How To make Crisp Corn Bread Waffles
8 To 10 strips of bacon
-Bacon fat, + vegetable oil -To make 1/2 cup 2 c Yellow cornmeal
1 c Flour
1 t Baking powder
1/2 ts Baking soda
1/2 ts Salt
2 tb Sugar
1 1/2 c Skim milk
2 Eggs
Fry bacon crisp. Drain, reserve drippings and add oil to make 1/2 cup. Crumble bacon and reserve (you should have 1/2 cup crumbled bacon). Combine cornmeal, flour, baking powder, soda, salt, and sugar in medium-sized bowl. In a separate bowl, combine , milk and vinegar. Let stand 10 minutes. Beat eggs in large mixer bowl. Add bacon fat and milk mixture to eggs. Add cornmeal mixture and reserved bacon. Mix thoroughly. Bake in waffle iron according to manufacturer's directions, until brown and crisp. Serve hot. Waffles may be frozen for later use. To serve, thaw in microwave on defrost cycle or in toaster oven.

Bacon & Cheddar Cornmeal Waffles
INGREDIENTS
1 ½ Cups (12oz/340g) plain flour (all purpose flour)
1 ½ Cups (12oz/340g) fine Cornmeal (use all white four in no cornmeal)
2 tablespoons sugar
1 tsp Baking powder
1/2 tsp baking soda
1 tsp Salt
2 1/2 Cups(20floz/600g) Milk
2 Egg
5 tablespoons (2 ½ oz/75g) Butter,melted
1/2 Cup (4oz/115g) Sweetcorn
1 Cup (8oz/225g) Bacon, chopped
3/4 Cup (6oz/180g) Cheddar cheese
1 Cup (8oz/225g) Chopped scallions
METHOD
1. Mix together the wet ingredients in a large bowl.
2. MIx together the dry in a separate bowl
3. Add dry to wet and mix gently along with the bacon, onions, cheese and sweet corn.
4. Mix the batter together until just combined, then incorporate the room temperature melted butter taking care not to overmix the batter from this point.
5. Cook in a waffle iron for roughly 3 minutes. Like I said if you don’t have a waffle machine fry them off just like pancakes and they will still be great
6. Serve with bacon, scallions and even scramble eggs on top if you wish.
7. If you have leftover pancakes wrap them up in foil and reheat them in the oven the next day and they will be lovely.

Halal Corn Dogs

Who can relate to smelling delicious corn dogs at Six Flags or any carnival and not being able to eat them because they either weren’t halal or when you asked if they had pork, the employees looked suspicious ????. Well now ima help you and your kids out! Let’s grab some @alsafafoods halal beef hotdogs and make them at home!
Ingredients:
⁃ 1 package @alsafafoods halal beef hotdogs
⁃ 1 cup cornmeal
⁃ 1 cup flour
⁃ 1 1/4 c buttermilk
⁃ 2 tbs butter melted
⁃ 1/3 c milk
⁃ 1 large egg
⁃ 2 tbs sugar
⁃ 1/2 tsp salt
⁃ 2 tbs baking powder
⁃ 8 craft or kabob sticks
⁃ Frying oil atleast a quart
⁃ Large pot wide enough for the hotdogs to be length wise
Directions:
This part is easy! Preheat your oil on medium heat, while prepping the batter. Mix all the ingredients listed above excluding the hotdogs, oil, sticks and pot!
Pour the thick batter into a mason jar or large cup deeper than the hotdogs.
Stick a craft stick atleast half way through each hotdog. Check your oil if it’s ready by dropping in a spoon of batter, it should bubble up as soon as it hits the oil. Otherwise the oil isn’t ready. Once the oil is ready hold the stick to dip the hotdogs into the batter. One at a time, let them fry until golden all around. And thank me later! I’d love to see your remakes!
