How To make Cobble Corn Chili Tacos
12 Taco shells
1 lb Ground beef
1 pk Chili seasoning mix
1 cn (17 oz) whole kernel
Sweet corn 1 cn (14 1/2 oz) stewed tomatoes
1 cn (8 oz) tomato sauce
2 tb Instant minced onion
1 c Sliced celery
Shredded Cheddar cheese Shredded lettuce Arrange taco shells in a shallow baking pan.Place in very slow oven (250 degrees) to crisp while making filling. Heat large skillet;crumble meat in and cook until browned, stirring constantly.Tilt skillet and spoon off excess fat. Stir in chili seasoning mix.Add corn,tomatoes,tomato sauce, onion and celery.Heat to boiling. Turn heat to low and cook,uncovered,for 15 minutes,stirring occasionally. Spoon into taco shells.Top with cheese
and serve on crisp lettuce.Or the filling may be served like chili con carne, if you don't like taco shells.Makes 6 servings.

I had to jump on the 2023 viral Smashburger Taco trend. Smashburgers are my absolute favorite way make hamburgers. In true Meat Church fashion we had to kick this trend up a notch by starting with grinding up a a brisket in this video for the 8020 meat needed. You can do that or just start with 8020 ground meat which is the perfect meat to fat ratio to keep these together. and used These are insanely delicious brisket smashburger tacos!

PASTEL AZTECA | How To Make the best Tortilla Casserole ❤

This delicious Pastel azteca is absolutely delicious to say the least, it's layers and layers of total goodness. This traditional dish is the casserole of choice when entertaining or just wanting something hearty and delicious. I alternate layers of gently fried corn tortillas with layers of salsa Verde, poblanos strips, corn grains ,onion strips, Mexican crema and Oaxaca cheese, it is best when made with a meat ingredient, I usually choose chicken but also love it with ground beef, I bake my Pastel Azteca casserole in the oven till bubbly, then serve it with a side salad. This dish is easy and absolutely fit for a king.
INGREDIENTS-----------------------
3 Lb boneless skinless chicken thighs
6 tomatillos
5 poblanos peppers (seeds and veins removed)
2 jalapenos (seeds removed)
1/2 medium onion (julienned for sauce)
6 garlic cloves (divided)
Cilantro (medium bunch)
1 Tbsp butter
1 Tbsp olive oil
1 tsp Better than bouillon
13 corn tortillas
18 oz Oaxaca cheese (grated)
Crema (Cacique Mexican table cream)
2 C. corn
1/2 tsp oregano
1/4 tsp ground cumin
oul for frying tortillas
1 &1/2 C. Chicken broth
Salt as needed
BLENDER INGREDIENTS-------------------
Tomatillos
1 poblano pepper
cilantro
2 jalapenos
1 C. chicken broth
INGREDIENTS TO BOIL CHICKEN---------
2 Celery ribs (cut in half)
1/4 tsp peppercorns
2 garlic cloves
1-2 tsp Better than bouillon (I used 1)
water to cover chicken by 1 &1/2 inches

Indian Fry Bread – makes about 12
4 cups all-purpose flour
1 teaspoon salt
2 tablespoons baking powder
3 tablespoons Canola or vegetable oil
1 ½ to 2 cups warm water
4 tablespoons butter, melted
Oil for frying
-In a mixing bowl, combine the flour, salt and baking powder.
-Stir in the oil and 1 ½ cups of the warm water just until its combined. With your hands begin mixing and needed. You may need to slowly add more water to create a soft and slightly tacky dough.
-Cover the dough and let rest 2 hours in a warm location.
-Pour the butter over the dough and knead for a couple minutes.
-Pinch the dough off slightly larger than golf ball-sized. Roll in your hand to create a ball. And place on a floured surface.
-Pat each ball out slightly and then roll out thinly with a rolling pin.
-Fill a cast iron skillet with 1 – 2 inches deep with the fry oil and heat to about 325 degrees.
-Fry the bread until lightly golden brown on each side. Cool slightly on a wire rack or paper towel.
For Sweet Bread:
While the bread is still warm, spread with softened butter and top with powdered sugar, cinnamon and honey.
For Indian Tacos:
Top with Beans (recipes linked above) combined with 1 lb. hamburger meat. Topped with chopped onions, tomatoes, lettuce and any additional toppings.
