How To make Chicken Breast with Dried Apricots and Cranberries
1 1/2 cups dry white wine
1 cup dried apricots
6 chicken breasts
1 large red onion
halved and sliced
lengthwise 1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon dry mustard
1/4 teaspoon cinnamon
Salt and pepper 1/2 cup cranberries :
dried
1 cup chicken broth -- regular strength

Preheat oven to 375 degrees. In a saucepan heat wine just to boiling. Remove from heat, add apricots, and soak for 10 minutes. Drain, reserving wine and apricots separately. In a large, heavy casserole arrange chicken pieces, skin-side up and sprinkle with onion, spices, salt, pepper, plumped apricots and cranberries. Combine reserved wine and stock and pour over all. Cover casserole tightly and bake until chicken is very tender, 50 to 60 minutes.

Apple Cranberry Chicken Salad Recipe
1 boneless skinless chicken breast, cooked, cooled, and chopped in bite size pieces
1 stalk celery, chopped
1/2 fuji apple, unpeeled and chopped
1/4 cup red onion chopped
1/4 cup dried sweetened cranberries or Craisins
1/4 to 1/3 cup ranch salad dressing
Pita Bread
salt and pepper to taste
Mix all of the above ingredients together. Put salad into pita bread. You can also add seedless green or red grapes to the recipe if desired.

Ingredients:
For the dressing:
1/4 cup (60ml) Olive oil
2 tablespoons Lemon juice
1 tablespoon White/Red wine vinegar
1/2 teaspoon Dijon mustard
Salt to taste
Pepper to taste
For the salad:
1 batch Kale, stems removed
2 tablespoons Chopped almonds
2 tablespoons Chopped pecans
1/4 cup Cranberries
1 Avocado, cut into cubes
Directions:
1. Make the dressing: in a small bowl whisk olive oil. Vinegar, lemon juice, Dijon mustard, salt and pepper. Whisk until smooth.
2. Remove kale stems, as shown in the video. Then, thinly slice the kale and place in the bowl.
3. Pour half of the dressing to the bowl with the kale leaves. Using your hands, massage the leaves until they become soft and wilted.
4. Add chopped almonds, pecans, cranberries, avocado. Add the rest of the dressing and toss to combine
5. Serve.
