Sweetbreads in Cream Sauce
Veal sweetbreads cooked with cream and scallions. First seal the sweetbread a little to give it complexity, remove then drop the other ingredients then put the sweetbreads back in. This is a french style dish, in future videos I will show you one of which I believe is the best way to enjoy this offal which is grilled with salt and lemon. The sauce will start reducing after being cooked for a while; you will see when it starts thickening that's when you decide when to take it out however that's the sign of being ready. Enjoy this plate, even though it is very rich and heavy, eat it as an appetizer for full pleasure.
