How To make Black Bean Chipotle Chili with Seitan
1 tb Canola oil
1 md Yellow onion
diced
1 Green bell pepper :
seeded
And diced 2 Celery stalks chopped
2 Garlic cloves :
minced
1 cn Crushed tomatoes (28 oz)
2 cn Black beans drained
(15 oz ea) 1/2 c Water
1/4 lb Prepared seitan :
diced*
1 - 2 chipotle chilies --
Seeded, minced* 1 tb Chili powder
1 tb Dried parsley
1 tb Dried oregano
2 ts Ground cumin
1/2 ts Ground black pepper
1/2 ts Salt
Heat oil in large saucepan. Add onion, bell pepper, celery and garlic; saute 5 to 7 minutes. Stir in crushed tomatoes, beans, water, seitan, chipotle chiles and seasonings. Cook uncovered over low heat, stirring occasionally, about 25 minutes. Add water if necessary during cooking. Remove chili from heat; let stand 10 minutes before serving. Serve with warm bread and a dollop of low-fat yogurt if desired. Makes 6 servings. Note: Chipotle chilies, or smoked jalapenos, are available dtried or canned in adobo sauce, a pickling brine of tomato, vinegar and spices. To use dried chipotles, stem, seed and toast in a dry cast-iron skillet or on a baking sheet in a 250 degree oven 2 to 3 minutes. Transfer chilies to bowl; cover with hot water. Let stand until rehydrated, about 20 minutes. Mince or puree with soaking liquid. Canned chipotles in adobo sauce can be seeded, and minced or pureed as desired. Honey's gal pal Eilis Cahill drops by to show us how to make Chipotle Chili with choice of yams, sweet potatoes, or pumpkin!
Chipotle Chili
Ingredients:
1 Tablespoon Olive Oil
1 Onion, Chopped
5 Garlic Cloves, Chopped
1.5 Tablespoons Chili Powder
1 Tablespoon Ground Coriander
6 Fresh Tomatoes, Diced
1/2 Pound Dried Black Beans, Rinsed Well
1 Chipotle Chili (From a Can) in Adobo, Minced
2 Teaspoons Kosher Salt + More to Taste
3 Large Sweet Potatoes, Cut into 1/2 Inch Cubes
Optional: Sub Yams or Pumpkin for Sweet Potatoes
Optional: 2 Carrots, Chopped
Optional: 3 Ears Sweet Corn
Optional: Quinoa, Rice, or Pasta
Heat the oil in heavy, large pot over medium heat. Add the onion and cook until soft and beginning to brown, 6-7 minutes. Add garlic, chili powder, and coriander and stir. Cook together for 1 minute.
Stir in the tomatoes with their juices, beans, chipotle pepper. Add 5 cups of water and bring to a boil. Reduce heat to low, cover with lid slightly ajar and simmer until beans are flavorful and tender, anywhere from 2 - 4 hours (depending on the age of your beans).
After 1 1/2 hours of cooking, add the sweet potatoes, carrots, corn, quinoa/rice/pasta (optional), and salt. Place the pot's lid back on slightly ajar and allow to simmer on low heat until the beans are soft and the sweet potatoes and quinoa are cooked through. Add more water if the chili becomes too thick. Season to taste with salt and pepper.

Spyglass Grill Chipotle Seitan Yuca Bowl Recipe | Vegan & non-vegan food review | Caribbean Beach
One of the last few videos before the parks closed was a review of Spyglass Grill at Disney's Caribbean Beach Resort. We loved the food so we decided to make it at home.
Cook Yuca fries according to packaging. If using the oven cooking method, don’t forget to flip half way through cooking.
Grease a pan and cook chipotle Seitan in a pan according packaging
Black beans
Pressure cook together
2 cups black beans
3 cups vegetable broth
4 cloves of minced garlic
1 tbs chili powder
1 tbs cumin
1 tsp coriandar
1 bay leaf
1/2 c diced shallots

Pico de Gallo
1 cup chopped shallot or onion
1 jalapeño and 1 serrano pepper, chopped
¾ t salt
½ cup cilantro, chopped
1 ½ cup tomatoes, finely cubed
Combine all ingredients together and refrigerate until ready to use.
