ELOTE | the best Mexican street corn recipe!
Elote (Mexican street corn) is by far one of my favorite Mexican side dishes! Juicy, charred corn on the cob gets slathered with a limey mayo spread, then it's topped with cotija cheese, chili powder, and fresh cilantro. Yum!!
I love classic grilled corn on the cob, but elote is next level. It's got so much flavor with just a few simple ingredients and is such a joy to eat on a sunny day — especially when you're in Mexico!
But if you're not in Mexico, you can easily make elote at home at your next outdoor fiesta, barbecue, or Cinco de Mayo party. Just toss some corn cobs on the grill, whip up the creamy mayo sauce, and then add a few toppings. Your crowd will go head over heels for it!

Mexican Street Corn (Elote) This is hands down the best corn recipe for the summer. Mexican street corn is incredibly delicious and so easy to make. I will give you substitutes for the Cotija cheese as it’s extremely hard to find for me personally. This Mexican street corn is so incredibly delicious and will blow everyone away at your next barbecue or gathering. It is so creamy, tangy, and everything you want in a corn recipe, but more. I don’t know if this recipe is traditional by any means as I am not from Mexico but please do let me know in the comments if you are and how you make your Mexican street corn recipe as I love learning from you all. Elote is made with corn on the cob, slathered with mayonnaise, seasoned with chili powder and fresh lime juice, sprinkled all over with salty Cotija cheese and traditionally cilantro. It’s messy to eat, but so worth it. Elote is the perfect summertime side dish and a must on your table.
INGREDIENTS:
4 ears of grilled corn on a cob— husks removed or you can boil it as well
1 tablespoon avocado oil for the corn — or any oil
4 wooden skewers are optional
⅓ cup mayo — any you like
1/2-1 teaspoons chipotle chilli pepper or powder
juice of half a lime
½ cup finely grated Cotija cheese — or Parmesan if you can’t find Cotija cheese
Tajín seasoning for garnish
fresh and finely chopped cilantro or parsley for garnish
✨You can find the full printable recipe with tips and directions on my website which is linked here:

Corn on the cob
4 tbsps melted butter
1/4 cup mayo
1/4 cup sour cream
1 package Cotija cheese
tajin or chili powder
1/4 cup cilantro
2 limes
All-Purpose Seasoning
1 tsp garlic
1 tsp white sugar
Directions:
Preheat oven or Grill to 400 degrees. Clean corn and brush with oil or melted butter. Season with salt, pepper, garlic, onion powder. Grill or bake for 10-15 minutes or until tender. If using the oven, place corn under the broiler for a few minutes to get some char.
Mix together the mayo, sour cream, lime juice, sugar, garlic, and season to taste. In a separate bowl, break apart the Cotija cheese and add some lime zest. Brush mayo mixture onto the corn and then spoon on the cheese. Top with Tajin or Chili powder and serve.
