How To make Chili Relleno Casserole
6 lg Eggs
1 lb Longhorn cheese
-(colby) 1 lb Jack cheese
8 oz Green chilies, whole
-(1 large can) Preheat the oven to 350 degrees F. Separate whites from yolks. Whip whites until stiff. Beat yolks until smooth. Fold yolks into whites. Season, salt & pepper, as wished. Grate cheeses and combine together. Grease a 9x13-inch casserole dish. Spread small amount of egg mixture in dish. Split open green chilies and layer on top of mix in dish. Sprinkle grated cheese on top. Spread some more egg on top of that. Repeat until the ingredients are gone (finish with egg). Bake for 25 minutes, or until brown. Serve warm with salsa. NOTES: * An easier way to make chili rellenos -- A friend of mine, Cynthia Ojeda, cooked this recipe for me once. I told her it was good enough to share with the Usenet community, so she wrote it down for me. Serve it with plenty of Spanish rice and salsa. How To make Chili Relleno Casserole's Videos
Cheesy Chile Relleno Casserole
Remember to preheat your oven 375°
7 poblano peppers
1-2 jalapeño chopped / optional
4 cups shredded chicken
4 cups mozzarella cheese shredded
1 tbs all purpose flour
¾ cup heavy cream
½ onion chopped
6-7 eggs separate yolk from egg whites (room temperature)
1 tsp black pepper
1 tsp salt or more to taste
½ tbs chicken bouillon powder
* I added my all purpose seasoning that contains 2 red chilie powders that are very spicy. That’s why the chicken looks a little red. ( I left it out of the recipe )
You can add any of your favorite seasonings.
Oil- to coat the peppers to peel easier
I used a Pyrex oven safe dish 11x7x1.5 inches
Bake for 45 minutes depending on your oven / check it a few times so it doesn’t dry out.

In this video I am going to show you how to make my chile relleno casserole. It's just perfect for entertaining because you just throw everything in a 9 x 13 inch dish and pop it in the oven.
This chili relleno casserole serves quite a few depending on how small you cut the pieces.
It's easy to make and only has a few ingredients like green chiles which are mild, milk, cheese, flour, eggs and salt.
This is a favorite dish of my family as we make this every Christmas eve as part of our Mexican dinner. We love it!
You can also serve this casserole for breakfast, lunch or dinner. The flavors are rich and it is definitely a comfort food that is quick and easy.

In today's video I will show you how to make this delicious and easy chile relleno casserole. It only takes about five minutes to prepare and can be served for breakfast, brunch, or dinner. You also have the ability to adjust the amount of spice in the dish. This recipe is mild. If you want no spice than replace the pepper jack cheese with just monterey jack. If you want more spice replace the regular chile powder with 1/4 of a teaspoon of either red pepper flakes, ground chipotle pepper, or ground cayenne pepper.
