How To make Chili Relleno Pie
2 cn (8 oz. ea.) green chilies
1 lb Jack cheese, sliced
1 lb Cheddar cheese, sliced
4 tb Whole wheat flour
1 c Evaporated milk
1 c Sour cream
4 Eggs
1 c Diced chicken or turkey
2 c Mild salsa
Cut chilies open and line 8" x 13" baking dish with them. Layer both cheeses evenly over chilies. Add any remaining chilies over the cheese layer. Mix flour with small amount of milk; using a wire whisk helps to make a smooth paste. Mix in remaining milk and sour cream. Beat in eggs, one at a time; add diced meat. Pour over chilies and cheese; bake for 30 minutes at 350 degrees. Pour salsa over top and bake an additional 15 minutes.

Today Marie is making a great Mexican dish. This was very delicious and not to spicy. She served it with Spanish rice and corn on the cob.
Chile Rellenos Casserole
Ingredients:
1 lb. ground beef
1/2 onion (chopped)
1 10 oz. can whole green chilies (or 2 roasted fresh green chiles) We used three 4 oz. cans
2 cups cheddar cheese
4 eggs
1 1/2 cups milk
1/4 cup flour
1 tsp cumin
1 tsp salt
1 tsp pepper
Directions:
Preheat oven to 375.
Cook hamburger meat and onion. Drain, then add cumin, salt, and pepper.
Spray your pan lightly with non-stick cooking spray, then line the bottom of your pan with whole green chiles (chop extra green chiles for later).
Layer meat over green chiles.
Top with cheese and chopped green chiles.
Whisk together eggs and milk, then add flour and mix well.
Pour this mixture over dish. Bake for 35 to 40 minutes.
Serve and Enjoy !!!

These CHILES RELLENOS are a family favorite, my mom made them often when I was growing up, and I have continued the tradition since. Chiles Rellenos are a very popular traditional dish mot only in Mexico but all over Texas and many States around the Country. There are different ways of making them and there are also many different options for fillings. Poblano peppers are very versatile and family friendly since they are considered mild in heat and can be roasted and filled or cut into strips and added to many different dishes, Soups and stews. Ground beef and potatoes or potatoes and cheese are a favorite in my house, but the best part is you can make them your own.
INGREDIENTS----------------
5 med/large poblano peppers
2 1/2 C. vegetable oil for frying (or as needed)
POTATO FILLING-----------
2 medium Russet potatoes (small cubes)
1/2 C. chopped onions
5 small green onions (chopped)
1 medium/large jalapeño (seeds removed)(optional)
Salt and Pepper (as needed)
1 diced Roma tomatoes
1/2 tsp garlic powder
1/2 tsp onion powder
2 1/2 C. freshly grated Colby jack cheese
RED SAUCE INGREDIENTS----------------
6 Roma tomatoes
1 Tbsp chicken bouillon
Small bunch of cilantro
Salt and Pepper (to your liking)
2 C. water
2 Tbsp vegetable oil
3/4 C. onions (julienned)
2 large minced garlic cloves
1 tsp Mexican oregano
1/2 tsp ground cumin
All purpose flour (for dusting Chile Rellenos)
SIDES----------------
Refried beans
Mexican rice (ARROZ BLANCO MEXICANO)

In this video I am going to show you how to make my chile relleno casserole. It's just perfect for entertaining because you just throw everything in a 9 x 13 inch dish and pop it in the oven.
This chili relleno casserole serves quite a few depending on how small you cut the pieces.
It's easy to make and only has a few ingredients like green chiles which are mild, milk, cheese, flour, eggs and salt.
This is a favorite dish of my family as we make this every Christmas eve as part of our Mexican dinner. We love it!
You can also serve this casserole for breakfast, lunch or dinner. The flavors are rich and it is definitely a comfort food that is quick and easy.
