HOLLAND AMERICA LINE CRAB CAKES RECIPE FROM CHEF RUDI SODAMIN (Serves 4)
Ingredients:
• 2 large eggs, beaten
• 2 tablespoons mayonnaise
• 2 teaspoons Dijon mustard
• 1 teaspoon Worcestershire sauce
• 1 teaspoon Old Bay seasoning
• 1/4 teaspoon Kosher salt
• 1/4 cup finely diced celery, from one stalk
• 2 tablespoons finely chopped fresh parsley
• 1 tablespoon cilantro
• 1 tablespoon finely chopped bell pepper
• 1 teaspoon finely chopped hot chili pepper (optional)
• 1-pound lump crab meat* (see note below)
• 1/2 cup panko bread crumbs (panko bread crumbs add an airy crispiness, but regular bread crumbs will also work)
• Canola oil, for cooking
Instructions:
1. In a medium bowl, whisk together mayonnaise, beaten egg, Dijon mustard, Worcestershire, and Old Bay seasoning. Season with a dash of salt and pepper. Add finely chopped celery, parsley, cilantro, bell pepper, and chili pepper.
2. In a separate medium bowl, stir together crab meat, panko crumbs, and parsley. Fold in mayo mixture, then form into 4-6 patties.
3. In a large skillet over medium-high heat, coat sauté pan with oil and heat until shimmering. Add crab cakes and cook in batches, until golden and crispy, 3 to 5 minutes per side.
4. Serve with arugula leaves, sauce, or lemon wedges.
* What is the best crab meat to use in this recipe? Jumbo crab meat if available. This meat comes from two large muscles in the crab and is known for its bright white color and superior taste. It's also made up of bigger chunks, instead of shredded smaller bits. If you can't find jumbo use lump crab meat. It's usually a blend of broken jumbo pieces. Whichever crab meat you choose, don't forget to sort through the crab meat to ensure there aren’t any pieces of shell. You can also use less expensive canned crab meat – canned jumbo or lump crab meat.
Tip: Shaped patties hold up well in fridge for 1 to 2 days when covered well, then cook right before serving.

Top-Notch Crab Cake by Sarah Titus from Salisbury, Md.
Ingredients:
2 pounds jumbo lump blue crab meat
2 cup finely ground saltine crackers
2 egg yolks
1 tablespoon Dijon mustard
2 tablespoons salad dressing
1 stick unsalted butter (melted)
3 teaspoons hot sauce
4 scallions (minced)
5 tablespoons chopped cilantro
2-3 tablespoons dry sherry (more if desired)
2-3 teaspoon Old Bay Seasoning
Lemon wedges for garnish
Using a rubber spatula, in a large bowl, gently combine crab meat, ½ cup crushed saltine crackers, egg yolks, mustard, salad dressing, 3 tablespoons melted butter, hot sauce, scallions, cilantro, dry sherry and Old Bay seasoning. Gently divide mixture into 10 equal portions and shape into tight, mounded cakes. Press each crab cake in cracker crumbs and transfer, crumb side down, cover and refrigerate for an hour. Grease a baking sheet with butter and transfer crab cakes to prepared baking sheet, crumb side down. Press thumb on top of each crab cake to make a slight indentation and drizzle with melted butter. Sprinkle a small amount of Old Bay seasoning on top of each crab cake and broil on medium until crab cakes are golden brown. About 12-15 minutes. Garnish with lemon wedges.

Homemade Crab Cakes
Welcome and come watch me whip up my very first batch of homemade crab cakes. I hope you enjoy!
Recipe:
1lb fresh lump crab meat
2/3 cup of Saltine crackers (crumbled) to use as filler
1 large egg
1teaspoon of mustard
1teaspoon of OldBay Seasoning or more (if you desire a spicier taste)
1 teaspoon of fresh squeezed lemon juice
1 lemon chopped into slices
1/2 teaspoon of paprika
1/8 teaspoon of salt
1/8 teaspoon of pepper
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 teaspoon of minced garlic
1/3 chopped green, red, yellow bell peppers
1 tablespoon fresh cilantro
1 tablespoon of fresh chopped parsley
2 teaspoons of worcestershire sauce
1/4 cup of mayonnaise
(optional) 2 tablespoons of melted butter
1.Whisk all ingredients , EXCEPT the crab meat, melted butter, sliced lemon, and cilantro in a big bowl.
2 Once all above ingredients are mixed together, gently place the crab meat on top followed by the cracker crumb. Proceed with GENTLY folding the meat, and crumbs within the mixture. DO NOT vigorously stir. The goal is to keep the patties tight. Continue to fold & pat/press until all ingredients are meshed well together.
3. Preheat oven to 450F. Line a pan with foil and base the foil with a light coat of olive oil/non stick spray. A baking sheet is an option too,
4. Gently shape/mold your patties into your desired thickness. Proceed with placing them evenly apart in 6 mounds. (Optional for extra flavor..brush each mound with melted butter).
5. Bake for 12/14 minutes or until lightly browned around the edges. Drizzle each with fresh lemon juice. Garnish with cilantro, paprika, and lemon slices.
If you made your cakes/thicker...they may need additional time to bake.
