You won’t fry the #zucchini anymore! Make this #recipe and everyone will be amazed.
Ingredients
1 cup Couscous
1 1/2 cup hot water
2 large #zucchini sliced
2 #carrots sliced
2 big #potatoes sliced
1 can chickpeas
1 large onion
7-8 cloves of garlic
2 pieces of ginger
1 tablespoon olive oil
2 tablespoons papita seeds
2 tablespoons sunflower seeds
1 teaspoon corriander powder
1 teaspoon cumin powder
1 teaspoon salt
3 tablespoons tomato paste
Juice of 1 lemon
Method
Take a pot with lid, add couscous and hot water, cover and set aside. Optional you can add 1-2 tablespoons of fresh olive oil.
Microwave potatoes for 4 minutes
In a skillet or pan add oil and stir fry potatoes till golden and crunchy.
Fry chopped onion garlic and ginger add seeds and keep frying for few minutes.
Now add and fry coriander, cumin powder and salt.
Add tomato paste and stir.
Add chickpeas and give good 5 minutes of stirring and frying.
Empty the pan and before serving add carrots and zucchini, cover with lid for 5 minutes till bit soft.
All ready- serve your lunch with couscous boiled vegetables and chickpeas and lemon juice/chutney.

Mediterranean couscous salad recipe with air fryer roasted zucchini, Olives, fresh cucumber and Feta cheese. Make this 20 minute salad on a warm spring (summer day) and you will be amazed. Vegetable couscous | make tasty and healthy couscous this way

⭐️ Couscous with vegetables is kind of a couscous salad, but the vegetables are cooked in a pan for about 15 minutes before mixing them with the couscous. Cooking the vegetables beforehand makes this meal super tasty.
This way of eating couscous is popular in the Mediterranean regions, and especially in Italy, where this recipe is called couscous di verdure.

1 cup couscous
1 cup water or vegetable stock
1 teaspoon salt
For the Veggies
1 tablespoon olive oil extra virgin
1 medium onion finely chopped
1 clove garlic, crushed
1 teaspoon cumin seeds or turmeric
½ medium eggplant cut in small dice
1 big carrot cut in small pieces
½ bell pepper cut in small pieces
1 zucchini cut in small dice
2 ripe tomatoes chopped
¾ cup peas frozen
1 teaspoon oregano
1 teaspoon salt or more to taste
⅓ teaspoon black pepper or chili flakes
1 handful parsley or basil, or both
¾ cup water
