How To make Crab and Portabella Melt
8 Portabella Caps
up To 10
1 Green pepper :
diced
1 pound Mayonnaise
2 ounces Dijon mustard
6 drops Worcestershire -- up to 8
15 slices Cheddar cheese
2 cups Crab meat-jumbo or blackfin
1/2 Red pepper diced
1/2 Lemon :
juice of
1/4 teaspoon old bay seasoning up to 1/2
2 Tomatoes :
sliced thin
Directions: Grill mushroom caps over open flame, turning often until tender. Pl ace caps on oiled sheet pan, set aside. In bowl, combine mayonnaise, peppers, l emon juice, mustard, Worcestershire, and old bay seasoning, mixing well. Drain crab meat well and add to the above, toss lightly and incorporate. Top mushroom s with tomato slice and about 4-5 ounces of crab mix. Place in oven at 450 degr ees until warmed completely through. Remove, top with cheese and return to oven until cheese melts.

24 Small Mushrooms or 10 Portobello Mushrooms
5 Tbsp Butter
1 Tbsp Olive Oil
2-4 Tbsp Green Onions
1/2 Cup Bread Crumbs
1-2 Eggs
1 Tbsp Lemon Juice
3/4 Cup Shredded Cheese
1/2 Cup Champagne or White Wine
To taste: Dill Seasoning, Salt, Pepper, and Old Bay

Hi all! Sorry for sounding a bit raspy… I’m just coming off a pretty bad head cold. Anyway, here’s my low carb crab stuffed mushroom recipe with a lemon butter garlic sauce. This is a great tasting low carb appetizer or eat it as a meal all on its own. Each serving of four mushrooms is only 3.77g net carbs. Enjoy!

Stuffed mushrooms:
Mushroom plates
24 baby bella/cremini mushrooms, about 16 ounces
8 ounces crab meat
2 ounces – cream cheese, softened
3 Tbs – sour cream
1/4 cup – grated parmesan cheese
1 tsp – minced garlic
1 Tbs – fresh chives, chopped
1/2 tsp – salt
1/2 tsp – ground black pepper
1/4 tsp – Old Bay seasoning
1/8 tsp – cayenne pepper
Toppinig:
1/2 cup – ground pork rinds
Sauce:
8 Tbs – unsalted butter (1 stick)
1 Tbs – fresh chives, chopped
1/2 Tbs – minced garlic
Juice of one lemon (about a 1/4 cup)
Serving size = 4 mushrooms (recipe divided by 6)

Easy Stuffed Mushrooms
Heyyy ya'll! I'm back with another 20 minute cooking tutorial. This time with a lil something different. I love carbs and dairy...but I try to be conscious of my intake from time to time. These stuffed Portobello Mushrooms are so good-and they're carb/guilt free =) Make them vegan without the addition of cheese or keep it-if you'd like. Hope you enjoy.

DAY 44 – Crab Stuffed Portobello Mushrooms
Serves 3-4
Ingredients:
4oz (100 g) Fresh Cooked Lump Crab Meat
3-4 Medium Portobello Mushrooms
2 tsp (8 g) Minced Garlic [divided into 1 tsp (4 g) & 1 tsp (4 g)]
¼ tsp (1 g) Hot Pepper Flakes
2 Tbsp (30 g) Balsamic Vinegar
2 Tbsp (30 g) Extra Virgin Olive Oil [divided into 1 Tbsp (15 g) & 1 Tbsp (15 g)]
1 ½ Tbsp (5 g) Fresh Chopped Parsley
1oz (30 g) Thinly Sliced Smoked Mozzarella
½ tsp (0.5 g) Chopped Fresh Rosemary
¼ tsp (0.75 g) Freshly Grated Lemon Zest
Salt and pepper (to taste)
Process:
1) On medium high heat preheat a grill pan. Also preheat your broiler to high.
2) To a medium bowl add 1 tsp (4 g) of minced garlic, rosemary, 1 Tbsp (15 g) of olive oil, balsamic vinegar, season everything with salt and pepper, and mix together. Toss the mushrooms gently with the balsamic mixture and set aside for 5 minutes.
3) Place the mushrooms on the hot grill pan for 2 to 3 minutes per side. Meanwhile in a small nonstick skillet on medium heat, heat the remaining 1 Tbsp (15 g) of olive oil and add garlic and hot pepper flakes. Let it cook for 30 seconds. Add the crab, season lightly with salt and pepper, toss everything gently, and transfer to a small bowl. Add the chopped parsley and lemon zest to crab mixture and mix to combine.
4) To assemble, place the mushrooms on a foil lined baking sheet and scoop a spoonful of the crab mixture into each mushroom. Top each mushroom with 2 thin slices of the smoked mozzarella.
5) Place the mushrooms under the preheated broiler until the cheese melts. Keep an eye on them because the cheese can burn within seconds. Do not walk away from your oven!
6) Once the cheese has melted top each one with a sprig of parsley and serve immediately!

I'm a fan, yet they aren't as good as this recipe for sure.
This special recipe comes from a family restaurant out on the East coast. #sogood #crab
