INGREDIENTS
For 1 batch, to cover an 8 cake
Marzipan:
1 Egg
90g Caster Sugar
90g Icing Sugar
175g Ground Almonds
Royal Icing:
400g Icing Sugar
15g Egg White Powder (or 2 medium egg whites)
4-5 tbsp Water (If you are using fresh egg whites you may not need as much water)
For a double batch, to cover an 10 cake or 2 smaller cakes
Marzipan:
2 Egg
180g Caster Sugar
180g Icing Sugar
350g Ground Almonds
Royal Icing:
800g Icing Sugar
30g Egg White Powder (or 4 medium egg whites)
8-10 tbsp Water (If you are using fresh egg whites you may not need as much water)

SOAKING FRUITS
in a large bowl add
100 g raisins
100g prunes
100 g blue berries
100 g crane berry
100 g black raisins
100 g apricot
50 g dried pineapple
50 g dates
1 tbsp orange zest
1/2 tsp lemon zest
1 tsp ginger powder
1 tbsp all spice powder (mix of nutmeg cloves and cinnamon)
1 cup orange juice
180 ml rum
mix it well,Cover with a cling film and close tight.
Let it soak overnight for alcohol,you can even soak for one week,I soak these mix fruits 2 days ago
After 2 days
Strain liquid completely
1 cup almonds cut into slices.
Add slice almonds into it.
Mix it well and set it aside.
To make the cake
In a large bowl or plate add 2 and a 1/2 cup all purpose flour
1 tsp baking powder ,Give it a good mix.
Add dry fruits into it ,give everything a good stir.This process helps to prevent the fruit from sinking to the bottom of the cake.Mix the flour and fruit thoroughly and stir through to break up any longer clumps of fruit.Mix until well combined and set it aside
Making the caramel
In a large vessel add
1 cup sugar
Turn the heat on and let this sugar melt down slowly you don’t want the heat very high cook on low heat.No need to stir just swirl the pan around.Once it’s started bubbling add 1/2 cup water.Boil for 10 seconds turn off the heat.Let it cool down completely .
For the batter
in a bowl add
200 g soft unsalted butter at room temperature
Beat until light and pale in colour .Into it add 200 g brown sugar
Mix until everything is nice combined,all of the sugar has dissolved and you are left with a nice light and fluffy mix,Now add 4 eggs at room temperature.Add eggs one at a time whisking in between each addition.Add 1 tsp vanilla essence.A pinch of salt.Mix it well
Into the fruit and flour mix add butter mixture
Into it add 120 ML of caramel that we have made earlier, Gently folds all the ingredients together.
Greased cake tin with melted butter,Brush butter paper with butter and place that into the cake tin
Poor mixture into the prepared cake pan.Garnish with some dry fruits
Into the preheated oven bake it on 160° for 90 minutes or until skewers comes out clean
Allow it to cool down slightly
Brush cake with rum
You can store this cake in a cool dark place for months

Super moist Fruit Cake Recipe for Christmas /Simple and Easy Boiled Fruit Cake Recipe
Super moist fruit cake Complete Written Recipe:
This fruit cake is a simpler and easier version of making a traditional fruit cake or old-fashioned fruit cake.
In this Easy fruit cake recipe we don't need any soaking of dry fruits; but still the raisins,candied peels,cranberries and other dried fruits will be juicy and plumpy as they are boiled in liquid and then added into the cake batter.
This video will show you one of the least messy ways that we can make a fruit cake.We don't need any stand mixer/hand mixer to make this cake.A sauce pan and a wooden spoon are the only major tools to make this fruit cake.
In two steps we can make this super moist fruit cake batter.
Step1:
Boil the dry fruits in a sauce pan with butter sugar and water.
Step2:
Add all the rest of ingredients into this saucepan after its cooled.
Step3:
Bake the fruit cake @ 320 F for 75-90 minutes.
The cake is so soft and moist and the aroma of spices makes this fruit cake, more flavorful.
This fruit cake recipe is one of my favorite recipes to make moist fruit cake.

Christmas Cake Recipe - Xmas Cake Recipe - Easy Fruit Cake Recipe. Written instructions below. Don't forget to LIKE, SUBSCRIBE & HIT THE NOTIFICATION BELL :)
**VERY IMPORTANT**DO THIS BIT THE DAY BEFORE YOU COOK THE CAKE**
Ingredients for preparing the dried fruit:
450g / 16oz currants
175g / 6oz sultanas
175g / 6oz raisins
50g / 2oz chopped glacé cherries
50g / 2oz mixed chopped candied peel
zest of 1 orange & 1 lemon
100ml brandy (You can also use whiskey, bourbon, port, sloe gin etc. Go wild!)
Put everything in a bowl and mix well. Cover with a cloth and leave to soak overnight.
**DONE THAT? NOW ONTO MAKING THE CAKE :)**
Ingredients for the cake:
225g / 8oz plain flour
½ teaspoon salt
¼ teaspoon nutmeg - freshly grated
½ teaspoon ground mixed spice
225g / 8oz dark brown soft sugar
4 large eggs - beaten
1 dessertspoon black treacle (use blackstrap or dark molasses if black treacle not available)
225g / 8oz soft butter
50g / 2oz chopped nuts
*TIP* You can buy Mixed Spice ready made, but here's the recipe I use to make it yourself if you can't find it: 3 teaspoons ground cinnamon. 1 teaspoon ground nutmeg. 1 teaspoon ground allspice. 1 teaspoon ground coriander. 1 teaspoon ground ginger. ¼ teaspoon ground cloves.
Step #1 - Grease a 8/20cm cake tin & line with greaseproof paper.
Step #2 - Preheat regular oven to 140°C / 275°F gas mark 1 (adjust for fan oven)
Step #3 - Sift the flour, salt and spices into a large mixing bowl.
Step #4 - In a separate bowl, whisk together the sugar & butter until soft & fluffy. You can use a mixer or electric hand whisk.
Step #5 - With your mixer or electric hand whisk still running, add 1 tablespoon of the beaten eggs & 1 teaspoon of the flour mix. Allow to mix well. Repeat until all the egg mixture is gone.
Step #6 - Gently fold the rest of your flour mix into your butter & egg mixture.
Step #7 - Gently fold in the pre-soaked fruit mixture, black treacle & chopped nuts. TOP TIP: Place a dessert spoon in a cup of hot water before using with treacle.
Step #8 - Transfer the cake mixture into the prepared tin. Spread it out evenly with the back of a wet spoon.
*PLEASE NOTE* If you don’t intend to decorate the cake with marzipan and icing, you can add blanched almonds to the top of the cake at this stage.
Step #9 - Cut a 1 hole in the centre of the two greaseproof paper discs & place on top of the cake. Bake on the lowest shelf of the oven for 4 hours until the centre of the cake springs back when pressed. Cook for another 30 minutes if it doesn't & check again.
Step #10 - Allow the cake to cool in the tin for 30 minutes before removing it to a wire rack to finish cooling. When cold, you can feed the cake by inserting small holes & spooning in brandy.
Step #11 - Wrap the cake in cling film & foil. Store in an airtight container for at least two weeks if possible. You can continue to ‘feed’ the cake until you are ready to ice or eat it.

How to Make A Christmas Cake - The Victorian Way

Christmas is approaching so Mrs Crocombe is making a cake for Lord and Lady Braybrooke at Audley End House.
This traditional plum cake is based on a recipe by Charles Francatelli, who was Queen Victoria's chief cook from 1840 to 1841.
INGREDIENTS
680g plain flour
680g butter
450g caster sugar
450g dried chopped cherries
680g currants
680g candied peel
225g ground almonds
8 eggs
Zest of four oranges
15g ground spices (cinnamon, cloves, nutmeg)
½ pint of brandy
For the almond paste:
225g ground almonds
450g caster sugar
A little orange water
3-4 egg whites
For the icing:
6 egg whites
680g icing sugar
Lemon Juice
METHOD
Preheat your oven to 160ºC, 320ºF or gas mark 3.
Line a large cake tin with butter and greaseproof paper.
Soften your butter, then combine with the sugar, flour and eggs gradually. Then incorporate the cherries, currants, candied peel, ground almonds, spices and brandy until you have a thick mixture.
Pour this mix into your lined cake tin, then place in a preheated oven and bake until a skewer comes out clean when placed into the centre of the cake. This will take around six hours, but keep an eye on it.
Once your cake is out of the oven, remove it from the tin and leave it to cool on a wire rack. You can then make the almond paste.
Mix the ground almonds, caster sugar and orange water together in a bowl. Slowly add in the egg whites, and mix until the mixture comes together into a dough. You may not need to use all of the egg whites, so keep an eye on the consistency of the mixture so it doesn’t become too thin.
Take your almond paste and roll it out until it is around 5mm thick. Using your cake tin as a guide, cut out a circle to cover the top of the cake, and a strip to encircle the sides. You can then place it over the cake, using jam or water as a glue if necessary.
Next you can make the icing by mixing the egg whites and fine sugar together. Add a few drops of lemon juice until the mixture becomes spreadable. Cover the cake in this icing mixture and leave this in a dry place until it turns hard.
You can then decorate the cake by piping on some more icing. It’s up to you to choose your decorating style, but if you’d like to keep it authentically Victorian we suggest writing a Christmas message onto your cake. You can add a little food colouring to your icing to create an array of colours for your cake.
