Prepare Chicken Chilli Dry:
-Boneless chicken julienne 500g
-Anda (Egg) whisked 1
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Cornflour 2 tbs
-Maida (All-purpose flour) 1 tbs
-Cooking oil for frying
-Cooking oil 2-3 tbs
-Lehsan (Garlic) chopped 1 tbs
-Adrak (Ginger) chopped 1 tbs
-Hari mirch (Green chillies) 10-12
-Adrak (Ginger) julienne 2-inch piece
-Soy sauce 2 tbs
-Chilli garlic sauce 2 tbs
-Oyster sauce 2 tbs
-Namak (Salt) ¼ tsp or to taste
-Kali mirch powder (Black pepper powder) ¼ tsp
-Sugar 1 tsp
-Yakhni (Chicken stock) ¼ Cup
-Hari mirch (Green chillies) 2-3
-Adrak (Ginger) julienne 1-inch piece
-Hara pyaz (Spring onion) leaves chopped
Prepare Fried Rice:
-Cooking oil 2-3 tbs
-Anda (Egg) whisked 1
-Lehsan (Garlic) chopped 1 tbs
-Gajar (Carrots) chopped 3 tbs
-Band gobhi (Cabbage) chopped ½ Cup
-Chawal (Rice) boiled 250g
-Chicken powder 1 tbs
-Sugar 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp or to taste
-Namak (Salt) ½ tsp or to taste
-Hara pyaz (Spring onion) leaves chopped 1-2 tbs
-Soy sauce 1 tbs
-Hara pyaz (Spring onion) leaves chopped
Directions:
Prepare Chicken Chilli Dry:
-In a bowl,add chicken,egg,salt,black pepper powder,cornflour,all-purpose flour & mix well,cover & marinate for 15 minutes.
-In a wok,heat cooking oil & fry on medium flame until golden & crispy.
-In a wok,add cooking oil,garlic,ginger & mix well.
-Add green chillies & mix well.
-Now add fried chicken,ginger & mix well.
-Add soy sauce,chilli garlic sauce,oyster sauce,salt,black pepper powder,sugar & mix well.
-Add chicken stock,mix well & cook on high flame for a minute.
-Add green chillies,ginger,spring onion leaves & mix well.
Prepare Fried Rice:
-In a wok,add cooking oil,whisked eggs,mix well & cook for a minute.
-Move cooked egg to the side of wok,add garlic & mix well.
-Add carrots,cabbage,mix well & cook for a minute then mix everything.
-Add boiled rice & give it a good mix.
-Add chicken powder,sugar,black pepper powder,salt,spring onion leaves,soy sauce & mix well.
-Garnish with spring onion leaves & serve with chicken chilli dry!

-Karahi mein cooking oil garam karein aur darmiyani ancch per golden & crispy ho janay tak fry ker lein.
-Karahi mein cooking oil,lehsan aur adrak dal ker ache tarhan mix karein.

-Ab fried chicken aur adrak dal ker ache tarhan mix karein.
-Soy sauce,chilli garlic sauce,oyster sauce,namak,kali mirch powder aur cheeni dal ker ache tarhan mix ker lein.
-Yakhni dal ker ache tarhan mix karein aur tez ancch per ek minute kliya paka lein.
-Hari mirchein,adrak aur hara pyaz leaves dal ker ache tarhan mix ker lein.
Prepare Fried Rice:
-Karahi mein cooking oil aur pheetay hoye anday dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Cooked anday ko karahi ki ek side per rakh dein aur lehsan dal ker ache tarhan mix karein.
-Gajar & band gobhi dal ker ache tarhan mix karein aur ek minute kliya paka lein phir sab cheezon ko ek saath mix ker lein.
-Boiled chawal dal ker ache tarhan mix karein.
-Chicken powder,cheeni,kali mirch powder,namak,hara pyaz leaves aur soy sauce dal ker ache tarhan mix ker lein.
-Hara pyaz leaves sa garish ker lein & chicken chilli dry ka saath serve karein!

Ingredients
- 500g red chillies, sliced (i used cayenne pepper but any chillies will work)
- 2 tbsp salt
- 500ml filtered water
- 100ml vinegar (I used coconut, but plain white or cider vinegar also works well)
- 0.5 tsp xanthan gum (this is optional but recommended for a homogenous smooth sauce)
Method
1. Start by washing the chillies well, then dry them and slice into 1cm slices (this is going to get blended, so don't stress too much about the consistency)
2. Place the sliced chillies into a preserving jar.
3. In a separate container, dissolve the salt into the water. Once the salt is completely dissolved, pour it over the sliced chillies.
4. Now you need to hold the chillies down so they are completely covered. I used a vac pack bag with some water. You could also use a small saucer.
5. Place a lid on loosely, so the gas can escape.
6. Leave this to ferment for 1-3 weeks, depending on how hot your kitchen is. It's summer here in Queensland, so only took a week for me but if you're somewhere colder, you might want to leave this for 3 weeks. There's no right or wrong amount of time here, use your intuition and go with what you think works. But you're looking for the chillies to start being quite active with bubbles forming and the water starting to turn cloudy.
7. Once you're finished with the fermentation stage, drain the chillies from the brine and place them into a high-speed blender.
8. Blend on high with the vinegar until you have a smooth sauce. With the blender still running, add your xanthan gum and continue to blend for 1 more minute.
9. Store this in the fridge for up to six months, and to be honest, you will probably have finished it all well before it goes off.

Full written recipe for Restaurant style chicken chilli

Cooking times: 15-20 minutes
Serves: 4-5 people
Ingredients:
For frying chicken:
• Boneless Chicken 500 gm (breast)
• Salt & black pepper to taste
• Vinegar 1 tsp
• Light soy sauce 1 tsp
• Egg white of 1 egg
• Cornstarch 3 tbsp
• Oil for frying
For green chilli paste:
• Spicy Green chillies 8-10 nos.
• Water 50 ml
For sauce:
• Oil 2 tbsp
• Onions 1/4th cup (chopped)
• Garlic 1/4th cup (chopped)
• Ginger 1 inch (chopped)
• Spicy Green chillies 12-15 nos. (slit)
• Coriander stems 1 tbsp (chopped)
• Chicken stock/hot water 200 ml + 100 ml
• Spicy Green chilli paste 2-3 tbsp
• Light soy sauce 2 tbsp
• Dark soy sauce 2 tsp (for colour)
• Vinegar 1 tsp
• Sugar a pinch
• Salt & white pepper powder a pinch
• Fried chicken
• Veggies:
1. Capsicum 1 medium size (julienned)
2. Onions 1 medium size (petals)
3. Spring onion bulbs & greens 2 tbsp
4. Fresh coriander roughly chopped 1 tbsp
• Cornstarch 1 tbsp + water 2 tbsp (for slurry)
• Spring onion greens & bulbs (for garnish)
• Fresh coriander leaves (for garnish)
Method:
• For frying chicken, clean the boneless chicken well, and further cut into strips or cubes as per your preference, I’m choosing to cut in 1 cm strips.
• Now, add salt & black pepper to taste, vinegar, light soy sauce, egg white & cornstarch, mix well & coat the chicken with the marinade. Make sure the coating should not be very thick. After mixing you’ll feel the chicken hasn’t coated nicely but relax the chicken will fry perfectly.
• Set oil in wok for frying, fry the marinated & coated chicken in hot oil on medium heat, until the chicken is cooked, tender & slightly golden in colour. Remove it over an absorbent paper and keep aside to be used later. Make sure not to over fry them like a chicken pakoda.
• For green chilli paste, add the green chillies in a grinding jar, add water & blend into a fine paste, keep aside to be used later.
• For making the chilli sauce, set a wok on high heat, add oil and let it heat nicely, further add onions, garlic, ginger, green chillies & coriander stems, stir & cook for 1-2 minutes or until the garlic is slightly cooked.
• Now add the chicken stock and cook for a minute on high flame.
• Further add green chilli paste, light soy sauce, dark soy sauce, vinegar 1 tsp, a pinch of sugar & salt & white pepper powder to taste, stir on high flame for a minute. You can adjust the quantity of green chilli paste as per your preference.
• Now add the fried chicken & the veggies, stir briefly & cook on high flame for half a minute.
• Further add additional 100 ml of chicken stock, in a separate bowl add cornflour & water, mix well to make a slurry, add the slurry & stir well & cook for a minute or until the sauce thickens and coat the chicken.
• Taste the sauce and adjust the salt as per taste. Finish by adding some freshly chopped spring onion bulbs & greens & some fresh coriander.
• Restaurant style chilli chicken is ready, serve hot. I like to have it with some roomali roti or naan, you could also try that combination to elevate the experience of chicken chilli.

Chilli Chicken Recipe:
Chicken Boneless - 250 grams
Batter:
Corn Flour - 2 tbsp
Maida - 2 tbsp
Black Pepper Powder - ¼ tsp
Salt - ¼ tsp
Water - 3 tbsp
Oil - To Deep fry
Chilli Paste:
Dried Red Chilli - 6 nos
Water - 1 Cup
Oil - 2 tsp
Chilli Sauce:
Oil - 1 tbsp
Garlic (finely chopped) - 1 tbsp
Ginger (finely chopped) - 2 tsp
Green Chilli (roughly chopped) - 1 no
Onion (cubed) - 1 no
Capsicum (cubed) - 1 no
Chilli Sauce - 1 tbsp
Tomato Sauce - 2 tbsp
Soy Sauce - 2 tsp
Vinegar - ½ tsp
Salt - ½ tsp
Black Pepper Powder - ¼ tsp
Corn Flour - 2 tsp
Water - ¼ Cup
Spring Onion - 2 tbsp
Cooking Instructions:
1. Bring 1 Cup of water to a boil. Add the red chillies and cook for 5 minutes.
2. Add the cooked red chillies to the mixer grinder and grind it into a smooth paste.
3. In a pan, heat 2 tsp of oil. Add the ground chilli paste. Cook this until the oil separates from the chilli paste.
4. In a mixing bowl, add cornflour, maida, salt, pepper and water. Mix to form a batter to deep-fry the chicken pieces.
5. Add chicken pieces to the batter.
6. Heat oil in a deep frying pan and deep-fry the chicken pieces for around 3-4 mins or until it is cooked. Keep Aside.
7. In another pan, to make Chilli sauce, heat oil, add the chopped garlic and ginger. Saute this until the garlic turns golden brown. Add the chopped green chilli.
8. Add the cubed onions and cubed capsicum and continue to saute for a minute.
9. Add the chilli paste, chilli sauce, tomato sauce, soy sauce, vinegar, salt and pepper. Mix well and cook for 2 minutes.
10. Mix 2 tsp of cornflour in ¼ cup of water to form a slurry.
11. Add the cornflour slurry to the pan.
12. Mix well, once the sauce is in the desired consistency, add the batter-fried chicken cubes and toss for a minute.
13. Add the chopped spring onions and remove from heat.
14. Serve hot as an appetizer.
