Cheese Corn Rawa Waffles | Sanjeev Kapoor Khazana
These waffles are made with a combination of gram flour, semolina and corn kernels, topped with grated cheese.
CHEESE CORN RAWA WAFFLES
Ingredients
½ cup grated Milky Mist mozzarella cheese
½ cup American corn kernels, boiled and crushed coarsely
1 cup coarse semolina (rawa)
¼ cup gram flour
6 tablespoons yogurt
Salt to taste
½ teaspoon cumin seeds
A pinch of asafoetida
2 green chillies, chopped
4-5 fresh coriander sprigs
¼ teaspoon soda bi-carbonate
Oil for basting
Method
1. Combine semolina, gram flour, yogurt, corn kernels, asafoetida, green chillies, soda bi-carbonate, cumin seeds, salt and sufficient water in a bowl to make a smooth batter.
2. Finely chop coriander and add to the batter and mix well.
3. Heat a waffle iron and brush with a little oil. Pour a little batter into the waffle iron and close the lid and let it cook for a minute. Open and sprinkle cheese on top and let it cook for half a minute. Similarly make more waffles.
4. Serve hot.

Jalapeno Cheddar Cornbread Waffles -- Fast, Easy, Awesome!
Jalapeno Cheddar Cornbread Waffles! Just saying it brings out our inner-Texan.
All the deliciousness of the cornbread, with the light airiness of waffles. The addition of sharp cheddar, fresh corn and chili peppers gives this savory pastry just the right amount of kick. Satisfy your ANYTIME cornbread craving with this fantastic twist.
We used these (instead of rice) as the starch for our Spicy Cajun Red Beans, Pork & Sausage. Check our channel for that companion video!
Equipment Needed:
-- Kitchen Mixer (or large bowl, wisk & spoon)
-- Large Bowl for (mixing wet ingredients)
-- Bowls & Cups for Portioning Ingredients
-- Rubber/Silicon Spatula
-- Ladle
-- Waffle Iron
Ingredients:
-- 1.5 Cups Corn Meal
-- 3/4 Cup All-Purpose Flour
-- 1.5 tsp Baking Powder
-- 1/2 tsp Baking Soda
-- 1.4 tsp each, Paprika
-- 1/4 tsp Chili Powder
-- 1 tsp Fine Salt
-- 1.5 tsp Sugar (can double for sweeter cornbread)
-- 1.5 - 2 Cups Buttermilk
-- 2 Large Eggs, lightly beaten
-- 3 Tbs melted Butter
-- 1 ear corn, roasted, kernels removed
-- 1 Cup, Sharp Cheddar, finely grated
-- 1 4oz can Diced Green Chilies
-- 1 each, Jalapeno & Serrano, diced
-- Black Pepper, to taste
Instructions:
1) Add dry ingredients (corn meal, flour, baking powder, baking soda, paprika, chili powder, salt and sugar) to mixer bowl. Mix briefly to combine.
2) In a separate bowl, combine 1.5 Cups buttermilk (reserve remainder to moisten batter, if needed), eggs and melted butter. Wisk. With mixer on low speed, slowly add to dry ingredients. Mix until smooth (you can turn the mixer up a little bit if need be), 1 – 2 minutes.
3) Add corn, green chilies, jalapeno, serrano and ¾ Cup of cheese, reserving remainder of cheese for garnish. Mix on low until incorporated. 1 minute.
4) Preheat waffle iron. When waffle iron is hot, lightly grease both sides. Add waffle batter, close iron, heat 3 – 4 minutes until crispy on the outside, soft in the middle.
5) ENJOY as is, or topped with a variety of toppings, such as the Red Beans, Pork and Sausage from our companion video. Chili & Cheese is another great idea. Chicken & Waffles is an entirely new idea with these waffles as well. Really, go nuts! How can you go wrong with Jalapeno-Cheddar Cornbread Waffles?
