How To make Chipotle Ancho Chili Pesto
2 ea Dried ancho chilies
-=OR=- pasilla chilies 1 lg Red bell pepper
2 ea Canned chipotle chilies
(in adobo sauce) :
rinsed & seeded 1/3 c Pine nuts
2 tb Fresh lemon juice
2 ea Garlic cloves
1/4 c Olive oil (or more)
If you prefer a milder sauce, use only one chipotle chili in this recipe; if you like your food super spicy, use two. Makes about 1-1/3 cups Remove stems and seeds from ancho chilies. Place chilies in large bowl. Cover with boiling water. Let stand until soft, about 30 minutes. Drain, reserving 1 tablespoon soaking liquid. Roast bell pepper over gas flame or in broiler until blackened on all sides. Seal in paper bag and let stand 15 minutes. Peel, stem and seed pepper. In processor, blend ancho chilies, 1 tablespoon soaking liquid, bell pepper, chipotles, pine nuts, fresh lemon juice and garlic until almost smooth. With machine running, gradually add 1/4 cup olive oil; process until smooth. If pesto is dry, mix in more oil by spoonfuls. Season with salt. (Can be made ahead. Press plastic wrap onto surface of pesto. Cover and refrigerate up to 2 days or freeze up to 1 week. Bring to room temperature before using.)

They are experts at what they do, and although consistency is sometimes an issue, I can go from hungry to burrito stuffed in a matter of minutes. So, why would I want to try to make Chipotle at home? Will it taste better? Will I be able to work out any consistency issues? Will I be able to add things like cheese and sour cream that Chipotle doesn’t carry a vegan version of? Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.
DELICIOUS CHILI RECIPE - Pork and Lentils Chili
Follow this recipe for the most tasty PORK & LENTILS CHILI. #chili #mexicanfood
Ingredients:
4 cups of chicken stock
1 pound of ground pork
4-5 strips of bacon
1 cup of lentil
1 can of black beans
1 yellow onion
4 cloves of garlic
1 large or two medium tomatoes
2 dried chilies Guajillo
1 dried chili Ancho
1 dried chili Chipotle
2 bay leaves
1 handful of fresh cilantro (more for serving)
1 1/2 teaspoons of ground cumin
1-2 teaspoon of smoked paprika
1 teaspoon of chili powder
1 1/2 teaspoons of dried oregano
salt and fresh ground black pepper to taste
Lime
Topings:
Mexican Sour cream (with a squeeze of lime juice)
Shredded Mexican Cheese blend
Chicharrones (pork rind chips)

INSTRUCTIONS
Maple Mustard, Greek Yogurt, Lemon Poppy Seed, and Peanut salad dressings simply add ingredients to a sealable jar and shake to combine.
Cilantro Lime and Citrus Basil Dressings add ingredients to a jar wide enough to fit your immersion blender and blend until smooth.
