How To make Country Fried Pork and Peppers
4 Chef's Prime Filet (3/4-inch-thick
boneless pork rib end steak) 2 tablespoons yellow cornmeal
1 tablespoon whole wheat flour
OR 1 tablespoon all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1/4 teaspoon pepper
1/4 teaspoon ground cumin
1 tablespoon olive oil
1 medium green pepper
cut in strips
1 medium sweet red pepper :
cut in strips
Pound pork to 1/4-inch thickness. Stir together the cornmeal, flour, paprika, garlic salt, onion powder, pepper and cumin. Dip pork in water; allow excess water to drip off. Coat with cornmeal mixture on both sides. In large skillet heat olive oil. Cook pork over medium heat for 4 minutes. Turn over and add pepper strips to skillet. Cook 4 more minutes or until pork is nicely browned and just slightly pink in the center. Remove pork from skillet. Cook peppers 1-2 minutes more if necessary until tender. Serve pork with peppers.

Fried Tenderized Pork (Recipe in our Vol. 1 Cookbook)
1/4 THICK TENDERIZED PORK CHOPS (THIN PIECES MECHANICALLY TENDERIZED)
1 1/2 CUPS SELF-RISING FLOUR
2 EGGS (ROOM TEMP.)
WEBER STEAK-N-CHOP
BLACK PEPPER
SALT
CORN OIL OR VEGETABLE OIL FOR FRYING
Place flour in a shallow dish or pie plate. Preheat a large
skillet. Place eggs in a shallow dish or pie plate and whisk
well. Sprinkle one side of chops well with steak-n-chop,
pepper, & salt. Now place each chop in egg and then into
flour. Press flour into chops on both sides making a good
crust. Let pork sit 10 minutes before frying. This will help
the crust stay on better. Add oil 1/2 deep to hot skillet. Oil
must be hot before adding pork. Fry first side 3 minutes on
medium/high. Flip them and fry 2 minutes on last side.
You may have to turn heat down slightly to prevent chops
from getting too brown.
Use drippings and make ourwhite gravy recipe on page 34.
Serve gravy over chops.
Tip: Pork chops should reach a minimum of 150-
degrees internal temperature.

Ingredients
2 - 4 Pork Chops
1/2 cup Flour
3 slices of Bacon
1 tbsp Black Pepper
2 cups Chicken Broth
1 large White Onion (optional) roughly chopped
2 tbsp J.O. #2 Seasoning (your favorite season all)
1 tbsp Garlic Powder
Cook Chops to an internal temp of 145* F
