Zesty Herb and Tomato Oven Baked Chicken
I'm a chicken lover. Having said that, I really enjoy chicken with a bit of zip and zest to it as well. I have been in restaurants and have ordered chicken with tomatoes, onions, and lemon several time. I have to say, there is just something intriguing about this combination of flavours.
Of course, being the curious creature that I am, I decided to reproduce the dish. My friends, the outcome was simply out of this world. When I served it up at a my dinner party, and my guest went wild. It was funny, as there wasn't a scrap left on any of the plates. I had to make copies of the recipe.

Ayam Masak Merah | Full Recipe | Chicken cooked with a tomato base with Spicy, Sweet, Sour flavours.
Ayam Masak Merah is a popular Malaysian traditional dish cooked with a spice paste made with onions, garlic, ginger highlighting prominent flavours of tomato, sugar, honey balanced with asam jawa extract and a bit of oyster sauce. The combination is perfectly delectable.
AYAM MASAK MERAH
Ingredients Part 1
1 chicken, cut into 14 pieces
1 teaspoon kunyit powder
Salt, white pepper
Oil for frying
METHOD
Season chicken with salt, pepper & kunyit powder for about 15 minutes. Fry chicken only half cooked, set aside
Ingredients Part 2
250 g onions
3 cloves garlic
1 inch ginger
4-5 heapful tablespoon blended dried chili paste
METHOD
Blend onions, garlic, ginger and combine with chili, mix into a thick spice paste, set aside
Ingredients Part 3
3 big red tomatoes, blended till fine
4 tablespoon tomato sauce
3 tablespoon chili sauce
1 small tin tomato puree/paste
2 tablespoon honey
1 tablespoon sugar
1⁄2 teaspoon salt, or to taste 1 big onion, sliced into rings
1 – 1 1⁄2 cups water
METHOD
Using the same pan, drain out oil leaving just enough oil to fry Ingredients Part 2
Fry till aromatic then add Ingredients Part 3, except the onion rings and water Keep on frying for a few minutes till spice paste is nice and fragrant
Add fried chicken, stir well to allow spice paste to coat chicken and simmer for 1 minute
Add water, level just nice to cover chicken, stir well, cover with lid, cook on low heat to allow chicken to absorb the flavours of all the ingredients
Stir regulary
Taste...if necessary you may add a bit more salt or sugar/honey to your preference
When chicken is almost cooked and gravy is becoming thick, add onion rings, stir well and let it simmer for another 2-3 minutes before you turn off fire
Gravy should be medium thick as per photo in album
The sweetness of the honey and sugar & tomato flavours should be prominent in this dish.
• All measurements are as per measuring cups/spoons.
• Salt/sugar measurement may vary, therefore please taste and add more/less
if necessary
• Drain excess oil if any before adding water
