons vanilla
* 1/4 teaspoon salt
Instructions
* Preheat the oven to 350°F (180°C).
* Place the rolled oat in a blender or food processor and blend until you get a coarse! flour.
* Mix the oatmeal, vanilla, and salt in a bowl, and add the extra virgin olive oil.
* Bring the water with maple syrup to the boil and pour it into the bowl. Mix with a spoon and let it cool slightly.
* Then use your hands to form a dough. Feel free to add a bit more water if the dough feels too crumbly. Just add it a tablespoon at the time.
* Roll out the dough until very thin (3mm) and cut in circles with a round cookie cutter. If the dough is a bit sticky, I normally roll it out on a baking sheet, to avoid using additional flour.If the dough is too crumbly, don't add too much water. Simply roll out a quarter of the dough at a time.
* Place the circles on a flat tray covered with a baking sheet, no extra grease required.
* Bake until golden brown, for 15-20 minutes. If your oven doesn't cook evenly, make sure to turn the trays half-way through baking. Keep a close eye on the oatcakes in the last 5-8 minutes, to avoid overcooking them.
* When the oatcakes are ready, remove from the oven and allow to cool on a wire rack.
* Keep in the jar.
