AWARD WINNING Chicken Cacciatore | So Easy and So Delicious
Hello, welcome to EZ Eatery! I'm coming back today with another easy meal that everyone will love and devour. This chicken cacciatore is AMAZING! It is so good, that my son in law actually won a dutch oven contest with this creation and he was generous enough to share the secrets with us. Let me show you how easy it is to put this award winning chicken cacciatore together.
Chicken Cacciatore
1 Fryer chicken or bone in skin on thighs, breasts, or legs
1/2 Flour
1/4 C Vegetable Oil
1 Medium Green Pepper
1 Medium Onion
1 14/12 oz Diced Tomatoes
1 8 oz Tomato Sauce
1 C Sliced Mushrooms
1/2 tsp Oregano
1/4 tsp Salt
2 Garlic Cloves
Salt and Pepper to Taste
Optional: Parmesan and Egg Noodles
In a large dutch oven or large skillet, add oil on medium high heat. Coat the chicken with flour and place into hot oil. Cook chicken approximately 7 minutes. Flip and cook additional 7 minutes. The chicken will be very brown on both sides. Remove chicken and place on paper towel. Drain oil, but leave the chunky brown bits on the bottom. Put chicken back into dutch oven and add remaining ingredients (except parmesan cheese). Bring to a boil and cover. Reduce heat to simmer. Let simmer, covered, for 35 - 45 minutes, or until chicken is no longer pink inside. Serve on cooked egg noodles (my personal favorite) and top with some parmesan cheese. That is it! You've just made an award winning chicken cacciatore! Enjoy!

Chicken Cacciatore
Ingredients -
1 lb of mixed mushrooms
3 lbs chicken (butchered)
Bay leaf
3 sprigs of thyme
1 cup of dry white wine
3 tbs of chopped parsley
3 oz of Italian whole peeled tomatoes
1 tbs of chili flakes
½ tsp of oregano
3 cloves of garlic
1 cup of medium-diced shallots

In an attempt to incorporate rotisserie chicken more, I tried making Chicken Cacciatore.
Chicken Cacciatore
2 onions
2 bell peppers
5 garlic cloves
1tbsp tomato paste
1/2cup white wine
1/2 cup chicken broth
28oz crushed canned tomatoes
Parsley

Making Chicken Cacciatore
This simple Italian dish is packed with chicken, peppers, mushrooms and herbs for a satisfying one pot meal.
Ingredients
2 tablespoons olive oil
1 whole roasting chicken, cut in quarters
1 large onion, sliced
8 ounces fresh mushrooms, quartered
1 pinch salt
1 pinch ground black pepper
4 cloves garlic, sliced
3 sprigs rosemary
1 teaspoon dried oregano
½ teaspoon red pepper flakes, or to taste
1 cup tomato sauce
½ cup water
salt and ground black pepper to taste
2 red bell peppers, sliced
2 green bell peppers, sliced
Directions
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Heat olive oil in a large Dutch oven over medium-high heat; add chicken and cook until browned on the outside. Remove to a bowl to capture the juices.
3. Stir in onions and mushrooms; cook for 5-6 minutes until soft. Add a big pinch of salt and pepper. Stir in garlic, rosemary, red pepper flakes, oregano, tomato sauce, and water.
4. Place chicken pieces and any juices that have accumulated in the bowl on top of the cooked vegetables. Add more salt and pepper. Place pepper slices on top of the chicken.
5. Cover and cook in the preheated oven for 1 hour 15 minutes.

Q: Does Steven ever not like anything? ????
A: Of course!! First of all, we have been married for 19 years and I was not always good in the kitchen. In fact, I was a pretty terrible cook for the first 12 years or so. So there were plenty of times when neither of us liked what I made. But I've gotten better at picking out meals that I'm pretty sure we will enjoy. I don't just go pick a recipe and cook it. I read through it and research different variations before I deem it a good one to try.
Secondly, if we were to not like something I would NOT show it here. Solely because I want to share only recipes that we would recommend. I don't want to waste your time, or my time (editing) on a recipe we would never tell anyone else to try. We've only had that happen once - and I got rid of the footage we had filmed (which was so sad because we took time to film it).
I hope that answers that question! Remember also that we only film 3 meals a week. The rest of the time we have our family favs or go out to dinner.
Q: Where did you get your chopping block/ cutting board?
A: Our friends gave it to us as a Christmas gift. :) They had a friend who made them, so it's not something that I can link to as it was handmade.

*My edits to Orange Chicken* - I needed 3 cups of water to make the batter a pancake consistency. I would recommend doubling the sauce recipe but only use 1/2 the cornstarch/water mixture to thicken the sauce. (So the original recipe says to use 2 tbsp each - I might would use that amount if I were doubling the sauce. If you are sticking to the original recipe, I would half that.) If you don't want to fry your chicken, you could definitely just make the sauce to go on grilled or baked chicken! It was so delicious!
