1 oz 30 g ripe avocado. 2 tb Low fat natural yogurt. 1 ts Lemon juice. Salt and pepper. Few lettuce leaves shredded 1 Shallot or 3 spring onions Trimmed and sliced. 1 Tomato cut into wedges. Quarter small green or red Pepper finely chopped. 2 Taco shells. 2 oz 60 g roast chicken sliced. 1. In a small bowl mash the avocado with a fork until smooth. Add the yogurt and lemon juice and stir until blended. Season with salt and pepper. 2. Mix together the lettuce, shallot or spring onions, tomato and green or red pepper. 3. Warm the taco shells under a moderate grill for 2 to 3 minutes. Remove them and fill with the salad mixture. Top with the chicken and spoon over the avocado dressing. Serve immediately. Preparation 10 minutes, cooking 3 minutes.

Chicken tacos with cabbage, avocado salsa and lime cream – Savory
A zesty avocado salsa makes these tacos anything but ordinary. A taste of Mexico!
Ingredients 12 oz chicken breast fajita strips 2 cups shredded red cabbage 1 tbsp mayonnaise 2 avocados, diced ½ small onion 1 lime ½ cup fresh cilantro leaves ¼ cup sour cream 8 soft tacos ½ cup crumbled queso blanco 2 tbsp sliced jalapeño peppers (optional)
Heat chicken strips according to package directions. Meanwhile, combine cabbage and mayonnaise and season with salt (in moderation) and pepper.
Avocado salsa Dice the avocados. Finely chop the onion. Zest and juice half a lemon. Cut the other half in wedges. Finely chop half the cilantro leaves and mix with diced avocado, onion and lime juice (to taste).
Warm the tacos Mix sour cream with lime zest and season with salt (in moderation) and pepper. Warm the tacos. Fill each taco with cabbage slaw, chicken strips and avocado salsa. Top with queso blanco, jalapeños (if using) and the rest of the cilantro. Serve with sour cream and lime wedges. That’s how you make chicken tacos with cabbage, avocado salsa and lime cream.

Ingredients Needed: 1 tbsp Oil 450g Chicken Breasts 1 Old El Paso Smoky BBQ Fajita Seasoning Mix 12 Old El Paso Crunchy Taco Shells bit.ly/1OdWFDH 1 Old El Paso Thick 'n' Chunky Mild Salsa (or Hot if you'd prefer) (hot or mild) 1 jar Old El Paso Sliced Green Jalapeños 1 Avocado, peeled, stoned and diced 75g of Ricotta cheese, feta or queso fresco Sriracha hot sauce (or an alternative hot sauce)
Instructions: Heat oven to 180⁰C (it’s still 180⁰C for fan assisted ovens), gas mark 4 Heat the oil in a large pan and fry the chicken until cooked thoroughly and no longer pink inside Add the Smoky BBQ Seasoning Mix and continue to sizzle until golden Place the taco shells open end down on a baking sheet and heat for 2-3 minutes Meanwhile, remove the chicken from the heat, and with 2 forks gently pull apart to shred the strips Next add in the salsa and some jalapeños to your shredded chicken and stir together (the more you add the hotter your final dish!)
To serve: Spoon fill your warm taco shells with the smoky shredded chicken, and top with avocado, crumbled ricotta and drizzle with Sriracha sauce.
