How To make Chinese: Cold Shredded Vegetables with Chicke
2 lg Leeks
3 Green onions
2 sm Zucchini
2 sm Carrots
2 Long "seedless type"
-cucumbers 1 Long white radish
2 Wood ear black fungus
1 Egg
1 tb Peanut oil
1/2 c Cooked chicken meat
2 md Tomatoes
SAUCE: 1 ts Juice of ginger root
1 ts Dry mustard
2 ts Sugar
1 1/2 tb Thin soy sauce
1 1/2 tb Sesame oil
1 1/2 ts Chinkiang vinegar
1 tb Freshly squeezed tomato
-juice Prepare Dressing: In mixing bowl, mix mustard & sugar; gradually add thin soy sauce, blend to avoid lumping. Squeeze some peeled ginger root through a garlic press to extract juice. Squeeze juice from tomato. Add other sauce ingredients; stir well and set aside. Prepare salad: Wash, then soak, wood ear fungus in 3 cups warm water for 1 hour. Beat egg; fry very thin omelet in large skillet greased with peanut oil. Fry both sides gently. Set aside to cool. Trim leeks, green onions, zucchini, carrots & white radish. Cut ends off cucumber, but don`t peel. Peel carrots & radish. Shred vegetables with shredder or cleaver. Wash tomatoes & cut each into eighths. Shred chicken with fingers. Thinly slice omelet into strips. Pour boiling water over fungus & drain. Cut out hard center & cut floppy ears into thin strips. Finish: Layer shredded vegetables in center of serving plate, mounding slightly as you build layers of cucumber, carrot, chicken, fungus, zucchini, egg, leeks, radish, green onion & so on, ending with cucumber. Arrange tomatoe wedge around outer edge. Working from center of vegetable mound, arrange egg strips like spokes of a wheel. Add dressing and serve.

2 BONELESS CHICKEN THIGHS(BOILED)
1 CUCUMBER (SMASHED)
2 TBSP. SUGAR
2TBSP. BLACK VINEGAR
1TBSP. APPLE CIDER VINEGAR
1 TBSP OYSTER SAUCE
1 TBSP PEPPER CORN OIL
1OR 2 TBSP. SESAME OIL

- Cut coriander

- Sliced ginger (few slices for boiling with chicken)

- Chinese cooking wine
- Half spoonful of chicken stock powder
- Half spoonful of sugar
- 3 spoonful of vinegar
- 3 spoonful of light soya sauce
- 1 spoonful of oyster sauce

麻醬手撕雞 Hand-Shredded Chicken with Sesame Sauce **字幕 CC Eng. Sub**
????材料:
雞胸肉 300克
青瓜 1/2 條
薑、蔥 適量
芝麻醬 4湯匙
花生醬 1湯匙
糖 1茶匙
生抽 1茶匙
紹興酒 1湯匙
鹽、芝麻油、炒芝麻 適量
????步驟:
1️⃣燒滾一鍋水,放入雞胸肉、1片薑、蔥、1湯匙紹興酒,水再次滾起蓋上鍋蓋熄火浸20分鐘。
2️⃣4湯匙芝麻醬加入1湯匙花生醬、1茶匙糖、1/2茶匙鹽、1茶匙生抽拌勻,分多次加入1茶匙涼開水至濃稠度理想為止,最後加入芝麻油拌勻成為麻醬。
3️⃣ 青瓜切絲,雞胸肉撕成條狀,淋入麻醬,撒上炒芝麻即可。

Chicken Breast - 300g
Cucumber - 1/2 piece
Ginger - as needed
Spring onions - as needed
Sesame Paste - 4 tablespoons
Peanut Butter - 1 tablespoon
Sugar - 1 teaspoon
Soy Sauce - 1 teaspoon
Shaoxing Wine - 1 tablespoon
Salt - as needed
Sesame Oil - as needed
Fried Sesame Seeds - as needed
????Cooking directions:
1️⃣ Bring a pot of water to a boil, add the chicken breast, 1 slice of ginger, some spring onions, and 1 tablespoon of Shaoxing wine. Once the water boils again, cover the pot and turn off the heat. Let the chicken sit in the hot water for 20 minutes.
2️⃣ In a bowl, mix 4 tbsp of sesame paste, 1 tbsp of peanut butter, 1 tsp of sugar, 1/2 tsp of salt, and 1 tsp of soy sauce. Gradually add 1 tsp of water while stirring until the mixture reaches your desired thickness. Finally, add some sesame oil and mix well to make the sesame sauce.
3️⃣ Cut the cucumber into thin strips, tear the chicken breast into strips, and drizzle with the sesame sauce. Sprinkle with fried sesame seeds and serve.
