How To make Crockpot Chicken/Sausage Cassoulet
Ingredients

lima beans, package, frozen

cup
tomato juice

carrot, chopped, 1/2 inch pieces

celery stalk, chopped, 1/2 inch pieces

onion, chopped

each
garlic clove, minced

each
bay leaf

teaspoon
chicken bouillon granules
1/2
teaspoon
basil, dried, crushed
1/2
teaspoon
oregano, dried, crushed

each
chicken breasts, boneless
3
each
chicken drumsticks
8
oz
smoked kielbasa
Directions:
Place carrots, limas, celery and onions on bottom of crockpot which has been sprayed with nostick spray. Combine herbs, juice and bouillon and add to vegetables. Place chicken on top of vegetables. Cut sausage into pieces. Put chicken and sausage on top of vegetables. Cover crockpot and cook on Low heat for 10 hours or on high for 5 hours. Remove bay leaf before serving.

Chef Terry's Slow Cooker Cassoulet, AKA beans
This video, Chef Terry adapts a classic French dish, cassoulet. He makes several substitutions based upon need (the supermarket didn't have the product.) and cooking method to suit a preferred tool.
Ingredients
1 lb White Beans (any white beans will do I used Great Northern)
6 Chicken Drumsticks (Thighs or Breasts can be used also)
1 lb Spicy Sausage (Andouille, Kielbasa etc.)
4 oz Salt Pork (sub Bacon)
2 Bay Leaves
5 sprigs Thyme
5 cloves Garlic (chopped)
1 Ancho Chili (optional)
1/2 medium Onion, diced
1/4 cup sliced Carrot
2 Quarts Chicken Stock (I only used 1, had the second if it dried out and needed more moisture)
5 good sized Rainbow Chard leaves. (Any greens will do)
When to add the greens depends on the greens themselves. Spinach is very tender and only need a couple minutes to cook. Collard greens could take and hour. The chard I used only took about 10 minutes.
Remember to fish out the thyme stems and bay leaves before you serve this.

French Style Slow Cooker, Cassoulet!! Noreen's Kitchen
This time of year seems to be busier than most. With the kids back in school and county fairs and fall festivals and the upcoming holiday season, there can sometimes be little time to worry about what to make for supper. Tonight I am sharing my recipe for Crock pot Cassoulet. This dish is a traditional French dish, that is normally cooked in a covered clay vessel which the dish is actually named for. You can usually find recipes involving mutton, lamb, veal, pork or chicken cooked in this way. In any case this is a dish that always has meat and always has white beans, in France they traditionally use Haricot beans, but for mine, I usually use white navy beans. Along with being tasty, this dish is economical. You can throw this one together for under 10.00 and it will feed 6 to 8 people generously or my family of 4 twice.
Give this one a try, I know you will enjoy it. AND with fall in the air and time at a premium, you will also love coming home to a great warming, filling meal.
Serve this with a pan sauteed green and a loaf of crusty bread and you will be full and satisfied without going broke!
