How To make Cinnamon Poppy Seed Cake
2 cups sugar
1 tablespoon ground cinnamon
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter
room temperature
2 teaspoons vanilla extract
4 large eggs :
separated
1 cup buttermilk
6 tablespoons poppy seeds
Preheat oven to 350. Generously butter 12 cup Bundt pan. Combine 1/2 cup sugar and cinnamon in small bowl. Sift flour, baking powder, baking soda and salt into medium bowl.
Using electric mixer, beat butter and vanilla in large bowl until fluffy. Gradually add 1 cup sugar, beating until mixture is smooth. Beat in egg yolks 1 at a time. Mix in flour mixture alternately with buttermilk in 3 additions each. Fold in poppy seeds.
In medium bowl, whisk egg whites until foamy. Gradually add remaining 1/2 cup sugar, beating. Fold whites into batter in 2 additions.
Spoon half of cake batter into prepared pan. Sprinkle with half of cinnamon sugar. Spoon remaining batter over. Sprinkle with remaining cinnamon sugar.
Bake cake until tester inserted near center comes out clean, about 50 minutes. Cool cake in pan on rack 10 minutes. Turn cake out onto rack and cool completely.

• lemon zest (from 1/2 of lemon | app. 1/2 TBSP | 3g)
Mousse
• whipping cream (250g | 1 cup)
• coconut sugar (30g | 3 TBSP, or more according to taste)
• sour cream (you can use cream cheese as well) (250g | 1 CUP + 2/3 TBSP)
• vanilla extract (4.2g | 1 tsp)
• lemon juice (28g | 2 TBSP)
• poppy seeds (9g | 1 TBSP )
• gelatin, sheets (6.6g | 4 pcs)
Decoration
• high quality dark chocolate, melted

Pure Vanilla Extract
Makes filling for 2-4 poppy seed rolls
Ingredients
4 cups dry poppy seeds
1 cup of chopped or ground walnuts
3/4 cup honey or powdered sugar
1 tablespoon vanilla extract
zest of 1 lemon
zest of 1 orange
If you would like your poppy seed filling less thick you can add a few tablespoons of water or milk to loosen it up.

Cake:
· 5 egg yolks
· 120 g sugar
· 90 ml milk
· 40 g flour
· 12 g baking powder
· pinch of anise
· 1/2 tsp cinnamon
· 150 g ground poppy seeds
· 5 egg whites
White Chocolate Cream:
· 300 g white chocolate
· 250 g mascarpone
· 230 ml whipping cream
· 1 tsp vanilla extract
+ 2 tbsp forest fruit jam ( don't use too sweet jam )
Bake at 170°C/340°F
Around 15-20 minutes ( Always check! )
Please don’t forget to check while baking, as you may need a shorter or longer time to bake. This is on the oven without ventilation on!
