Chicken and Lime Soup
This Chicken and Lime Soup is light, fresh, and flavorful with shredded chicken, vegetables, fresh cilantro, and a tangy lime infused broth. FULL RECIPE BELOW.

INGREDIENTS
-1 yellow onion
-3 ribs celery (about 1/4 bunch)
-1 jalapeño
-4 cloves garlic
-2 Tbsp olive oil
-1 boneless, skinless chicken breast (about 3/4 lb.)
-6 cups chicken broth*
-2 10oz. cans diced tomatoes with green chiles (Rotel)
-1 tsp oregano
-1/2 Tbsp cumin
-1 lime
-1/2 bunch cilantro
-1 avocado
INSTRUCTIONS
1. Dice the onion, celery, and jalapeño (scrape the seeds out of the jalapeño before dicing). Mince the garlic. Add the onion, celery, jalapeño, garlic, and olive oil to a large soup pot and cook over medium heat for about 5 minutes, or until the onions are soft and translucent.
2. Add the chicken breast, chicken broth, diced tomatoes with chiles (with juices), oregano, and cumin to the pot. Place a lid on the pot, turn the heat up to high, and bring the broth up to a boil. Once boiling, turn the heat down to low and let the pot simmer for 45 minutes.
3. After simmering for 45 minutes, carefully remove the chicken breast from the pot and use two forks to shred the meat. Return the shredded meat to the pot. Squeeze the juice of one lime into the soup (2-3 Tbsp juice).
4. Rinse the cilantro and then roughly chop the leaves. Add the chopped cilantro to the soup, give it a quick stir, then serve. Slice the avocado and add a few slices to each bowl.

6 Boneless Skin on Chicken Thighs
3 Teaspoons Lime Zest
4 Tablespoons Lime Juice
2 Chilis
1 Clove Garlic
Handful of Coriander | Cilantro
2 Tablespoons mild tasting Oil
1 Teaspoon Honey
1/2 tsp Salt
Zest and juice 2 limes into a bowl large enough to accommodate the chicken thighs. Dice the chili, garlic, and coriander or cilantro finely and place into the bowl. Add the oil, honey, and salt and stir until everything is evenly combined. Rinse and pat dry the chicken thighs and add to the bowl with the marinade ingredients. Toss the chicken in the marinade until well coated and cover with plastic wrap. Leave the chicken to marinade in the fridge for at least 2 hours but preferably over night. When you are ready to cook the chicken remove it from the fridge and allow it to come up to room temperature. Heat a griddle pan over medium high heat and add the chicken thighs, cooking for about 4 minutes on each side until golden brown and cooked through. Alternatively you can cook these on the bbq outside or in the oven under the grill. Serve the chicken with more chopped coriander or cilantro and a squeeze of lime juice.

INGREDIENTS
2 Tbsp olive oil
4 cloves garlic, minced
1/2 tsp cumin
1/2 tsp salt
freshly cracked pepper
2 limes, divided
1/2 bunch cilantro, divided
6 boneless, skinless chicken thighs (1.5 to 1.75 lbs. total)
INSTRUCTIONS
1. Combine the olive oil, minced garlic, cumin, salt, and some freshly cracked pepper (about 10 cranks of a pepper mill) in a small bowl.
2. Zest one of the limes and then squeeze the juice. You'll need 2-3 Tbsp juice, so if needed, juice half of the second lime. Cut the remaining lime into wedges to garnish the chicken once cooked. Roughly chop the cilantro.
3. Add 1 tsp of the lime zest, 2-3 Tbsp of the lime juice, and half of the chopped cilantro to the marinade. Stir to combine. (The remaining cilantro will be added fresh after cooking the chicken.)
4. Place the chicken thighs in a shallow dish or a large zip top bag. Add the marinade and toss the chicken to coat. Allow the chicken to marinate for 30 minutes or up to 8 hours (refrigerated), turning it once or twice as it marinates.
5. When ready to cook the chicken, heat a large skillet over medium-high heat. Once hot, add the chicken and cook for 5-7 minutes on each side, or until well browned and cooked through. My chicken had enough of an oil coating from the marinade that I did not need to add any extra to the skillet.
6. Top the cooked chicken with more fresh cilantro and a squeeze of fresh lime juice. Serve with any extra lime wedges.

This is an easy copycat version of Applebee's beloved fiesta lime chicken recipe. Tender marinated chicken breasts are covered in a deliciously creamy and tangy sauce and lots of melted cheese then served with crushed corn chips.
