How To make Chicken Roll Ups
1 8 ounces can crescent dinner rolls
(see note)
1/3 cup shredded Jack cheese
3 tablespoons barbecue sauce
8 frozen breaded chicken chunks
1 egg :
slightly beaten
sesame seeds
Separate dough into 8 triangle and flatten each slightly. Place about 2 tsp che ese, 1 tsp barbecue sauce and 1 chicken chunk on shortest side of each triangle . Fold 2 corners over chicken chunk; roll to opposite point. Pinch edges to sea l. Place point side down on greased cookie sheet. Brush with egg; sprinkle with sesame seeds. Bake in preheated 375 degree F oven for 12 to 18 minutes or unti l golden brown. Makes 8 rollups.
NOTE: Tonight I used one of the recipes for chicken pocket dough (I used one le ss teaspoon of sugar in mine). I liked it much better. The rollups didn't seem as rich as with the crescent rolls. I put double the recipe in each pocket thou gh otherwise there seemed like there was too much dough. I also left off the se same seeds. The filling:
yogurt : 200 g (7.1 oz)
mustard: 40 g (1.4 oz)

Chicken Cordon Bleu
Ingredients
2 pcs Boneless chicken breast
2 pcs sliced ham
2 pcs sliced cheese
2 eggs
½ cup flour
1 cup bread crumbs
Salt
Ground black pepper
Cooking oil
Procedure
1. Pound chicken breast until ¼ inch in thickness. Rub both sides of chicken with salt.
2. Top chicken breast with slice ham and cheese then roll the chicken. Tightly wrap chicken in plastic wrap to shape it, twist remaining plastic on the sides and tie it. Chill in the ref for 30 minutes to 1 hour. Or you can use toothpick to fasten the chicken.
3. In separate serving dish season flour, egg and bread crumbs with salt and pepper. Mix well.
4. Then dredge rolled chicken in flour, coat in beaten egg and roll in bread crumbs.
5. Heat enough cooking oil to deep fry in a pan and fry breaded rolled chicken until golden brown. Drain excess oil in paper towel. Sliced chicken and it’s ready to serve!

Caprese Chicken Roll-Ups
Servings: 4
INGREDIENTS
2 boneless, skinless chicken breasts
Olive oil
Salt, to taste
Pepper, to taste
1 8-ounce package mozzarella cheese
1 cup tomatoes, diced
1 tomato, sliced
Balsamic Reduction
1 cup balsamic vinegar
¼ cup honey
PREPARATION
1. Preheat oven to 400˚F (200˚C).
2. In a saucepan, heat balsamic vinegar and honey over high heat. Stir until sauce reduces to ⅓ cup. Set aside.
3. On a cutting board, slice the chicken breasts in half horizontally.
4. Cover chicken with a piece of plastic wrap. Using the rough side of a metal mallet, pound the chicken until ½-inch thick. Repeat with remaining breasts.
5. Drizzle olive oil over pieces of chicken and season with salt and pepper.
6. Place 2 slices of mozzarella on each piece of chicken. Spoon ¼ cup of diced tomatoes on each piece of chicken. Place 3 pieces of basil on each piece of chicken.
7. Roll up the chicken, making sure the ingredients are tucked under the breast and not pushed out the sides.
8. Place the roll-ups in a greased baking dish. Drizzle each roll-up with more olive oil and sprinkle with salt and pepper.
9. Bake for 15 to 20 minutes, until internal temperature reaches 160˚F (71˚C).
10. Place one slice of mozzarella on each roll-up. Broil for 5 to 10 minutes until the mozzarella has melted over the chicken.
11. Let chicken rest for 10 minutes. Place a basil leaf and slice of tomato on each piece of chicken. Drizzle with balsamic reduction. Enjoy!

Buffalo Chicken Pinwheels - Quick & Easy Recipe!
Ingredients
• 8 ounces cream cheese, softened
• ½ cup hot wing sauce
• ¼ cup blue cheese, crumbled (I ended up excluding the blue cheese and adding a little more of the Colby cheese)
• 1 cup colby-jack cheese, shredded (4 ounces)
• ¼ cup green onions, finely chopped
• 1 pound chicken breast, cooked and shredded
• 5 large flour tortillas (approximately 10½ diameter)
Instructions
1. In a bowl, beat cream cheese on low and add in sauce, blue cheese, colby-jack cheese, and green onions. Beat until blended.
2. Stir shredded chicken into mixture by hand.
3. Spread approximately ½ - ¾ cup of mixture on top of one of the tortillas. Roll up tortilla tightly, but without shifting the mixture too much. Repeat with remaining tortillas. Place rolled tortillas on a place and cover with plastic wrap. Refrigerate for 2-4 hours.
4. Remove from refrigerator and unwrap. Slice each rolled tortillas in half and then each half into 3 slices, discarding ends (or eat them!). Place pinwheel slices on serving plate or tray.
Notes
--Smaller or larger tortillas may be used, however you will need to adjust the amount of buffalo chicken mixture you add to each tortilla.
These buffalo chicken pinwheels turned out great! I personally couldn't stop eating them.
