Spinach Apple Walnut salad | Healthy Salad Recipe | Droolsss
A yummy and healthy salad with the fresh green spinach, goodness of apple, crunchy walnuts all tossed in a quick zingy dressing. Add this to your daily diet or serve it as a salad when you have guests coming home or for a family get together.
Ingredients
2 handful of baby spinach(normal spinach chopped or shredded into bite sized pieces will also do)
1/2 onion sliced thin
1 apple cored and thinly sliced
1/2 cup walnuts, halved
few cubes of feta cheese(optional)
For the dressing
1/4 up olive oil
1 Tbsp mustard sauce
juice of 1 small lemon
1 Tbsp honey
1 garlic clove minced
salt to taste
1/4 tsp black pepper powder

Along with the orange chicken is coriander ginger rice which is the perfect side dish for the orange chicken as it balances the flavours really well. Ingredients -
Orange Chicken -
1 Tbsp (20ml) - Olive Oil
1kg (2.2lbs) - Chicken Thigh, Boneless & Skinless
2 tsp (5g) - Onion Powder
4 - Garlic Cloves, Minced
15g (0.5oz) - Ginger, Peeled & Minced
Zest of 1 Orange
Juice of 1 1/2 Oranges
100g (3.5oz) - Honey
1/3 Cup (80ml) - Light Soy Sauce
2 1/2 Tbsp (50ml) - Rice Wine Vinegar
1 1/2 Tbsp (17g) - Corn Flour
Seasoning To Taste
Coriander (Cilantro) Ginger Rice -
1 Tbsp (20ml) - Olive Oil
3 - Garlic Cloves, Minced
10g (0.35oz) - Ginger, Peeled & Minced
320g (11.3oz) - Long Grain Rice
625ml - Chicken Stock
15g (0.5oz) - Coriander (Cilantro), Roughly Chopped
Seasoning To Taste
Chicken Breast Instead of Thighs -
This recipe can be made with chicken breast instead of thighs. To do so, prepare the chicken using the same method but cook the chicken for 6 minutes instead of 12 minutes. Follow the remaining steps as normal.
Alcohol Substitute -
Rice wine vinegar can be substituted with regular white vinegar if you can’t consume alcohol.

Not-So-Boring Thai-Spiced Chicken Mango Salad with Honey-Sesame Dressing | TOM TO TABLE
Don't skip over this because of the word salad. Salad is one of those dishes people love or hate. I have learned to love salad when it's brimming with delicious flavors and vegetables. This Thai-spiced chicken mango salad from Drool Worthy Daily stands alone as a perfectly filling dinner salad. The honey-sesame dressing coats all the ingredients nicely and deliciously.
Not-So-Boring Thai-Spiced Chicken Mango Salad with Honey-Sesame Dressing
Recipe adapted from
INGREDIENTS:
- Makes 4 servings
For the salad:
1 lb. chicken breast
2 Tbs. red curry paste
2 Tbs. soy sauce
1 Tbs. light olive oil
1/2 tsp. kosher salt
1 cup raw peanuts
8 cups spring green mix
2 mangoes, peeled and cubed
2 avocados
1 medium or 2 small carrots, shredded
2 small oranges, peeled and chopped
4 scallions, chopped
1 cup cilantro, chopped
1 red bell pepper, thinly sliced
For the honey-sesame dressing:
3 Tbs. honey
1-1/2 Tbs. red wine vinegar
1/4 cup mayonnaise
1 tsp. Dijon mustard
1/3 tsp. sesame oil
Directions:
1. Butterfly the chicken breasts.
2. In a 1-gallon ziplock bag, add the chicken, red curry paste, soy sauce, olive oil and salt. Place in the fridge while you prepare the other ingredients.
3. In a small saute pan on medium heat, add the peanuts. Stir until peanuts are roasted. Set aside.
4. In a salad dressing shaker or small bowl, combine the honey sesame dressing ingredients together.
5. Preheat the oven to broil.
6. Place the chicken on a foil-lined baking sheet. Broil for 7 minutes on each side. If you have a grill, use that.
7. Chop the chicken into cubes.
8. To serve, split the ingredients into 4 bowls. Add the spring green mix, mangos, avocado slices, oranges, scallions, cilantro, red bell pepper, peanuts, and carrots. Top it all off with chicken and drizzle on the dressing.

Citrus Chicken and Quinoa Salad
Servings 3 servings
INGREDIENTS
3/4 cup quinoa
2 tbsp olive oil
1 pound organic chicken breasts chopped into 1 inch cubes
2 cloves roasted garlic chopped
1/2 tsp smoked paprika
1/2 tsp salt
2 medium oranges (peeled and segmented)
3/4 avocado
Dressing
1/4 cup fresh lime juice
1/3 cup cilantro chopped
1 tbsp orange juice
1 tbsp olive oil
1 tbsp honey
INSTRUCTIONS
Cook quinoa and let it cool
Pour olive oil on sauté pan and cook chicken and roasted garlic. Sprinkle paprika and salt. Cook about 8 minutes until chicken is done
Add cooked chicken, avocado and oranges to the quinoa. Stir and set to the side
Dressing: whisk all ingredients together. Pour over salad as eating it.
Enjoy over spinach or mixed greens!
