How To make Chili Con Elote
1 Onion, Chopped
1 Clove Garlic
1 tb Oil
1 Diced Green Pepper
1 ts Chili Powder
1 ts Cumin
1 c Chopped Tomato
1 c Corn, Drained
4 c Kidney, Pinto or Black Beans
1 ts Oregano
1 1/2 ts Salt
Saute onion and garlic clove in oil until onion is soft. Crush garlic clove. Add green peppers and spices, saute another 2-3 minutes. Add tomatoes and corn. Mash 2 cups of the beans and add to pot along with whole beans, salt and oregano. Simmer another 30 minutes. If chili without tears isn't chili for you add more chili powder or cayenne pepper.

Mexican-Style Street Corn
Here is what you'll need!
Mexican-Style Street Corn
Serves 3
INGREDIENTS
3 ears of corn, hulled
3 wooden skewers
¼ cup melted butter
½ cup mayo
2 cups cotija cheese
3 teaspoons chili powder
PREPARATION
Boil the corn for about 5 minutes.
Push a skewer through the middle of each ear of corn.
Drain, then brush them evenly with the melted butter.
Spread a bit of mayo all over each ear of corn.
Scoop the cotija cheese generously on the corn, making sure it covers all sides.
Sprinkle a little bit of the chili powder evenly across the corn.
Serve!

1 bouquet of cilantro
4 limes
2 lemons
1/2 cup of Parmesan cheese
1/2 cup of mexican is crema
1/2 stick of butter
lots of chili powder
1 skillet
ELOTE CHILI
Elote refers to fresh corn which is served on the cob or cut kernels. A Mexican street food that is popular in Chicago which is grilled or broiled then coated with mayo and dusted with chili pepper, salt, cotija cheese, lime juice, and hot sauce. A favorite of my friend kirk who sent me the recipe.
