Strawberry Chocolate Mirror Cake
Strawberry and Chocolate Mirror Cake, made with a soft dark chocolate cake at the bottom, followed by a white chocolate mousse, a strawberry jelly insert and a dark chocolate mirror glaze.

Ingredients
Makes about 12 servings
Strawberry Jelly
10 oz (300g) fresh or frozen strawberries, cut into quarters
2 tbsp (30g) sugar
1/2 tbsp (5g) gelatin powder
2 tbsp (30ml) cold water
Chocolate Cake
3/4 cup (100g) flour
1/4 cup (30g) cocoa powder
3/4 tsp (5g) baking soda
1/2 tsp (2g) salt
1 egg
1/2 cup (100g) sugar
1 tsp (5g) vanilla extract
3 tbsp (45g) oil
3.5 oz (100g) buttermilk
3.5 fl oz (100ml) boiling water
White Chocolate Mousse
8 oz (230g) white chocolate, cut in small pieces
2/3 cup (160g) whipping cream
1 2/3 cup (400g) whipping cream (35% fat), chilled
2 tsp (7g) gelatin powder
3 tbsp (45 ml) cold water
Chocolate Mirror Glaze
3.5 oz (100g) sweetened condensed milk
6 oz (175g) semisweet chocolate, cut in small pieces
3/4 cup (150g) sugar
3.5 fl oz (100ml) water
1 tbsp (10g) gelatin powder
1/4 cup (50ml) cold water
3 tbsp (25g) unsweetened cocoa powder
1. Prepare the strawberry jelly. In a small bowl place the gelatin and cold water and let swell for 5-10 minutes.
2. Meanwhile in a small saucepan place the strawberries and sugar and place over medium-low heat. Bring to a simmer, cook for about 5 minutes and remove from heat. Blend the mixture to make a smooth sauce. Pass through a strainer to remove the seeds.
3. Dissolve gelatin over very low heat and mix with the strawberry puree.
4. Line a 8 inch (20 cm) round pan with plastic wrap.
5. Pour the strawberry puree into the pan and freeze for at least 4 hours or even overnight. Cover with plastic wrap after the first hour.
6. Prepare the chocolate cake. Preheat oven to 350F (180C). Grease and line with parchment paper a 8 inch (20 cm) round cake pan.
7. In a large bowl whisk together the flour, cocoa powder, baking soda and salt.
8. In another bowl mix sugar with egg and oil until combined. Mix in buttermilk and vanilla extract. Incorporate flour mixture until well combined. Add hot water and mix to combine. The batter will have a runny consistency.
9. Pour the batter into the prepared pan.
10. Bake for about 30 minutes until a toothpick inserted into the center comes out clean or with few crumbs attached.
11. Let cool completely.
12. Prepare the white chocolate mousse. In a heat proof bowl add the white chocolate and 2/3 cup (160g) whipping cream. Place the bowl over a saucepan with simmering water, over low heat until all the chocolate is melted. Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Let the chocolate mixture cool completely at room temperature.
13. Whip the remaining 1 2/3 cup (400g) cold whipping cream until stiff peaks form. Add melted chocolate mixture and mix until well combined.
14. Assemble the cake. Line with parchment paper a 9 inch (23 cm) pan. You can use a springform pan or a cakeware pan like the one I have from Delicake.
15. Place the chocolate cake in the middle of the pan. Add half of the white chocolate mousse on top and fill the edges. Add the strawberry jelly in the middle on top of the mousse. Add the remaining half of white chocolate mousse and spread evenly.
16. Cover and place in the freezer overnight.
17. Prepare chocolate mirror glaze. In a small bowl place the gelatin and cold water and let swell for 5-10 minutes.Place the chocolate in a bowl and set aside.
18. Place water, sugar, condensed milk and cocoa powder in a saucepan. Bring it just to a boil and remove from heat. Stir in the bloomed gelatin until it is dissolved.
19. Pour the hot cocoa mixture over chocolate. Let sit for about 5 minutes until the chocolate is melted. Use an immersion blender and blend until smooth. Sieve the glaze and let it cool to 90-95F (32-35C) before pouring over the frozen cake.
20. Take the cake out of the freezer and use a hair dryer to defrost the edges. Remove the cake from the pan and place it over a rack or simply on a bowl placed over a parchment paper lined baking sheet to collect the excess.
21. Pour the glaze on top and edges of the cake. Use an offset spatula to remove the drips and decorate the bottom of the cake with grated chocolate. Transfer the cake to a serving platter and refrigerate for several hours to defrost the cake and set the glaze.

Chocolate Cake without Oven

Ingredients:
-Maida (All-purpose flour) 1 Cup
-Cocoa powder ½ Cup
-Namak (Salt) ¼ tsp
-Baking powder ½ tsp
-Baking soda ½ tsp
-Oil 4 tbs
-Caster sugar 1 & 1/8 Cups
-Anda (Egg) 1
-Doodh (Milk) ½ Cup
-Pani (Water) hot ½ Cup
-Vanilla essence 1 tsp
Coffee Ganache:
-White chocolate 250 gms
-Cream (hot) ¾ Cup
-Instant coffee 1 tbs
-Doodh (Milk) 1-2 tbs
Directions:
-In bowl,place sifter,add all-purpose flour,cocoa powder,salt,baking powder and baking soda,sift together and mix well.
-Add oil and mix well.
-Add caster sugar,egg,milk and mix well until well combined.
-Add hot water and mix well.
-Add vanilla essence and mix well.
-Place butter paper in 9” inch baking pan and grease it with oil.
-Pour batter into a grease baking pan and set aside.
-In pot,add 1 pack of salt,place wire rack (2-3 inches high),cover and preheat on high flame for 15 minutes.
-Place baking pan,cover and bake on medium low flame for 1 hour.
-Insert a tooth pick/stick in baked cake if it comes clean,cake is done.
-You can also bake in preheated oven at 180 C for 40-45 minutes.
-Let the cake cool down on wire rack & refrigerate.
For Chocolate Ganache:
-In bowl,add white chocolate and hot cream,leave it for 4-5 minutes.
-On double boiler,place bowl and mix continuously for 4-5 minutes.
-Add instant coffee,sift it with the help of sifter and mix well until smooth.
-Add milk,mix well and let it cool for 5-10 minutes.
-When cake is cool,apply coffee ganache & refrigerate for 30 minutes.
-Decorate & serve.

-Pot mein namak ka 1 pack dal ker wire rack (2-3 inches high) rakh dein aur tez annch per 15 minute kliya preheat karein.
-Baking pan rakh dein aur dhak ker halki darmiyani ancch per 1 hour kliya bake ker lein.
-Cake mein tooth pick/stick insert ker ka check ker lein agar tooth pick/stick saaf niklay tou cake tayyar hai.
-Preheated oven mein 180 C per 40-45 minutes kliya bake bhi ker saktay han.
-Cake ko wire rack per thanda ker lein.
For Coffee Ganache:
-Bowl mein white chocolate aur garam cream dal ker 4-5 minute kliya chor dein.
-Double boiler per bowl rakh dein aur 4-5 minutes kliya musalsal mix ker lein.
-Instant coffee ko sifter ki madad sa sift ker ka dal dein aur smooth hunay tak ache tarhan mix ker lein.
-Doodh dal ker ache tarhan mix karein aur 5-10 minutes kliya thanda ker lein.
-Cake thanda ho jaye tou coffee ganache laga lein aur 30 minutes kliya refrigerate ker lein.
-Decorate ker ka serve karein.

Easy Chocolate Cake
Recipe in English:
Ingredients:
-Maida (All-purpose flour) sifted 2 cups
-Cocoa powder ¾ cup
-Baking soda 1 tsp
-Baking powder 1 & ½ tsp
-Namak (Salt) ½ tsp
-Instant coffee 1 tbs
-Anday (Eggs) 3 (room temperature)
-Caster sugar 1 cup
-Brown sugar ½ cup
-Yogurt ¾ cup (room temperature)
-Vanilla essence ½ tbs
-Vegetable Oil ½ cup
-Doodh (Milk) warm 1 Cup
-Sugar 2 & ½ tbs
-Hot water 3 tbs
-Cream 200ml
-Makhan (Butter) 1 tbs
-Milk chocolate 300g
-Instant coffee ½ tbs
-Warm water 1 tbs
Directions:
-In a bowl,add all-purpose flour,cocoa powder,baking soda,baking powder,salt,instant coffee and whisk well & set aside.
-In another bowl,add eggs,caster sugar,brown sugar and beat well.
-Add yogurt,vanilla essence,vegetable oil,milk and beat for 1 minute.
-Gradually add dry ingredients and beat well after each addition.
-Grease 10” round baking pan with cooking oil and place butter paper.
-Now pour batter in prepared baking pan and bake in preheated at 170 C for 45-50 minutes.
-Remove the cake from the oven and run a knife around the edges to loosen them from the sides of the pan.
-Transfer the cake to the wire rack and let it cool.
-In bowl,add sugar,hot water and mix until sugar is dissolved & set aside.
Chocolate Ganache:
-In double boiler,add cream,butter,milk chocolate and let it melt.
-In warm water,add instant coffee and mix well.
-Now add dissolve coffee and whisk well.
Assembling:
-With the help of the cake knife,horizontally cut top layer of the cake.
-Pour prepared chocolate ganache all over the cake and let it set for 30 minutes.
-Decorate and cut into desire slices and serve!

-Ab tayyar batter ko baking pan mein pour karein aur preheated oven mein 170 C per 45-50 minutes kliya bake ker lein.
-Cake ko oven sa nikal lein aur cake ki sides per knife dal ker ghooma lein ta ka pan ki sides lose ho jayein.
-Cake ko wire rack per rakh dein aur thanda ker lein.
-Bowl mein cheeni aur hot water dal dein aur cheeni ghul janay tak ache tarhan mix ker lein & side per rakh dein.
Chocolate Ganache:
-Double boiler mein cream,makhan aur milk chocolate dal dein aur melt ker lein.
-Warm water mein instant coffee dal ker ache tarhan mix karein.
-Ab dissolve coffee dal ker ache tarhan whisk ker lein.
Assembling:
-Cake knife ki madad sa cake ko do horizontally layers mein cut ker lein.
-Cake ka upper tayyar chocolate ganache pour karein aur 30 minutes kliya set hunay kliya chor dein.
-Decorate ker ker slices mein cut ker ka serve karein!
