How To make Coconut Apricot Haystacks
1 1/2 c Sugar
1/2 c Margarine; not diet
1/2 c Milk
1 ts Vanilla extract
1/2 c Unsweetened cocoa powder
3 1/2 c Rolled oats; quick-cooking
1/2 c Dried apricots; minced
1 c Dried coconut; shredded
1/2 c Nuts; chopped
Recipe by: Jo Anne Merrill
Combine the sugar, margarine, milk and cocoa powder in a saucepan. Cook, stirring constantly, until mixture boils. Boil 30 seconds; remove from heat. Blend in remaining ingredients, using a wooden spoon to mix well. Drop by spoonfuls onto waxed paper; cool completely. Store with sheets of waxed paper between layers in an airtight container. -----

Guilt-free Peanut Butter and Banana Nice Cream
This may be the third or fourth Ice Cream Day of 2015, but we're okay with that! This time around, the best way to eat ice cream is guilt-free with a cherry on top!
We recommend building your peanut butter and banana nice cream sundae with a group of friends or the kiddos; it's fun, easy, and customizable to any flavor preferences!
Ingredients:
(Makes a single serving)
1-2 frozen bananas
1 scoop of your favorite nut butter
1/4 cup of coconut milk (or coconut water)
optional toppings: fresh berries, scoop of jam, or shredded coconut
Put all ingredients in a blender and mix on high; add the coconut milk sparingly until you've reach your desired consistency.
Serve immediately (or freeze) with your choice of toppings!

Ingredients/ Method
1.5 cup of Coconut
0.5 (1/2 cup) of cocoa
3 tbsp coconut oil and 3 tbsp butter
For sweetness: 3 tbsp honey and 2 tsp maple agave syrup
1/2 cup of chopped dryfruit
optional: 2 tsp coconut flakes to decorate the bark
Method: Combine all the ingredients in a bowl and then spread on a parchment paper. Let chill and then cut into pieces. Gift to friends or family or indulge yourself.
